2 Apples (I use pink lady)
1 teaspoon Cinnamon
1 teaspoon Maple Syrup
2 tablespoon Water

Steps:

  • Peel and dice apples into fairly uniform pieces.
  • Place a small saucepan or skillet on low heat, and add water, apples, cinnamon and maple syrup. Cook, stirring regularly, for 10 minutes or until the apples have softened. Add more water to the saucepan if needed.
  • Remove from heat and serve (see list below for serving suggestions).

3 pounds apples (peeled/cored/quartered)
1 stick butter (use clarified butter if dairy free)
1 cup brown sugar
1/2 tablespoon cinnamon
1/2 tablespoon vanilla
optional: 1 - 2 teaspoons corn starch to thicken sauce if using as a syrup

Steps:

  • In a large pot or skillet, heat butter, brown sugar, cinnamon, and vanilla, over medium/low heat until ingredients are incorporated.
  • Add apples and toss gently until everything is coated in the sugar sauce.
  • Cover and continue cooking over medium/low heat for about 30 minutes, stirring occasionally.
  • Remove from heat and serve or can. (Feel free to pack the apples and sauce separately if you want to use the liquid as a pancake or breakfast syrup. If you want to thicken, remove the apples and slowly stir in corn starch, heating for an additional 3 - 5 minutes. You'll want to serve the sauce warm as the butter may separate some in the refrigerator).

3/4 cup cinnamon candies, such as Red Hots
1/2 cup light brown sugar
4 large Granny Smith apples, peeled, cored and each cut into eighths
1 stick (8 tablespoons) salted butter
One 16-ounce store-bought pound cake, cut into 8 slices
Vanilla ice cream, for serving
Mint leaves, for garnish

Steps:

  • Combine the candies, brown sugar and 2 1/2 cups water in a large saucepan and place over medium-high heat. Cook, stirring, until the candies and sugar have fully melted, about 10 minutes.
  • Add the apples and bring to a boil. Cook until the apples are tender but not mushy, about 5 minutes. Remove the apples with a slotted spoon and transfer to a heatproof dish. Allow the syrup to boil for an additional 5 minutes to thicken and intensify. Pour the syrup over the apples and allow to cool. Transfer to the fridge and chill for at least 4 hours.
  • When ready to serve, warm a griddle over medium heat. Butter the griddle and toast the slices of pound cake for about 2 minutes per side, adding more butter as needed.
  • To plate, place a piece of pound cake on each plate. Top with a scoop of ice cream and 4 apple slices. Drizzle with additional syrup and garnish with the mint.

1/2 butternut squash, peeled, seeds removed and cut into 1-inch chunks
Kosher salt and freshly ground black pepper
3 Granny Smith apples, peeled, cored and chopped into 1-inch chunks
1 cup water
1/4 cup brown sugar
1/2 teaspoon ground cinnamon

Steps:

  • Heat the butter in a large heavy saute pan over medium-high heat. Add the butternut squash and season with salt and pepper, to taste. Cook until the squash is beginning to caramelize, about 6 to 8 minutes. Add the apples and continue to brown, another 5 minutes. Stir in 1 cup of water and the sugar. Cover, then reduce the heat to medium-low and cook until tender, about 15 minutes. Add the cinnamon and cook until the squash and apples are coated in a deep golden brown glaze, about 5 minutes more. 9 ounces cinnamon red-hot candies

Steps:

  • Cut peeled & cored apples into wedges.
  • Place the apple wedges into a large enameled cast-iron pot or Dutch oven. Add water and cinnamon candies.
  • Over medium-high heat, bring to a boil, stirring constantly.
  • Reduce the heat to medium, stirring constantly until the candies have dissolved and apples are soft but not mushy. Continue to boil until 1/2 cup of the liquid remains. Taking care not to break up the apples. The more concentrated the liquid, the more intense the color and flavor of the apples.
