3/4 cup cooking oil
1 cup sugar
2 eggs
1 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1/4 cup fresh citrus juice
2 tablespoons grated citrus rind
1/2 cup juice of Valencia orange
1/2 cup juice of navel orange
1/2 cup juice of tangerine
1/2 cup juice of tangelo
1/2 cup sugar
2 cups Cognac or brandy
Zest from 2 oranges, cut into strips
1 cinnamon stick
1 clove
Dash of freshly ground nutmeg

Steps:

  • Combine oil, sugar, and eggs. Mix well. Add remaining ingredients. Blend. Pour into muffin pan. Bake at 350 degrees F for 10 to 15 minutes.
  • Simmer orange juice with sugar until sugar is dissolved
  • Add Cognac or Brandy, zest and spices.
  • Place in a sterilized jar, seal tightly - store in a cool place - shaking occasionally for 1 month
  • Strain it through a fine sieve into a sterilized decorative bottle for another month before serving

1/2 cup (142 grams) Gluten-Free Flour Blend, recipe follows, or store-bought blend, such as Cooking for Isaiah by Silvana Nardone Gluten-Free Multi-Purpose Flour
1/2 cup (55 grams) quinoa flour or amaranth flour
1/2 cup maple sugar or coconut sugar
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 large eggs, at room temperature
1/4 cup unflavored coconut oil, liquefied
1 teaspoon pure vanilla extract
1 cup grated carrots
1/2 apple, peeled, cored and chopped
1/2 cup chopped fresh pineapple
1/4 cup raisins
1/4 cup unsweetened shredded coconut
1/4 cup sunflower seeds
Sesame seeds, for sprinkling
3 cups (435 grams) white rice flour
1 1/2 cups (187 grams) tapioca flour
3/4 cup (123 grams) potato starch
1 tablespoon (8 grams) xanthan gum
1 1/2 teaspoons salt

Steps:

  • Preheat the oven to 325 degrees F. Line a 12-cup muffin pan with paper liners.
  • In a medium bowl, whisk together the Gluten-Free Flour Blend, quinoa flour, sugar, baking soda, cinnamon and salt. In a small bowl, whisk together the eggs, oil and vanilla. Add the wet ingredients to the flour mixture and whisk to combine. Add the carrots, apple, pineapple, raisins, coconut and sunflower seeds; stir to coat.
  • Divide the batter among the muffin cups, filling each about three-quarters full. Sprinkle the tops evenly with sesame seeds. Bake until a toothpick inserted in the center comes out clean, 15 to 20 minutes. Let the muffins cool completely in the muffin pan set on a rack.
  • In a large bowl, whisk together the rice flour, tapioca flour, potato starch, xanthan gum and salt.

ORANGE-SCENTED ALMOND AND OLIVE OIL MUFFINS



Orange-Scented Almond and Olive Oil Muffins image

I love to take these muffins to Jade's school for breakfast for her classmates to share. One of the ingredients is almond flour, which I love to use for baking because it adds flavor and protein to replace some of the usual white flour. Almond flour also makes the muffins light and nutty and pairs so well with the sweetness of orange juice and zest. Make a batch of these, freeze them, and then reheat as needed in a low oven.

2/3 cup sugar
3 large eggs, at room temperature
Grated zest of 1 medium orange
1/3 cup fresh orange juice, at room temperature
1/4 cup extra-virgin olive oil
3 tablespoons plain low-fat (2-percent) Greek yogurt, at room temperature
3/4 teaspoon pure vanilla extract
3/4 teaspoon pure almond extract
1 cup all-purpose flour
2/3 cup almond flour
1 1/2 teaspoons baking powder
1/4 teaspoon fine sea salt
1/3 cup sliced almonds, toasted (see Cook's Note, below)

Steps:

  • Position an oven rack in the center of the oven and preheat the oven to 325 degrees F. Line 12 muffin cups with paper liners.
  • Using a hand mixer on medium speed, in a medium bowl, beat the sugar and eggs together until pale and thick, about 2 minutes. Beat in the orange zest and juice, olive oil, yogurt, vanilla, and almond extract.
  • In a separate bowl, whisk together the all-purpose and almond flours, baking powder, and salt.
  • In batches, stir the flour mixture into the egg mixture until just blended. Stir in the almonds. Pour 1/4 cupfuls of the batter into the prepared muffin cups. Bake until golden on top and a tester inserted into the center of the muffins comes out with moist crumbs attached, about 20 minutes. Cool in the pan on a wire rack for at least 20 minutes before serving.

1 1/2 cups whole wheat pastry flour
1/2 cup semolina flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon sea salt
1/3 cup avocado oil
3 tablespoons brown rice syrup
1/2 cup erythritol (see Note, below)
Grated zest of 1 lemon
Grated zest of 1 orange
1/2 cup combined lemon and orange juice
1 teaspoon pure vanilla extract
2/3-1 cup unsweetened almond milk
1 teaspoon chia seeds
2 teaspoons chopped sunflower seeds
2 teaspoons chopped pumpkin seeds

Steps:

  • Preheat oven to 350 degrees. Lightly oil a 24-cup mini muffin pan.
  • Whisk together flours, baking powder, baking soda and salt. Combine oil, rice syrup and erythritol in a small saucepan and cook, stirring, until the granules dissolve, 2 to 3 minutes. Remove from heat and whisk in zests, juices and vanilla. Mix into dry ingredients and slowly mix in almond milk until a smooth batter forms. Fold in seeds until incorporated through the batter. Divide batter evenly among muffin cups, filling cups two-thirds full.
  • Bake for 20 to 25 minutes, until the tops of the muffins spring back to the touch. Cool for 5 minutes before carefully removing the muffins from the cups. Transfer to a cooling rack and cool completely. (You can freeze and thaw these in pairs so you won't be tempted to eat the whole batch.)

SOUR CHERRY CITRUS MUFFINS



Sour Cherry Citrus Muffins image

From a Canadian Living Muffins and Cookies book. The original recipe was for blueberries and suggested sweet cherries as a possible substitution. I found it much more interesting with sour cherries - and there's plenty of brown sugar in here to compensate for the tartness of the cherries.

1 cup brown sugar, lightly packed
3/4 cup rolled oats
2/3 cup whole wheat flour
1/2 cup all-purpose flour
1 tablespoon baking powder
1/4 teaspoon cinnamon
1 grated lemon, rind of (or orange)
1 cup skim milk
1/4 cup vegetable oil
1 egg
1 cup sour cherry

Steps:

  • In large bowl, combine sugar, oats, whole wheat and all-purpose flours, baking powder, cinnamon and lemon rind. Beat together milk, oil and egg; pour over dry ingredients and mix just until moistened but not over-mixed. Gently fold in cherries.
  • Spoon into large lined muffin cups, filling three-quarters full. Bake in 400 F (200 C) oven for 20-25 minutes or until tops are firm to the touch.

3 teaspoons grated orange or lemon peel or combination
2/3 cup milk
1/3 cup vegetable oil
1 egg
1 2/3 cups Gold Medal™ all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Heat oven to 400° F. Line 12 muffin cups with paper baking cups. In small bowl, mix 3 tablespoons sugar and 1 teaspoon of the orange peel; set aside.
  • In medium bowl, beat milk, oil and egg with fork. Stir in flour, 3/4 cup sugar, the baking powder, salt and remaining 2 teaspoons orange peel just until moistened. Divide batter evenly among muffin cups. Sprinkle sugar-orange peel mixture evenly over batter.
  • Bake 15 to 18 minutes or until golden brown. Cool 5 minutes; remove from pan. Serve warm.
