Clam Bake Chowder

Number Of Ingredients 31

4 large ears of corn on the cob
Softened butter
Up to 1 1/2 cups chicken stock
1 tablespoon EVOO
1/4 pound smoky lean bacon
chopped
1 large onion
chopped
1 pound small red skin potatoes
diced 1/2 inch cubes
3 cloves garlic
finely chopped
1 bay leaf
fresh or dried
1/2 small red bell pepper
finely chopped
3 to 4 sprigs fresh thyme
finely chopped
Salt and pepper
1 quart whole milk
2 pounds little neck clams
scrubbed
1 can or bottle of beer
1 lemon
sliced
A handful of chives
finely chopped
A handful of flat leaf parsley leaves
finely chopped
Hot sauce
Crusty baguette

Steps:

  • Heat a grill pan or outdoor grill to medium high
  • Spread the corn with a thin layer of softened butter and place on grill, grill 15 minutes or until golden brown to edges of kernels
  • Cool to handle
  • Place a small bowl inverted in a large mixing bowl
  • Steady the cobs on the smaller bowl bottom and scrape the charred kernels into the larger bowl using a sharp knife
  • Puree half the corn in food processor with 1/2 cup stock
  • Heat a soup pot or heavy-bottomed skillet over medium to medium-high heat
  • Add EVOO, a turn of the pan
  • When oil is hot, add bacon and crisp 2-3 minutes
  • Add onion, potatoes, garlic, bay leaf, bell pepper and thyme
  • Cook to just soften potatoes, about 5 minutes, stirring frequently
  • Add remaining chicken stock and scrape up any pan drippings
  • Add corn puree and kernels, season with salt and pepper and stir
  • Add milk, bring to a bubble then reduce heat to simmer for 10 minutes
  • Turn off heat and stir in chives and parsley
  • While chowder simmers, in a deep skillet with lid, bring beer to a boil with the lemon slices
  • Add clams and cover the pot
  • Steam 4-5 minutes, to open shells
  • Discard any unopened shells
  • To serve, scoop some clams into shallow bowls
  • Ladle the chowder over the top of clams
  • Pass hot sauce, crusty baguette and butter at the table

1 tablespoon EVOO
1/3 pound lean bacon, chopped

2 tablespoons seafood seasoning, such as Old Bay
2 tablespoons fresh thyme leaves, finely chopped
4 cloves garlic, chopped
3 to 4 small ribs celery with leafy tops, chopped
2 fresh bay leaves
2 jalapeno or Fresno chiles, chopped or thinly sliced
1 red onion, chopped
4 cups chicken stock
3 to 4 heirloom tomatoes, chopped
4 pounds littleneck clams, scrubbed
1 lager beer
Sea salt and freshly ground pepper
Hot sauce, for serving
3 English muffins, chopped into bite-size cubes
1/2 stick butter (4 tablespoons)
2 tablespoons hot sauce
2 tablespoons fresh flat-leaf parsley, finely chopped
1 teaspoon seafood seasoning, such as Old Bay

Steps:

  • Preheat the oven to 350 degrees F.
  • For the chowder: In a soup pot or a Dutch oven, heat the EVOO over medium-high heat. Add the bacon and cook until crisp, about 5 minutes. Add the corn and cook until the kernels are lightly browned at the edges, 6 to 8 minutes. Add the seafood seasoning, thyme, garlic, celery, bay leaves, chiles and onions, and cook until softened, 6 to 8 minutes. Stir in the chicken stock and tomatoes. Bring to a simmer, then turn off the heat.
  • For the croutons: Arrange the English muffin cubes on a wire rack set over a baking sheet. Toast in the oven until light golden. Melt the butter with the hot sauce. Place the croutons in a bowl and toss with the parsley, seafood seasoning and the butter mixture. Return to the rack set over the baking sheet and bake until deeply golden. Let cool.
  • To finish the chowder: Place the clams and beer in a large pot with a tight-fitting lid, and season with sea salt and pepper. Cover and bring to a boil, then cook at a rapid simmer until the clams open, 3 to 5 minutes. Discard any unopened clams.
  • Divide the clams and the cooking liquid among 4 shallow bowls. Ladle the corn chowder over top and garnish with the croutons. Serve with hot sauce.
  • Cook's Notes: You can make the chowder base up to 5 days ahead. Cool and store in the refrigerator, then reheat over a medium flame. Buy the clams within 48 hours of serving and cook them just before you're ready to serve.
  • You can store the croutons in an airtight container or in a foil pouch until ready to use.

2 tablespoons butter
2 all-purpose potatoes, peeled and diced
2 ribs celery, chopped
1 medium yellow onion, chopped
1 small red bell pepper, seeded and diced
1 bay leaf, fresh or dried
Salt and freshly ground black pepper
1 tablespoon Old Bay seasoning blend, found near seafood department or, on spice aisle in your market
3 tablespoons all-purpose flour
2 cups vegetable or chicken stock or broth
1 quart whole milk
3 cups corn kernels, scraped fresh from the cob, or frozen kernels
8 ounces cooked lump crab meat, fresh is available in plastic tubs at many fish counters
4 small bread boules, 6 inches, hollowed out, preferably sour dough, optional
Oyster crackers
Hot cayenne pepper sauce
Sliced scallions

Steps:

  • Heat a deep pot over moderate heat. Add oil and butter. As you chop your veggies, add them to the pot: potatoes, celery, onion, and red bell pepper. Add bay leaf to the pot. Season vegetables with salt and pepper and Old Bay seasoning. Saute veggies 5 minutes, then sprinkle in flour. Cook flour 2 minutes, stirring constantly. Stir in broth and combine. Stir in milk and combine. Bring soup up to a bubble. Add corn and crab meat and simmer soup 5 minutes. Adjust the soup seasonings. Remove bay leaf. Ladle soup into bread bowls or soup bowls and top with oyster crackers, hot sauce and sliced scallions.

1 quart seafood or chicken stock
1 tablespoon extra-virgin olive oil
4 slices smoky bacon, finely chopped
1 onion, chopped
4 to 5 ribs celery hearts with leafy tops, finely chopped
2 starchy potatoes, peeled and chopped
2 cloves garlic, finely chopped
2 fresh bay leaves
2 tablespoons chopped fresh thyme leaves or 2 teaspoons dried thyme
3 ears corn, kernels removed or 2 cups frozen kernels, defrosted
2 pounds haddock
1 tablespoon seafood seasoning (recommended: Old Bay)
1 cup whole milk
2 cups heavy cream
1 tablespoon unsalted butter
2 tablespoons chopped chives, optional
2 tablespoons chopped dill leaves, optional
1 lemon, zested, optional
Salt and freshly ground black pepper
Oyster crackers, to pass at table
Hot sauce, to pass at table

Steps:

  • Heat the stock in small pot over medium heat.
  • In a large soup pot over medium to medium-high heat, add the extra-virgin olive oil, 1 turn of the pan. Add the bacon and cook for a couple of minutes to brown, add the onion, celery, potatoes, garlic, bay leaves, thyme, and corn. As you chop and add items to the pot, keep the pot covered so the vegetables sweat faster and the heat stays trapped in the pot. Once all of the vegetables are chopped and into the soup pot, add the hot stock and bring to boil, it should happen almost immediately. Season the haddock with the seafood seasoning. Add the haddock, cover the pot and reduce the heat to a simmer. Cook the fish 5 to 6 minutes then uncover and gently break up the haddock into chunks. Stir to combine, then add the milk, cream and butter. Simmer and reduce for 5 to 6 minutes more.
  • While the chowder is reducing, combine the chives, dill and lemon zest in a small bowl as an optional garnish for the soup. Taste the soup and season with salt and pepper, to taste. Remove the bay leaves, ladle the soup into serving bowls and serve with crackers, hot sauce, and the herb-lemon mixture, if desired.

2 ribs celery with greens, chopped

Salt and pepper
2 teaspoons hot sauce, eyeball it
2 tablespoons all-purpose flour
1 pint half-and-half
2 cups chicken stock, from soup aisle
1 cup hash brown style raw shredded potatoes, from dairy aisle of the market
2 cans whole baby clams and their juice
2 sandwich size English muffins, split
3/4 pound boiled deli ham, chopped
1 tablespoon paprika
2 tablespoons hot sauce
3 to 4 tablespoons yellow mustard, squirt top bottle -- eyeball it
A handful parsley, curly or flat
8 deli slices, about 8 to 10 ounces, white sharp Cheddar

Steps:

  • In a medium pot over medium high heat melt butter. Add bacon and onions, celery and thyme sprigs. Season with salt, pepper and hot sauce and cook 5 minutes. Add flour and cook a minute more.
  • Add half-and-half and stock and bring to a bubble, then stir in potatoes and clams. Bring soup back to a boil, reduce heat and simmer 15 minutes, until potatoes are cooked and soup has thickened to coat the back of a spoon.
  • Heat toaster oven or broiler then toast split English muffins. While muffins toast, grind ham with paprika, hot sauce, mustard, and parsley in a food processor. Spread ham on toasted muffins. Top each muffin half with 2 slices Cheddar and melt cheese in toaster oven or under broiler.
  • Remove the thyme sprigs from the soup. The thyme leaves will have fallen off into the soup. Stir and adjust seasonings in your soup. Pour soup into mugs. Serve with deviled ham and cheese mug toppers.

Forget that canned stuff! This is so easy and you will want to make it again and again. This is from Rachael Ray, and I think it is one of her best! You can lower the fat content by nixing the bacon and using veggie oil. You can also use less half and half, and more broth or milk. (I prefer it with less half and half than called for) Perfect on a cold day! Enjoy!

4 ripe heirloom or vine tomatoes, optional
4 pounds cherry stone clams, scrubbed
1 cup dry white wine or crisp, light bodied beer
1 (8-ounce) bottle clam juice
1 small red onion, coarsely chopped
1 red chile pepper, coarsely chopped
Zest of 1 lemon
3 to 4 large cloves garlic, peeled
About 1 tablespoon fresh thyme leaves
1/4 cup packed fresh parsley leaves
2 fresh bay leaves
1/4 cup extra-virgin olive oil
5 to 6 anchovy filets
1 pound linguini, or flavor-infused long cut pasta such as pepperoncini or lemon-flavored spaghetti or linguini

Steps:

  • This sauce can be made with or without tomatoes. If you're using tomatoes in the sauce, score the skins on the bottom of the tomatoes with a large X, being careful not to cut deeper than the skin. Bring a small pot of water to a rolling boil, add the tomatoes and cook 1 minute then remove with slotted spoon or tongs, cool a minute or 2 until you can handle, then peel the skin and dice the tomato into small pieces.
  • Place the clams, wine and clam juice in large pot and bring to a boil, cover, reduce heat to a simmer and cook 8 to 10 minutes to open the clam shells. Scoop out the clams and shuck them, place in food storage container and cool completely. Store the clams in the refrigerator until ready for use. Strain the stock and reserve, wipe out the pot and return to the heat.
  • Meanwhile, make a seafood paste by adding the red onion, chile pepper, lemon zest, garlic, thyme, parsley, and bay leaves to the food processor and pulse-chop into a thick, but finely chopped, speckled paste.
  • Heat about 1/4 cup olive oil, 4 turns of the pan, in the clam pot over medium to medium-high heat. Add the anchovy filets and melt them into the oil, 1 minute or so, then add the paste and stir 2 minutes. Add the reserved stock and stir to combine. Add the tomatoes, simmer 5 minutes, then cool the sauce completely and store for make-ahead meal.
  • To serve, bring a large pot of water to boil for pasta. Salt water and cook pasta to al dente.
  • Meanwhile, heat the sauce over medium heat. Once the pasta has been dropped to cook, stir the clams into the sauce and simmer a few minutes. Add a ladle of starchy cooking water to the sauce and toss with pasta 1 to 2 minutes for the flavors to combine and absorb into the pasta.

4 -6 slices bacon
2 medium potatoes, peeled and diced (about 1 1/2 cups)
1/4 lb butter
1/3 cup flour
1 quart half-and-half
1 cup chopped celery
1 large onion, finely diced
3 tablespoons pimiento, chopped
16 ounces canned clams (about 3 cans of chopped clams)
clam juice, to taste
1/4 cup chopped fresh parsley
salt and pepper

Steps:

  • Fry the bacon until cooked but not overly crisp. Drain, chop finely and set aside.
  • Blanch the diced potatoes by placing them in cold water and bringing it to a boil.
  • Let them cook for several minutes then drain and set aside.
  • Simmer the onion in a very small amount of water until almost cooked.
  • Add the celery and cook for a few more minutes. Save the liquid.
  • Melt the butter in a soup pot but do not allow it to brown.
  • Slowly add the flour, stirring to make a roux.
  • Slowly add the half and half,stirring with a wooden spoon to keep it from forming lumps.
  • Add the clam juice. Over medium-low heat, add the celery and onions.
  • Add the pimiento and clams. Add the bacon and the potatoes.
  • Bring to a very low simmer, stirring with a wire whisk or wooden spoon nearly constantly to prevent burning, for at least five minutes or until the potatoes are fully cooked.
  • Lower the heat, add the parsley and season with salt and pepper to taste.
  • Tastes even better if you make it a day or two ahead and then reheat slowly and gently.
  • A crock pot is ideal for re-heating soup.
