1 quart vanilla ice cream
1 tablespoon ground cinnamon

Steps:

  • Let the ice cream thaw in the refrigerator for 1 hour or stand at room temperature for 10 to 15 minutes to soften. Transfer the ice cream to a large mixing bowl and gently stir in the ground cinnamon until mixed but slightly marbled. Return the ice cream to the original container and freeze.

1/2 cup plus 1 tablespoon sugar
2 tablespoons fresh lemon juice (from 1/2 a large lemon)
4 cinnamon sticks, halved
One 1/4-inch-thick piece candied ginger
6 gingersnaps cookies (about 1 1/2 ounces), broken coarsely
1/3 cup frozen apple juice concentrate, thawed
One 25.4-ounce bottle sparkling apple cider, chilled
1 small Granny Smith apple, halved, cored and cut into 6 wedges

Steps:

  • In a small saucepan, combine the 1/2 cup of the sugar, 1/2 cup water, lemon juice, cinnamon sticks and candied ginger. Stir over medium heat until the sugar dissolves and the syrup comes to a boil. Reduce the heat and simmer for 5 minutes. Cool to room temperature. Strain and transfer to a small bowl. (Can be made 2 days in advance). Pour 1/4 cup of the cinnamon syrup into a large pitcher. Place the remaining syrup into a shallow bowl.
  • Grind the gingersnaps and the remaining 1 tablespoon sugar in a mini processor to fine crumbs. (Alternatively, the cookies can be placed in a resealable plastic bag and crushed with a rolling pin or the bottom of a small saucepan.) Pour the crumbs into a second shallow bowl.
  • Dip the rim of each martini glass into the cinnamon syrup. Dip the moistened rims into the cookie crumbs several times to coat.
  • Stir the apple juice concentrate and sparkling apple cider into the pitcher. Pour into the prepared glasses and garnish with apple slices.

2 cinnamon sticks
1 (375 ml) bottle vodka
apple cider
cinnamon sugar
1 cup apple cider

Steps:

  • Make the Cinnamon-Flavored vodka: place 2 cinnamon sticks inside the bottle of vodka-you may need to pour out a small amount of the vodka to make room for the cinnamon sticks; seal tightly and let stand at room temperature for about 2 weeks, depending on the desired level of flavor.
  • Shake the bottle every few days; remove the cinnamon sticks and use.
  • Rim the glass: dip the edges of 4 martini glasses in apple cider and rim them with cinnamon sugar.
  • Make the drink: In a small saucepan, combine the 1 cup cider and 6 oz. vodka; heat over medium to medium-high heat until warm but not hot.
  • Pour into rimmed martini glasses and serve.

2-1/2 quarts apple cider or juice
1/2 cup Red Hots
1/4 teaspoon ground nutmeg
2 cinnamon sticks (3 inches)
1/2 teaspoon whole cloves

Steps:

  • In a large saucepan, combine cider, Red Hots and nutmeg. Place cinnamon sticks and cloves on a double thickness of cheesecloth. Gather up corners of cloth to enclose seasonings; tie securely with string. Add to Dutch oven., Bring to a boil, stirring occasionally to loosen candies. Reduce heat; simmer, covered, 10-15 minutes or until flavors are blended. Discard spice bag.

2 cups sugar
1 cup water
2 cups cranberries (fresh) or 2 cups thawed frozen cranberries
1 liter vodka (a fifth)
cranberries and lime wedge (to garnish)

Steps:

  • At least three days before serving, bring the sugar and water to a boil in a medium saucepan and cook, swirling the pan occasionally, until the sugar is completely melted and the mixture is slightly thickened. Remove from the heat, stir in the cranberries, and let sit at room temperature for 2 hours. Pour the vodka into a large bowl and add the cooled cranberries. Let sit for at least 2 days, stirring occasionally. Strain the vodka into a bottle and chill overnight.
  • To serve, fill chilled martini glasses with the vodka. Add a few cranberries to each glass and garnish with a lime wedge.
