CINNAMON ROASTED SWEET POTATOES AND APPLES
This cinnamon roasted sweet potatoes and apples recipe is a healthy and easy fall side dish. Made with only 6 nutritious ingredients including pure maple syrup and ground cinnamon, it's a perfect dish to serve on Thanksgiving.

Steps:
- Preheat oven to 425 degrees F.
- Grease a large baking pan, set aside.
- In a large bowl, toss cubed sweet potatoes with 2 TBS of melted coconut oil. Stir until coated.
- Add sea salt and stir until evenly distributed.
- Bake in the preheated oven for 20 min, stirring halfway through, until sweet potatoes just barely start to brown.
- While the sweet potatoes are baking: stir the remaining 1 TBS of coconut oil into the apples. Add maple syrup and cinnamon and stir to combined.
- After 20 minutes, or the sweet potatoes have begun to brown, remove the sweet potatoes from oven and add the apple mixture and stir to combine.
- Return to the oven and bake for 20 more minutes, stirring halfway through.
- Once the sweet potatoes and apples are browned and the maple syrup has caramelized on them remove them from the oven and serve immediately!

ROASTED SWEET POTATOES AND APPLES

Steps:
- Preheat the oven to 350 degrees F.
- In a large bowl, toss the sweet potatoes generously with some olive oil, salt, cinnamon and cayenne. Lay the sweet potatoes out on a sheet tray, place them in the oven and roast until they are very soft and mushy, 30 to 35 minutes.
- Peel the apples and cut into 1-inch dice. Toss the apples with the lemon juice, some olive oil, salt and the rosemary. Lay them out on a sheet tray and place in the oven during the last 15 minutes of the cooking time for the sweet potatoes. When done, the apples should be soft and cooked through but still hold their shape. Sprinkle the walnuts over the apples during the last 5 minutes in the oven.
- Transfer the sweet potatoes to a large bowl and coarsely mash them with a potato masher. Stir in the cooked apples and walnuts. Taste and adjust the seasoning if needed.
- Serve immediately or keep in a warm oven and serve hot.

- Preheat oven to 375℉.
- In a 9×13 inch casserole dish, combine the sweet potatoes, apples, 2 Tbsp. melted ghee or butter, water, and cinnamon.
- Mix until apples and sweet potatoes are evenly coated.
- Cover with foil and bake in the oven for 40 minutes.
- After 40 minutes, remove foil, add optional pecans, stir and bake for an additional 10-15 minutes or until sweet potatoes are cooked through to your liking.
- Remove from oven, toss or drizzle with 1 Tbsp. melted ghee or butter and dash with cinnamon and a little sea salt.
- Optional - Drizzle with a little maple syrup and top with additional chopped pecans.

My Grandma shared this recipe with me and it's been a favorite of mine every year at Thanksgiving. It's by far better than any other yam side dish I've had. (I don't like yams and marshmallows.)

- Preheat an oven to 350 degrees F (175 degrees C).
- Place the sweet potatoes into a large pot and cover with salted water. Bring to a boil over high heat; reduce heat to medium-low, cover, and simmer until just tender, 15 to 20 minutes. Drain and allow to steam dry for a minute or two. Peel and cut into 1/2-inch slices; layer the sweet potatoes and apples into a 9x13-inch baking dish.
- Meanwhile, stir together the sugar, cornstarch, salt, cinnamon, and nutmeg in a saucepan. Stir in the water and butter and bring to a simmer over medium heat. Cook and stir until thickened and no longer cloudy, 5 to 10 minutes. Pour over the sweet potatoes.
- Bake in the preheated oven until the apples are very tender and the sweet potatoes are golden on top, about 1 hour.

My late Aunt Donna used to frequent farmer's markets during various local produce seasons, and she would find the best local recipes whenever she did. This one was on the table every Thanksgiving once she discovered it. My family normally prefers sweet potatoes unadulterated (wrapped in foil and simply baked), but we always empty the dish when this casserole is made. Prep and cook time do not reflect time for cooking sweet potatoes.

SWEET POTATO BAKE WITH CINNAMON APPLES
Steps:
- 1. Heat the oven to 350°F. Pierce the sweet potatoes with the tip of a knife. Place them on a baking sheet and bake until tender when pierced with a knife, about 35 to 40 minutes. 2. Remove the potatoes from the oven and split open with a knife. When cool enough to handle, scoop out the flesh with a spoon and transfer it to a processor. Process the potato flesh with a tablespoon of the butter, milk and salt and pepper to taste. 3. Meanwhile, peel, core and slice the apples into 1/4-inch slices. Heat the remaining tablespoon of butter in a large skillet over medium heat. Add the brown sugar. Stir and cook until the sugar has melted, about 3 minutes. Add the cinnamon and apple slices. Cook until slightly softened and coated with the caramel, about 3 to 4 minutes. 4. Transfer the potato puree into a shallow baking dish and smooth the top with a spatula. Arrange the apple slices over the puree in an overlapping pattern. Transfer the puree to the oven and bake until throughly heated, about 10 minutes. Serve hot.
