CINNAMON OLD FASHIONED
For the holidays, I like to spice up my usual Old Fashioned. Rather than just whiskey, bitters, and sugar, I use a cinnamon-infused simple syrup to make this classic cocktail just a bit different.

Steps:
- In a mixing glass, add the cinnamon bark syrup, rum, bourbon and bitters. Fill with ice cubes and mix by holding the spoon like a pen and stirring clockwise. To serve, place a large ice cube into a glass and strain. Run the orange twist around the rim, add to the cocktail and serve.
- In a saucepan, combine equal parts sugar and water. Break up the cinnamon bark (sticks), add to the simple syrup mixture, and bring to a boil. Remove from heat, cool, and strain.
BROWN SUGAR SYRUP WITH CINNAMON
A simple little recipe for when you get caught without any syrup for your pancakes or even over some ice cream.

Steps:
- In a medium sauce pan, add brown sugar and water and bring to a boil.
- Stir constantly for about 3 minutes and reduce heat to low.
- Keep stirring until all sugar has dissolved.
- Remove from heat and stir in flavoring.
- If using cinnamon, add to dry brown sugar before adding liquid.
- Allow to cool before using.
CINNAMON SYRUP
My sister in law made this for me a few years ago, and it is now my favorite pancake and waffle topping.

- Mix sugar, salt, flour, and cinnamon in a small saucepan.
- Add water and bring to a boil.
- Boil until thickened.
- Stir in butter.
- Serve over pancakes, waffles, or french toast.

CINNAMON SIMPLE SYRUP
Steps:
- In a saucepan combine the sugar, water, and cinnamon sticks. Bring to a boil over medium heat, reduce the heat, and simmer for 5 minutes, or until the sugar has dissolved. Take the pan off the heat and cool the syrup. Any extra cooled syrup can be saved in an airtight container in the refrigerator for up to one week.
CINNAMON SYRUP
This is an adaptation of a friend's recipe. My kids go crazy over this syrup when we have pancakes or waffles. It's also good on apple slices or strawberries. The only problem is that my kids always forget their manners and lick the leftover syrup off their plates.

- Stir together the white sugar, brown sugar, flour, and cinnamon in a small saucepan. Stir in vanilla extract and water. Bring to a rolling boil, stirring often. Continue to boil and stir until mixture thickens to syrup consistency. Remove from heat; cool 10 minutes before serving.
