SIMPLE EASY CINNAMON CAKE

Simple Easy Cinnamon Cake, a soft, delicious and moist Cake Recipe. Perfect for snack, dessert or even Breakfast. Everyone will love it.

3 tablespoons brown sugar ((38 grams))
1 tablespoon cinnamon ((6 1/4 grams))
3/4 cup butter softened* ((168 grams))
1 cup granulated sugar ((200 grams))
2 eggs
2 cups all purpose flour ((250 grams))
1 teaspoon baking powder ((5 grams))
1/2 teaspoon baking soda ((2.5 grams))
¼ teaspoon salt ((2 grams))
1 cup sour milk (to make sour milk add 1 tablespoon lemon juice or white vinegar to 1 cup measure and top off with milk, let sit for about 10 - 15 minutes)
1 teaspoon vanilla ((5 ml))

Steps:

  • Pre-heat oven to 325° (160° celsius)
  • In a small bowl mix together brown sugar and cinnamon, set aside.
  • In a large bowl cream butter and sugar, then add the eggs, beat until fluffy.
  • In a medium bowl sift together flour,baking powder, baking soda and salt.
  • Add dry ingredients alternately with sour milk, ending with sour milk to creamed mixture. Add vanilla and mix well.
  • Spoon 1/3 of the batter into a greased 8" (20.5 centimeter) springform pan. Sprinkle with 1/2 of the cinnamon mixture. Spoon another 1/3 of the batter on top, then remaining cinnamon mixture and then top with the remaining batter. Bake for approximately 50-60 minutes or until toothpick comes out clean and dry. Remove from oven and let cool. Enjoy!

3 cups flour
1 ½ teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cardamom
¾ teaspoon ground cinnamon
¼ teaspoon salt
2 sticks butter, at room temperature
1 ⅓ cups turbinado sugar, plus more for sprinkling
¾ cup brown rice syrup
3 large eggs
1 cup dry white wine such as Chenin Blanc
½ cup coarsely chopped pecans or walnuts, plus more for garnish
½ cup golden raisins

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking pan or dish and line bottom with parchment paper. Grease parchment or spray with cooking spray.
  • Whisk together flour, baking powder, baking soda, cardamom, cinnamon, and salt in a bowl. Beat together butter and sugar with an electric mixer at medium speed in a large bowl until light and fluffy, about 3 minutes. Beat in syrup, then add eggs 1 at a time, beating well after each addition. Beat in wine and half of flour mixture, then beat in remaining flour mixture. Add nuts and raisins, beating just until combined. Pour batter into prepared pan.
  • Bake until a toothpick inserted into center comes out clean, about 45 minutes. Cool cake completely in pan on a wire rack, about 1 hour.
  • Sprinkle with some turbinado sugar and nuts for garnish.

RHUBARB CINNAMON CAKE

My update to a fairly common recipe, inspired when I was gifted with several kilos of rhubarb this spring from my in-laws' garden! It's a dense, moist, pudding style cake rather than a light, crumbly tea-time one. The cinnamon sugar topping is much more practical than other variants, you could ice (frost) it with cream cheese icing, in which case leave off the sugar and cinnamon at the end but this may just be too rich? Let me know how it turns out if you do. It keeps for 3-4 days refrigerated and is even better the day after making. serve warmed with double cream or cool with a cup of tea.

120 g butter, at room temperature, plus extra for greasing the cake tin
300 g caster sugar
1 large egg
1 teaspoon vanilla extract
250 g plain flour, plus extra for dusting
2 teaspoons bicarbonate of soda
230 ml semi skim milk
1 teaspoon lemon juice
500 g rhubarb, chopped fairly small (but see note in method, below.)
2 teaspoons ground cinnamon
1 teaspoon ground cinnamon
100 g light brown sugar

Steps:

  • Pre-heat the oven to 180°C.
  • Prepare a 25cm / 10in cake tin by greasing thoroughly and dusting with a fine layer of plain flour.
  • Cream the butter and sugar together until pale and fluffy. add in the egg and vanilla extract and mix well.
  • Mix together the semi-skimmed milk and lemon juice. add to the other ingredients and beat until combined.
  • Add the bicarbonate of soda and then gradually add the flour, beating well after each addition. Add two teaspons of the cinnamon, and mix until it is all well combined.
  • Take the chopped rhubarb (I divide the stalks into two longwise, then chop into slices about the thickness of a one Pound / Euro coin).
  • NOTE As the rhubarb is cut small it will rise, giving a rhubarby "layer" on top of the cake. If you don't like this idea, don't cut the rhubarb so small - keep it in 1cm or so chunks and dust it with a very little plain flour before incorporating. Fold it into the cake batter.
  • Pour the batter into the prepared tin and level with the back of a spoon.
  • Sprinkle the top with the light brown sugar (use less if you don't have a sweet tooth), crumbling any lumps between your fingers as you go.
  • Finally sprinkle the top with the remaining teaspon of cinnamon - or more to taste.
  • Bake in the centre of the preheated oven for 50 minutes, or until a toothpick comes out clean.
  • Leave to cool in the tin for 15 mins, then turn out onto a wire rack to cool completely.

Birthday cake that my grandmother used to make for my mom. It's a dense cake, that has a little bit of spice and tons of sweetness. Super easy and always good.

12 ounces raisins
2 cups sugar
2 cups water
2 tablespoons shortening
2 teaspoons cinnamon
1/2 cup coffee
2 teaspoons baking soda
3 cups flour

Steps:

  • Preheat oven to 350.
  • Add the raisins, sugar, water, shortening, and cinnamon to a saucepan. On medium heat, bring to a boil and cook for 5 minutes Stir occassionally to make sure raisins are not clumping together. Take off heat, and cool to room temperature.
  • Add baking soda to coffee and mix into saucepan. Combine well.
  • Add flour to saucepan. Mix with a whisk until smooth, batter will be runny.
  • Pour batter into a greased and floured bundt pan.
  • Cook for one hour, check with a toothpick. Cool for 15 minutes on a rack, and then invert onto a cakepake.

This makes a large cake, perfect for a pot luck or a family gathering. It is a fairly flat cake--ends up less than two inches high after you have added the toppings. This recipe came from my sister-in-law in Chicago. I had a piece at a family reunion dinner and couldn't leave without the recipe! Yum Yum!

1 (18 ounce) package yellow cake mix
3 eggs (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1 (3 1/2 ounce) package vanilla pudding mix (not instant)
1 cup milk
1 (9 ounce) package cream cheese
1 (9 ounce) package Cool Whip Topping
1 (15 1/2 ounce) package crushed pineapple, well drained
1 cup flaked coconut
1 cup walnuts, chopped

Steps:

  • Grease and flour a 12 x 17 or 12 x 15-inch pan.
  • Mix cake according to directions and bake for 20 minutes or until done; let cool completely.
  • Cook pudding with 1 cup milk, let cool.
  • Mix pudding, cream cheese and frozen topping with mixer; spread over cool cake.
  • Top with crushed pineapple.
  • Sprinkle with coconut and nuts.
  • Be sure to refrigerate leftovers.
