½ lb or linguica, sliced chorizo
½ lb sliced, used beef frankfurters
4 oz chopped yellow onion
16 oz peeled, cubed potatoes
½ lb clams
1 tsp chopped garlic
1 tsp chili flakes
12 oz (1 can) beer
2 tbsp unsalted butter
to taste salt and ground black pepper
2½ cups preferably clam juice or broth, add more if necessary, used shrimp broth seafood broth
1 tbsp olive oil
lemon wedges
like Foccacia crusty bread

Steps:

  • Saute the onion in olive oil and butter until tender. Add the garlic, chorizo, and frankfurters, then saute briefly. Add the chili flakes and mix.
  • Add the seafood broth, beer, and potatoes. The liquid should just cover the ingredients.
  • Bring to a boil, then lower the heat and simmer for roughly 10 to 15 minutes, until the potatoes are cooked.
  • Add the clams and simmer for roughly 5 more minutes.
  • Season to taste with salt and pepper. Adjust accordingly.
  • Serve with crusty bread and lemon wedges.

2 pounds littleneck clams, scrubbed
1/4 cup extra-virgin olive oil
1 onion, diced
1 fennel bulb, diced, plus chopped fronds for topping
Kosher salt and freshly ground pepper
1 cup boxed or canned chopped tomatoes
1/4 teaspoon red pepper flakes
1/2 pound green beans
2/3 cup small pasta shells
1 14-ounce can cannellini beans, undrained
1/4 cup pesto

Steps:

  • Combine the clams and 1 cup water in a Dutch oven over medium-high heat. Cover and cook until they start to open, about 5 minutes. Use tongs or a slotted spoon to transfer the clams to a bowl; discard any unopened clams. Pour the clam juices into a liquid measuring cup (avoid the sediment from the bottom of the pot). Wipe out the pot. Cover the clams to keep warm.
  • Add the olive oil to the pot and set over medium-high heat. Add the onion, diced fennel, a big pinch of salt and a few grinds of pepper. Cook, stirring occasionally, until the vegetables are softened, about 8 minutes. Add the tomatoes and red pepper flakes; cook, stirring, until mostly dry, about 2 minutes. Add enough water to the clam juices to equal 3 cups, then add the liquid to the pot, cover and bring to a boil.
  • Meanwhile, trim the green beans and cut into 1-inch pieces. Add to the pot along with the pasta and cannellini beans and their liquid. Bring to a boil, then reduce to a simmer and cook, stirring occasionally, until the pasta is al dente, 8 to 10 minutes. Add more water, if needed; season with salt and pepper. Stir in the clams and heat through.
  • Divide the soup among bowls. Top with chopped fennel fronds and the pesto.

1/2 pound bacon, medium dice
1 cup chopped leeks (about 1 pound)
1 cup chopped yellow onions
1/2 cup chopped celery
1 carrot, peeled and diced
3 bay leaves
1 tablespoon chopped fresh thyme
1/2 cup flour
1 pound white potatoes, peeled and medium diced
4 cups clam juice
2 cups heavy cream
2 pounds little neck clams, shucked, chopped
2 tablespoons finely chopped parsley
Salt and pepper

Steps:

  • In a heavy stock pot, over medium-high heat, render the bacon, until crispy, about 8 minutes. Stir in the leeks, onions, celery, and carrots. Saute for about 2 minutes or until the vegetables start to wilt. Season the vegetables with salt and pepper. Add the bay leaves and thyme. Stir in the flour and cook for 2 minutes. Add the potatoes. Stir in the clam juice. Bring the liquid up to a boil and reduce to a simmer. Simmer the mixture until the potatoes are fork tender, about 12 minutes. Add the cream and bring up to simmer. Add the clams and simmer for 2 minutes. Stir in the parsley. Season with salt and pepper if needed. Ladle into shallow bowls and serve.

1/2 cup (about 4 ounces) diced bacon
1 cup chopped leeks (bottom white part only)
2 cups peeled 1/2-inch diced potatoes
1 cup water
3 cups half and half
1 pound chopped clams
Salt and pepper
1/2 cup shaved green onions
Creole seasoning

Steps:

  • In a soup pot, cook the bacon until crisp; remove and reserve. To the bacon fat, add the leeks and cook until tender, about 4 minutes. Add the potatoes and water. Bring up to a boil, reduce the heat to a simmer and add half-and-half. Cook until the potatoes are tender, about 20 minutes. Add the clams and bacon and continue cooking for 3 minutes. Season with salt and white pepper. Garnish with shaved green onions and Creole seasoning, if desired.

1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
1 medium onion, chopped
1 cup fresh or frozen corn
4 garlic cloves, minced
1 teaspoon salt
1 teaspoon pepper
1 bottle (12 ounces) beer
1/3 cup olive oil
Grilled French bread baguette slices

Steps:

  • Place clams in a stockpot; top with the next 8 ingredients. Add beer and oil; bring to a boil. Reduce heat; simmer, covered, for 10 minutes., Stir; cook, covered, until clams open, 5 to 7 minutes longer. Discard any unopened clams. Ladle into bowls; serve with grilled bread.

If at any point the onions are sticking to the bottom of the pan add a little of the reserved clam juice or white wine.
  • Add tomato paste and saute to incorporate it fully into the vegetables. Then add diced tomatoes, clam juice, the wine and the reserved clam juice from the can of clams (just use the lid to drain it into the pot and hold the clams for a few minutes). Bring to a boil. Then reduce to a simmer and simmer for about 10 minutes.
  • Increase heat to medium-highish and add the cod pieces Cook about 5 minutes, then add shrimp and calms. Stew should be simmering hard (but not violently). Cook until the shrimp are pink. In total, once fish is added, do not simmer for more than 10 minutes to avoid over cooking the cod. Season with salt, pepper and Tabasco. Serve.
