CINNAMON COCONUT LOAF
This is a scrumptious loaf to have on hand when company drops over.

Steps:
- In a small bowl, stir together coconut, brown sugar, and cinnamon.
- Measure flour, baking powder, baking soda, and salt into a bowl; mix well.
- In a mixing bowl, beat eggs until frothy. Beat in oil and sugar. Blend in sour cream. Add flour mixture, and stir until combined. Put 1/2 of the batter in the bottom of a greased 9 x 5 x 3 inch loaf pan. Sprinkle 1/2 of the cinnamon mixture over batter. Top with remaining batter by putting dabs here and there. Sprinkle remaining cinnamon mixture over top. Cut through batter with a knife to give a swirling, marbled effect.
- Bake at 350 degrees F (175 degrees C) for 1 hour. After loaf stands for 10 minutes, remove from pan to cool on rack.

KETO EGG LOAF
An easy keto egg loaf recipe to make Keto French toasts or breakfast toast.

Steps:
- Preheat oven to 350°F (180°C). Line a 9 x 5-inch loaf pan with greased parchment paper. Set aside.
- In a food processor, with the S blade attachment, blend eggs, melted butter, softened cream cheese, and vanilla extract if used. Blend on high speed until smooth.
- Stop the food processor and add in baking powder, coconut flour, erythritol, and cinnamon, if used. Blend again on high speed to combine and form a smooth loaf batter with no lumps.
- Pour the batter into the prepared loaf pan.
- Bake for 45-55 minutes or until the top has puffed and has a lovely golden brown color. You can insert a skewer in the center of the loaf to test the baking. If it comes out clean, the egg loaf is cooked through.
- Cool it down for 5 minutes in the pan, then pull out the hanging part of parchment paper to release the egg loaf.
- Transfer onto a cooling rack, the loaf will slightly sink in the center at room temperature, and that's normal.

CINNAMON LOAF
Steps:
- Pre-heat oven to 350 degrees and grease a 9x5 loaf pan with butter.
- In a large bowl, mix together flour, baking powder, baking soda and salt.
- In the bowl of a stand mixer or in a large bowl with a hand mixer, beat together the butter and sugar for about 1 minute. Add eggs, one at a time, blending well after eat addition. Mix in vanilla extract and lemon zest.
- Mix 1/3 of the flour mixture into the wet ingredients until just combined. Mix 1/3 of the buttermilk in until just combined. Continue alternating flour mixture and buttermilk until everything is just combined.
- In a separate medium bowl, mix together brown sugar and cinnamon.
- Pour 1/3 of the batter into the prepared loaf pan. Pour 1/3 of the cinnamon mixture on top, followed by another 1/3 of the batter and another 1/3 of the cinnamon. Repeat one more time, ending with the cinnamon sugar on top.
- Bake on the bottom rack of your oven for 54-58 minutes, until a toothpick stuck in the center comes out clean.
- Let cinnamon loaf cool in pan before removing from pan (run a knife along the edges if necessary) and slicing.
YUMMY SOUR CREAM CINNAMON LOAF
This is my creation formed by mixing a couple of loaf recipes until I got it the way everybody likes it. If you so desire, add a dash of cardomon to the batter. I think you will enjoy this loaf. Please let me know.

- To begin: Prehat oven to 350 degrees. Grease and flour a 9 x 5" loaf pan.
- Batter:.
- First, in a small bowl stir together the flour, baking powder, baking soda, and salt. Set aside.
- In a medium size bowl, cream the softened butter and 1 Celsius sugar until fluffy (about 4-5 minutes). Add the eggs and vanilla flavoring and mix until blended.
- Add the sour cream and the milk; blend at low speed and mix well.
- Add the flour mixture and mix well until all is incorporated.
- Cinnamon Mixture:.
- In a small bowl, mix together the sugars, cinnamon, and allspice. Set aside 1/4 of this to go on top of the loaf.
- Spoon half of the batter into the prepared loaf pan.
- Spoon 3/4's of the cinnamon mixture over the batter in the pan.
- Spoon the remainder of the batter over top.
- Take a small spatula and cut through the batter and cinnamon mixture to form swirls.
- Sprinkle the remaining cinnamon mixture over the top of the loaf.
- Bake 50-60 minutes or until a toothpick comes out clean.
- Cool 10 minutes before turning out of the pan.
