2 teaspoons baking powder
1/4 teaspoon salt
1 cup sugar
2/3 cup butter or 2/3 cup margarine, softened
2 eggs
2 bananas, mashed
1 teaspoon vanilla

Steps:

  • Preheat oven to 400 degrees.
  • Combine flour, baking powder, salt and sugar in a large bowl. Mix well.
  • Add butter or margarine. Mix well.
  • Add remaining ingredients. Mix well.
  • Drop by teaspoonfuls on cookie sheet.
  • Bake in preheated oven 12 minutes.

I had some left over ripe bananas and I am getting tired of making banana bread. Wanted a change and found this recipe. It really wasn't something that I would normally try, but I am glad that I did. These are wonderful, although next time I would skip the raisins and add chocolate chips instead. A real cakey cookie. I can't remember how many cookies I got out of a mix, so I will guess.

2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup sugar

1 cup chocolate chips or 1 cup raisins
1 cup mashed banana

Steps:

  • Sift 1st four ingredients together.
  • Mix next 4 ingredients thoroughly.
  • Add dry ingredients.
  • Blend well.
  • Dough will be sticky.
  • Stir in chips or raisins and bananas.
  • Drop by teaspoonful onto greased cookie sheet.
  • Bake at 400 degrees for 12-15 minutes. This is a soft cakey cookie.

The key to this simple, but delicious banana pudding is the homemade vanilla custard, which sets up to the perfect consistency. It's not too thick, but not too thin. The addition of a small amount of heavy cream also gives the custard a luscious texture with just the right amount of richness.

3/4 cup plus 2 tablespoons sugar
1/4 cup cornstarch
4 large egg yolks
3 1/2 cups whole milk
1 1/2 cups heavy cream
1/2 teaspoon salt
2 tablespoons unsalted butter
1 tablespoon pure vanilla extract
5 large or 7 small bananas, peeled and thinly sliced
44 vanilla wafer cookies (about half an 11-ounce box), plus more crushed cookies for topping

Steps:

  • Whisk 1/4 cup sugar, the cornstarch and egg yolks in a large bowl to make a paste. Combine the milk, 1/2 cup each heavy cream and sugar and the salt in a medium saucepan and bring to a simmer over medium heat. Slowly pour the hot milk mixture into the egg yolk mixture while whisking. Return the mixture to the saucepan and bring to a boil over medium heat. Boil, whisking constantly, until smooth and thickened, about 3 minutes. Remove from the heat and whisk in the butter and vanilla. Set the pudding aside to cool slightly, about 10 minutes.
  • Spread 1/2 cup pudding in a 2-quart baking dish. Layer about one-third of the banana slices on top, followed by half of the cookies and a heaping cup of the pudding. Top with another one-third of the banana slices and another heaping cup of pudding, then top with the remaining banana slices, cookies and pudding. Cover with plastic wrap and refrigerate 6 hours or overnight.
  • When ready to serve, beat the remaining 1 cup heavy cream and 2 tablespoons sugar in a medium bowl with a mixer on medium-high speed until stiff peaks form, about 2 minutes. Spread on top of the pudding. Top with crushed cookies.

4 large, very ripe bananas unpeeled
1 l small firm banana for garnish
3 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 cup unsalted butter, at room temperature (soft not melted)
2 cups sugar
2 teaspoons pure vanilla extract
2 large eggs, room temperature
1 cup sour cream

Steps:

  • 1. Bake your bananas. Put them on a small metal pan and bake them at 300 degrees for about 20 minutes until the skins turn black. Remove the bananas from the oven and let them cool while you make the cake. (leave them unpeeled; you will snip the end off and squeeze the banana into the mixture later)
  • 2. Pre-heat the oven to 350 degrees. Spray a 10-inch bundt pan with Pam. Set the cake directly on the rack, not on a cookie sheet. (This is so the heat can go up through the center of the bundt pan to ensure even baking.) You may need to cover with a tent of foil if the cake gets too brown.
  • 3. Combine the flour, baking soda and the salt and whisk together, set aside.
  • 4. Add butter to the stand mixer bowl and beat until creamy. Add the sugar and beat on medium speed until pale and fluffy (no grainyness remains) I use a Kitchen Aid stand mixer with a paddle attachment. You can use a hand mixer if you don't have a stand mixer. When mixing the sugar and butter, it is important that you mix it until the grainyness is gone.
  • 5. Beat in the vanilla, and then add the eggs, one at a time, beating about a minute after you add each egg.
  • 6. Turn the mixer down to low, snip the ends off the small end of the banana and squeeze the banana like a tube of toothpaste. It will fall right out of the peel. Add all the bananas (except the one reserved for garnish)
  • 7. Mix in half of the dry ingredients, add the sour cream, add the rest of the dry ingredients, mixing well until smooth.
  • 8. Pour the batter into the well-greased bundt pan, smoothing the top, rapping it onto the counter to remove the bubbles. Add the banana slices to make the flower design on top.
  • 9. Bake in the oven 65 to 75 minutes. Watch carefully that it doesn't overbrown (add the foil tent if it is browining too fast) Test the center with a thin knife close to the center. Cool cake on a rack 10 minutes before unmolding, then cool to room temperature. Here is what it looks like when it is done! Enjoy!
  • 10. Note: You may serve the cake plain, dust with powdered sugar, or try a variety of icings.

2 bananas (ripened and smashed)
3 cups powdered sugar ((more or less depending on the consistency that you like))
2 Tablespoons milk
1 teaspoon vanilla

Steps:

  • Heat oven to 350 degrees.
  • Cream sugar, butter, shortening, and vanilla until light and fluffy.
  • Add bananas and then mix in the eggs.
  • Blend in buttermilk. Add the dry ingredients until just combined. Do not over-beat. It will be a sticky batter. Drop by tablespoons onto a greased cookie sheet.
  • Bake for 9-10 minutes, until slightly golden.
  • Cool completely.
  • Mix all ingredients together and spread over cooled cookies.

2 1/2 teaspoons baking soda
1 teaspoon salt
1/2 cup butter or margarine, softened
1/2 cup shortening
1 3/4 cups sugar
3 eggs
1 teaspoon vanilla
2 cups buttermilk
1/4 cup strawberry topping
Red food color
1/4 cup pineapple topping
Yellow food color
2 tablespoons unsweetened baking cocoa
2 tablespoons hot water
1 container (16 oz) frozen whipped topping, thawed
1 box (4-serving size) banana cream instant pudding and pie filling mix
3 to 4 medium bananas, thinly sliced
Chocolate topping, if desired

Steps:

  • Heat oven to 350°F. Grease and flour three 9-inch round cake pans. In large bowl, mix flour, baking soda and salt; set aside.
  • In large bowl, beat butter, shortening and sugar with electric mixer on medium speed about 3 minutes or until light and fluffy. Beat in eggs, one at a time. Beat in vanilla. Beat in flour mixture alternately with buttermilk. Continue beating on medium speed 1 minute, scraping bowl constantly.
  • Divide batter among 3 bowls (about 2 1/2 cups each). Stir 2 tablespoons of the strawberry topping and 3 drops of the red food color into batter in one bowl. Stir 2 tablespoons of the pineapple topping and 3 drops of the yellow food color into batter in second bowl. In small bowl, mix cocoa and hot water; stir into batter in third bowl. Pour batters into separate pans.
  • Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pans to cooling rack. Cool completely, about 1 hour.
  • In medium bowl, mix whipped topping and pudding mix until well blended. Place strawberry cake layer on serving plate; spread with remaining 2 tablespoons strawberry topping. Top with layer of banana slices; spread with 3/4 cup frosting. Top with chocolate cake layer; spread with remaining 2 tablespoons pineapple topping. Top with layer of banana slices; spread with 3/4 cup frosting. Top with pineapple cake layer. Frost side and top of cake with remaining frosting. Drizzle with chocolate topping. Store in refrigerator.
