When feeding three hungry boys, I rely on quick, filling and tasty meals. The guys aren't big quinoa fans, but the sweet potatoes and apples won them over. -Cheryl Beadle, Plymouth, Michigan

2-1/4 cups chicken or vegetable stock
1 cup quinoa, rinsed
2 tablespoons canola oil
2 pounds sweet potatoes (about 3 medium), peeled and cut into 1/2-inch pieces
2 shallots, finely chopped
3 medium Gala or Honeycrisp apples, cut into 1/4-inch slices
1/2 cup white wine or additional stock
1/2 teaspoon salt
1 can (15 ounces) black beans, rinsed and drained

Steps:

  • In a large saucepan, combine stock and quinoa; bring to a boil. Reduce heat; simmer, covered, 15-20 minutes or until liquid is almost absorbed. Remove from heat., Meanwhile, in a 6-qt. stockpot, heat oil over medium heat. Add sweet potatoes and shallots; cook and stir 5 minutes. Add apples; cook and stir 6-8 minutes longer until potatoes and apples are tender., Stir in wine and salt. Bring to a boil; cook, uncovered, until wine is evaporated, about 1 minute. Stir in black beans and quinoa; heat through.

Spicy Quinoa with Sweet Potatoes image

1 3/4 cups quinoa
3 cups low-sodium chicken broth
Kosher salt
3 tablespoons vegetable oil
1/2 red onion, thinly sliced
2 cloves garlic, finely chopped
1 tablespoon ancho chile powder
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1 small red jalapeno pepper, seeded and thinly sliced
2 small sweet potatoes, peeled and cut into 1/2-inch pieces
1/3 cup roughly chopped fresh cilantro
1 to 2 tablespoons fresh lime juice

Steps:

  • Put the quinoa in a bowl and cover with water; drain. Repeat twice; drain well. (This will help remove bitterness.) Transfer the quinoa to a medium saucepan over medium heat and stir constantly until the quinoa is dry, about 8 minutes. Add 1 1/2 cups chicken broth, 3/4 cup water and 1/2 teaspoon salt. Bring to a simmer, then cover the pan, leaving the lid slightly ajar to let steam escape; reduce the heat to medium low and cook until the quinoa is tender and the liquid is absorbed, about 15 minutes.
  • Meanwhile, heat the vegetable oil in a large skillet over medium heat. Add the red onion and garlic and cook until slightly softened, about 4 minutes. Add the chile powder, coriander and cumin and cook, stirring, until the spices darken, about 1 minute. Add the remaining 1 1/2 cups chicken broth, the jalapeno, sweet potatoes and 1/2 teaspoon salt. Increase the heat to medium high and bring to a simmer. Cook, stirring occasionally, until the sweet potatoes are tender and the liquid is almost absorbed, about 15 minutes.
  • Add the sweet potato mixture to the quinoa, then add the cilantro and lime juice and toss; season with salt.

1 ¼ cups quinoa
2 ½ cups water
2 teaspoons cinnamon
¾ teaspoon salt
2 tablespoons canola oil
1 ¾ cups sweet potato, peeled and diced
1 cup onion, finely chopped
1 ½ cups red apple, unpeeled and diced
1 ½ cups Granny Smith apple, unpeeled and diced

Steps:

  • In a large saucepan, combine quinoa and water. Bring to a boil. Reduce heat and simmer until all water has evaporated and quinoa is cooked, about 15 minutes.. Remove from heat, stir in cinnamon and salt. Pour into large mixing bowl and set aside.. While quinoa cooks, heat canola oil in a 12-inch skillet over medium-high heat. Add sweet potato and saute 5 minutes. Add onion and saute an additional 3 minutes.. Add apples and saute until sweet potato is slightly soft and apples are crisp-tender, about 4-6 minutes.. Add cooked mixture to spiced quinoa and stir lightly to blend.

1 small onion, chopped
1 clove garlic, minced
¾ cup quinoa
1 ½ teaspoons curry powder
½ teaspoon salt
½ teaspoon black pepper

1 ½ cups chicken stock
1 (14 ounce) can garbanzo beans, drained and rinsed
½ cup toasted pine nuts
½ cup raisins, soaked in hot water and drained

Steps:

  • Stir together the olive oil, onion, and garlic in a saucepan over medium heat until the onion has softened and turned translucent, about 5 minutes. Stir in the quinoa, curry powder, salt, pepper, cumin, cinnamon, and chicken stock. Bring to a boil, then reduce heat to medium-low, cover, and simmer 20 minutes until the quinoa is tender.
  • Once the quinoa has finished cooking, stir in the drained garbanzo beans, toasted pine nuts, and raisins. Serve warm or cold.

2-1/2 pounds sweet potatoes
1/2 cup packed brown sugar
1/3 cup chopped walnuts
1 teaspoon ground cinnamon
1/8 teaspoon salt
3 cups thinly sliced peeled tart apples
4 tablespoons butter, divided

Steps:

  • Place the sweet potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer 30 minutes or until tender. Drain. When cool enough to handle, peel potatoes and cut into 1/2-in. slices. , Preheat oven to 375°. In a small bowl, combine brown sugar, walnuts, cinnamon and salt; set aside. In a large skillet, saute apples in 2 tablespoons butter 3-4 minutes or until tender. , In a greased 1-1/2-qt. baking dish, layer half the sweet potatoes, apples and brown sugar mixture. Repeat layers. , Dot with remaining butter. Cover and bake 30 minutes. Uncover; bake 15 minutes longer or until bubbly.

  • Preheat the oven to 400°. In a large saucepan, heat 1 tablespoon of the olive oil. Add the quinoa and toast over moderate heat, stirring, for 2 minutes. Add 3 cups of water, season with salt and bring to a boil. Cover and simmer the quinoa for 16 minutes. Remove from the heat and let stand for 10 minutes. Fluff the quinoa, spread it out on a baking sheet and refrigerate until it is chilled, about 20 minutes.
  • Meanwhile, on a baking sheet, toss the sweet potatoes with 1 tablespoon of the olive oil and season with salt and pepper. Roast for about 25 minutes, stirring once, until golden and softened. Let cool.
  • In a large bowl, whisk the remaining 6 tablespoons of olive oil with the vinegar; season with salt and pepper. Add the quinoa, sweet potatoes, apples, parsley, onion and greens and toss well. Serve right away.
