2 cups water
5 teaspoons instant coffee granules
1/2 cinnamon stick (3 inches)
4 whole cloves
5 teaspoons sugar
Whipped topping, optional

Steps:

  • In a small saucepan, combine the water, coffee granules, cinnamon stick and cloves. Bring to a boil. Remove from the heat; cover and let stand for 5-8 minutes. Strain and discard spices. Stir in sugar until dissolved. Ladle into mugs. Serve with whipped topping if desired.

My best friend's husband gave me this recipe. When he was young, his uncle who owned a restaurant in Mexico City made this special drink for him. It has been a favorite in our house for many years.

6 cups water
¼ cup brown sugar
1 (3 inch) cinnamon stick
1 whole clove
½ cup ground coffee beans
½ teaspoon vanilla
¼ cup chocolate syrup
1 cup whipped cream

Steps:

  • Bring the water, sugar, cinnamon, and clove to a boil in a large saucepan over high heat. Stir until the sugar has dissolved, then remove from the heat, stir in the coffee grounds, cover, and steep for 5 minutes. Stir in the vanilla and chocolate syrup, then strain through several layers of cheesecloth to remove the coffee grounds and spices. Serve with a dollop of whipped cream.

In case you're wondering about the name of this cakey, chewy-edged cookie, which nearly explodes through its sugary crust, it's a nod to a coffee bar creation in which a shot of espresso tops off a cup of masala chai, the Indian spiced tea. It's right at home on a traditional holiday cookie plate, thanks to its festive cinnamon, cardamom, ginger and cloves. Feel free to add a little freshly grated nutmeg, if you're so inclined. A strong coffee flavor adds nuance; black pepper lends a spicy kick; and malted milk powder, browned butter and brown sugar all contribute toasty warm notes to this craveable treat.

1 tablespoon finely ground espresso (not instant espresso) or finely ground coffee
1/2 cup/115 grams cold unsalted butter (1 stick)
2 cups/255 grams all-purpose flour
2 tablespoons malted milk powder, such as Carnation brand
1 teaspoon baking powder
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/8 teaspoon ground cloves
1/2 teaspoon kosher salt
1/2 teaspoon finely ground black pepper
2 large eggs
3/4 cup/165 grams light brown sugar
2 teaspoons vanilla extract or paste
1/4 cup/50 grams granulated sugar, for rolling
1/2 cup/50 grams confectioners' sugar, sifted, for rolling

Steps:

  • Put espresso or coffee in a small metal bowl. Put butter in a small saucepan, and cook over medium-high heat, swirling and stirring occasionally with a rubber spatula, until nutty brown, 5 to 6 minutes. Add the butter to the bowl with the espresso and stir to combine. Set aside to cool, stirring occasionally, while you prepare the rest of the cookie.
  • Combine the flour, malted milk powder, baking powder, ginger, cinnamon, cardamom, cloves, salt and pepper in a medium bowl. Whisk to combine thoroughly and set aside.
  • Combine eggs and light brown sugar in the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed until well combined and slightly paler, about 3 minutes, scraping bowl as needed.
  • Add the vanilla and the butter mixture, then mix on low speed until combined. Add the flour mixture, then mix again on low until combined. Transfer dough to a resealable glass or plastic container, and chill thoroughly, at least 2 hours and up to 3 days.
  • Heat oven to 350 degrees. Put granulated sugar and confectioners' sugar into two separate bowls. Use a small cookie scoop to portion dough into heaping tablespoons (about 25 grams each). Roll into smooth balls and drop a few at a time into the bowl of granulated sugar, rolling to coat. Transfer to the bowl with the confectioners' sugar. Roll gently, coating well, then transfer to a parchment- or silicone mat-lined baking sheet, leaving at least 2 inches between cookies. Place in freezer until firm, about 10 minutes.
  • Bake until cookies are golden underneath but still quite tender (they will firm up as they cool), 12 to 14 minutes. Let cool a few minutes on the baking sheets and transfer to wire racks to cool completely. Cookies will keep in an airtight container at room temperature for 1 week.

1/2 cup heavy cream, whipped
ground cinnamon, to garnish

Steps:

  • For Cinnamon Spiced Coffee: In a saucepan, over low heat, simmer cinnamon, allspice, and 2 cloves in coffee for 5-7 minutes.
  • Or for Citrus Clove Spiced Coffee: In a saucepan, over low heat, simmer orange peel, lemon peel, and 10 cloves in coffee for 5-7 minutes.
  • Strain into cups and sweeten each to taste.
  • Top with whipped cream and sprinkle with cinnamon.

A twist on the usual cutout cookies. I love to make these in the fall and at Christmas time. Make sure you use fresh spices for the best flavor.

2 cups all-purpose flour
1 3/4 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 pinch salt
10 tablespoons unsalted butter, softened not melted
1 cup sugar
1 egg
2 tablespoons grated orange zest
2 tablespoons dark corn syrup
crystal sugar (crystal sugar has larger granules than granulated sugar it can be found at baking stores, If you can)

Steps:

  • Preheat oven to 350 degrees. Position rack in the middle of the oven.
  • Line 2 large cookie sheets with parchment paper.
  • In a large bowl, sift flour, baking soda, cinnamon, cloves, and salt.
  • In the bowl of an electric mixer, cream the butter and sugar on medium speed until light and fluffy.
  • Add the eggs and beat until incorporated. Beat in the orange zest and corn syrup.
  • Add the dry ingredients in two two batches, beating until the dough is well mixed.
  • With your hands shape the dough into a disk, wrap it in plastic, and chill for an hour.
  • On a lightly floured board, roll out the dough 1/4 inch thick, if you like a thicker cookie then roll out thicker and adjust your cooking time. With a floured cookie cutter of your choice, cut out cookies and place them 1 1/2 inches apart on the cookie sheets. If you wish, sprinkle with crystal sugar.
  • Reroll the scrapes only one time, or the dough will become tough. The more you handle the dough, the tougher it will get.
  • Bake the cookies for 12 minutes, turning the cookie sheets halfway through the baking time.
  • Cool the cookies on the sheet, set on racks. Store in airtight containers.
  • The size of your cookie cutter will determine how many cookies you end up with.
