SAUTéED SALMON WITH CITRUS SALSA

Sautéed Salmon with Citrus Salsa image

Consider this speedy salmon dish a fall anecdote to a holiday season filled with rich stews, braises, and roasts. The tart, bright citrus topper cuts through the natural fattiness of the salmon; it would overwhelm lighter fish like cod or flounder. Serve for a simple, elegant date night, or double to serve 4. After freeing the citrus sections, squeeze the membranes over a bowl and make a quick vinaigrette for enjoying during the week. Change up the salsa with chopped tart-crisp apples and a seeded minced jalapeño, or try diced ripe pear and pomegranate arils.

Provided by Robin Bashinsky

Yield Serves 2 (serving size: 1 salmon fillet and about 1/3 cup salsa)

Number Of Ingredients 9

1 tablespoon extra-virgin olive oil, divided
2 (6-oz.) salmon fillets, skinned
1/2 teaspoon kosher salt, divided
1/4 teaspoon freshly ground black pepper
1/2 cup grapefruit sections
1/2 cup orange sections
1/4 cup thinly sliced shallots
1/4 cup chopped fresh flat-leaf parsley
1 1/2 tablespoons fresh lime juice

Steps:

  • Heat a nonstick skillet over medium-high. Add 1 teaspoon oil to pan; swirl to coat. Sprinkle fillets evenly with 1/4 teaspoon salt and pepper. Add fillets to pan; cook 4 minutes on each side or until desired degree of doneness.
  • Combine remaining 2 teaspoons oil, remaining 1/4 teaspoon salt, grapefruit sections, and remaining ingredients in a bowl; toss. Spoon grapefruit mixture evenly over fillets.

Chili Rubbed Salmon with Citrus Salsa - Slimmed image

Provided by Food Network Kitchen

Categories     main-dish

Time 37m

Yield 4 servings

Number Of Ingredients 13

1 tablespoon minced red onion
2 tablespoons freshly squeezed lime juice
2 teaspoons honey
2 teaspoons extra-virgin olive oil, plus more as needed
1/2 teaspoon kosher salt, plus more for fish
1 grapefruit
2 blood oranges
1 jalapeno chile, stemmed, seeded, and minced
1/4 medium jicama, peeled and julienned, about 1 1/4 cups
1/2 cup fresh coriander leaves (cilantro), coarsely chopped
4 (6-ounce) salmon fillets
1/4 teaspoon chili powder
8 corn tortillas, warmed (see Cook's Note)

Steps:

  • Preheat the broiler to high. Soak onion in a bowl of very cold water.
  • In a medium bowl, whisk together the lime juice, honey, 2 teaspoons of oil, and 1/2 teaspoon of salt.
  • Trim the top and bottom off the grapefruit to expose the inner fruit. Following the curve of the fruit cut off the skin and white pith. Cut the segments free from the membrane and add to the dressing. Repeat with the oranges. (For help with this, see our Video demo of segmenting an orange.) Add the jalapeno, jicama, and fresh coriander to the citrus mixture. Drain the onions and stir to combine evenly.
  • Position a broiler pan about 6 inches from the broiler and preheat. Lightly brush the salmon with the olive oil. Sprinkle top of the fish with the chili powder and season with salt, to taste. Carefully lay fish, skin-side down, on the hot broiler pan. Broil the fish until just firm and brown, about 7 minutes. Remove pan from the broiler; set the salmon aside on the hot pan to finish cooking, about 5 minutes more.
  • Divide the fish among plates and serve with the salsa and tortillas.
