1 (16 ounce) bag wide egg noodles
6 large eggs
1 cup milk
1 16 ounce container cottage cheese
1 16 ounce container sour cream
1 cup sugar, divided
1/2 cup butter, melted
1/2 teaspoon vanilla
1/4 teaspoon sea salt
1/2 cup mixed golden raisins
1 teaspoon cinnamon
1 tablespoon brown sugar

Steps:

  • Preheat oven to 350 degrees F.
  • Coat 9x13 baking dish with cooking spray; set aside.
  • Bring a stock pot of salted water to boil.
  • Cook egg noodles 4-5 minutes, stirring occasionally until cooked through but firm to the bite; drain.
  • In a large mixing bowl whisk eggs, milk, cottage cheese, sour cream, 2/3 cup sugar, butter, vanilla, and sea salt.
  • Stir egg noodles into cottage cheese mixture, then pour into prepared baking dish.
  • In a separate bowl combine 1/3 cup white sugar, brown sugar, and cinnamon in a small bowl; sprinkle mixture on top noodle kugel.
  • Bake until sauce is bubbly and noodles are golden, about 1 hour.
  • Allow pan of kugel to cool on a wire rack for 10 minutes before serving.
  • Serve with a dollop of sour cream and sprinkle of cinnamon.

1 pound wide egg noodles
5 extra-large eggs
4 cups half-and-half
1/4 cup light brown sugar, packed
2 teaspoons pure vanilla extract
1/2 teaspoon ground cinnamon
1 1/2 tablespoons kosher salt
1/2 teaspoon freshly ground black pepper
1 cup ricotta cheese
1 cup golden raisins

Steps:

  • Preheat the oven to 350 degrees F. Butter a 10 by 13 by 2 1/4-inch baking dish.
  • Drizzle some oil into a large pot of boiling salted water. Cook the noodles for 6 to 8 minutes, until tender. Drain.
  • In a large bowl, whisk together the eggs, half-and-half, brown sugar, vanilla, cinnamon, salt, and pepper. Stir in the ricotta and raisins. Add the drained noodles.
  • Pour the noodle mixture into the baking dish. Place the filled dish in a larger pan and pour in enough hot water to come halfway up the sides. Cover the entire assembly with aluminum foil. Bake for 45 minutes, then remove the foil and bake for another 45 minutes, or until the custard is just set.

Steps:

  • Adjust oven rack to middle position and preheat the oven to 350°F. Butter a 9 x 13-inch baking dish.
  • Bring a large pot of water to a boil and parboil noodles until al dente, 4-5 minutes; drain and set aside. In a large bowl, whisk together eggs and sugar until smooth. Whisk in cottage cheese, sour cream, and butter until combined.

1 cup dark raisin (optional)
5 large eggs
1 cup sour cream
1/2 cup unsalted butter, melted, cooled
1/2 cup sugar
4 cups whole milk
1 teaspoon vanilla
1 pinch cinnamon (to taste)
1 pinch nutmeg (to taste)
3 cups corn flakes, coarsely crushed
1/4 cup packed dark brown sugar

Steps:

  • Preheat oven to 350°F Butter 13 x 9 x 2-inch glass baking dish. Spread uncooked noodles over bottom of prepared dish and sprinkle with raisins (if using).
  • Whisk eggs, sour cream, butter, vanilla, cinnamon, nutmeg, and sugar in large bowl until smooth. Whisk in milk and pour mixture over noodles. Let kugel stand 5 minutes.
