CINNAMON TOAST BITES
These addictive cinnamon toast bites have a crispy, cinnamon-y, sugary coating that ensures no one can eat just one! Make them as an extra-special morning treat, or a slumber party snack that is sure to earn you tons of fans.

Steps:
- Preheat oven to 375°F. Arrange bread in a single layer on a parchment-lined rimmed baking sheet. Bake, tossing halfway through, until completely dried out, 18-20 minutes.
- Meanwhile, melt butter in a small saucepan over medium heat. Whisk in sugar and 1/2 cup water and cook until sugar is dissolved. Whisk in cinnamon, vanilla, and salt. Transfer syrup to a large bowl, add bread, and toss quickly until coated. Using a slotted spoon, return cubes to baking sheet; discard remaining syrup. Bake bread, tossing halfway through, until sugar is slightly caramelized, about 10 minutes more. Let cool slightly.

- Bites can be made 1 day ahead. Store in an airtight container at room temperature.

Steps:
- Spray grill with cooking spray. Preheat grill for 6 minutes.
- In a medium shallow bowl, whisk together eggs, milk, sugar, and vanilla. Soak slices of bread in egg mixture.
- Place slices of bread on the grill. Close lid and cook 4 minutes or until done. Repeat with remaining bread.
- Sprinkle with cinnamon before serving with butter and syrup.
EASY CINNAMON FRENCH TOAST
This recipe is off of a sample card I received in the mail. It's a great way to make cinnamon french toast without using cinnamon bread. Easy enough to make any day of the week and they feeze well.

Steps:
- Beat eggs with wire whisk until foamy.
- Add milk, cinnamon and vanilla; Beat well.
- Spray large non-stick skillet with cooking spray. Heat over medium heat. You can also use a griddle set at 375.
- Dip bread into batter and cook until golden brown, about 1-2 minutes per side. Whisk the batter before you dip each slice to distribute the cinnamon.
- These can be made low fat by replacing the eggs with 4 whites or 1/2 cup egg substitute and using fat free milk. I usually double the recipe and refrigerate (up to a week) or freeze (2 months) the leftovers.

Steps:
- Cut each slice of bread into bite size pieces.
- In a large bowl, whisk together eggs, whipping cream, milk, vanilla, 1 Tablespoon of sugar and 1 teaspoon of cinnamon.
- In a large saucepan over medium heat, melt butter.
- After butter is melted, dip each piece of bread in egg mixture, let excess drip off and place in saucepan.
- You won't be able to cook all of the bread at one time, so work with just enough pieces to fill the bottom layer of the pan.
- Saute your french toast bites until they begin to golden.
- Once one side is golden brown, flip over and cook the other side until golden brown and crispy on the outside.
- In a separate bowl, mix together remaining sugar, cinnamon and brown sugar.
- Transfer hot french toast bites to bowl and toss in cinnamon and sugar mixture until coated.
- Serve with syrup and sprinkled with more sugar and cinnamon.
