2 eggs
¼ cup vegetable oil
1 cup white sugar
1 cup sour cream
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt
½ cup flaked coconut
¼ cup packed brown sugar
2 teaspoons ground cinnamon

Steps:

  • In a small bowl, stir together coconut, brown sugar, and cinnamon.
  • Measure flour, baking powder, baking soda, and salt into a bowl; mix well.
  • In a mixing bowl, beat eggs until frothy. Beat in oil and sugar. Blend in sour cream. Add flour mixture, and stir until combined. Put 1/2 of the batter in the bottom of a greased 9 x 5 x 3 inch loaf pan. Sprinkle 1/2 of the cinnamon mixture over batter. Top with remaining batter by putting dabs here and there. Sprinkle remaining cinnamon mixture over top. Cut through batter with a knife to give a swirling, marbled effect.
  • Bake at 350 degrees F (175 degrees C) for 1 hour. After loaf stands for 10 minutes, remove from pan to cool on rack.

8 large Eggs
8 oz Cream cheese (softened)
4 tablespoons Unsalted Butter
1 teaspoon Baking powder
7 tablespoons Coconut flour (spoon and sweep)
1 teaspoon Vanilla Extract
1/4 cup Erythritol
1/2 teaspoon Ground Cinnamon

Steps:

  • Preheat oven to 350°F (180°C). Line a 9 x 5-inch loaf pan with greased parchment paper. Set aside.
  • In a food processor, with the S blade attachment, blend eggs, melted butter, softened cream cheese, and vanilla extract if used. Blend on high speed until smooth.
  • Stop the food processor and add in baking powder, coconut flour, erythritol, and cinnamon, if used. Blend again on high speed to combine and form a smooth loaf batter with no lumps.
  • Pour the batter into the prepared loaf pan.
  • Bake for 45-55 minutes or until the top has puffed and has a lovely golden brown color. You can insert a skewer in the center of the loaf to test the baking. If it comes out clean, the egg loaf is cooked through.
  • Cool it down for 5 minutes in the pan, then pull out the hanging part of parchment paper to release the egg loaf.
  • Transfer onto a cooling rack, the loaf will slightly sink in the center at room temperature, and that's normal.
  • Use as breakfast toast or to make French toasts following my Keto French Toast recipe.

This Cinnamon Loaf is a deliciously sweet cinnamon swirl cake made in a loaf pan. Whether you eat it for breakfast, snack, or dessert, I highly recommend eating it warm with a little butter!

2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
4 Tbsp (1/2 stick) unsalted butter, (room temperature)
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 tsp lemon zest
1 cup buttermilk
3/4 cup brown sugar
1 1/2 Tbsp cinnamon

Steps:

  • Pre-heat oven to 350 degrees and grease a 9x5 loaf pan with butter.
  • In a large bowl, mix together flour, baking powder, baking soda and salt.
  • In the bowl of a stand mixer or in a large bowl with a hand mixer, beat together the butter and sugar for about 1 minute. Add eggs, one at a time, blending well after eat addition. Mix in vanilla extract and lemon zest.
  • Mix 1/3 of the flour mixture into the wet ingredients until just combined. Mix 1/3 of the buttermilk in until just combined. Continue alternating flour mixture and buttermilk until everything is just combined.
  • In a separate medium bowl, mix together brown sugar and cinnamon.
  • Pour 1/3 of the batter into the prepared loaf pan. Pour 1/3 of the cinnamon mixture on top, followed by another 1/3 of the batter and another 1/3 of the cinnamon. Repeat one more time, ending with the cinnamon sugar on top.
  • Bake on the bottom rack of your oven for 54-58 minutes, until a toothpick stuck in the center comes out clean.
  • Let cinnamon loaf cool in pan before removing from pan (run a knife along the edges if necessary) and slicing.

1/2 cup butter, softened
2 eggs, room temperature
1/4 cup milk, room temperature
1 cup sugar
1 1/2 teaspoons pure vanilla extract
1 cup sour cream, room temperature
2 cups all-purpose flour
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup sugar
1/4 cup brown sugar
1 tablespoon cinnamon
1 dash allspice

Steps:

  • To begin: Prehat oven to 350 degrees. Grease and flour a 9 x 5" loaf pan.
  • Batter:.
  • First, in a small bowl stir together the flour, baking powder, baking soda, and salt. Set aside.
  • In a medium size bowl, cream the softened butter and 1 Celsius sugar until fluffy (about 4-5 minutes). Add the eggs and vanilla flavoring and mix until blended.
  • Add the sour cream and the milk; blend at low speed and mix well.
  • Add the flour mixture and mix well until all is incorporated.
  • Cinnamon Mixture:.
  • In a small bowl, mix together the sugars, cinnamon, and allspice. Set aside 1/4 of this to go on top of the loaf.
  • Spoon half of the batter into the prepared loaf pan.
  • Spoon 3/4's of the cinnamon mixture over the batter in the pan.
  • Spoon the remainder of the batter over top.
  • Take a small spatula and cut through the batter and cinnamon mixture to form swirls.
  • Sprinkle the remaining cinnamon mixture over the top of the loaf.
  • Bake 50-60 minutes or until a toothpick comes out clean.
  • Cool 10 minutes before turning out of the pan.
  • Enjoy!
