CINNAMON APPLESAUCE HOLIDAY ORNAMENTS
A wonderful holiday project to do with the young ones. Makes inedible, incredibly fragrant cinnamon "cookie" ornaments. These ornaments also work well as package decorations.

Steps:
- Line a strainer with cheesecloth or paper towels and place over a large bowl.
- Pour applesauce into strainer and let it drain for about 8 hours.
- There will be at least a cup of liquid to drain off (if you're in a hurry, you may eliminate this step, but you will need about 3 or 4 ounces extra cinnamon to get a firm dough) Starting with half of the cinnamon, add to the applesauce and stir until blended.
- Gradually add more cinnamon until dough is stiff enough to roll out.
- You may not need the entire amount of cinnamon called for.
- Place portion of the dough onto a sheet of plastic wrap or wax paper and place another sheet on top of this.
- Use a rolling pin, and roll to 1/4-inch; thickness.
- Peel off the top sheet of plastic wrap.
- Cut into shapes using seasonal cookie cutters.
- Carefully slide a spatula under the cut cookie shapes and carefully place each of these on a baking pan coated with Pam.
- Next, use a toothpick and poke a hole near the top of each shape (for threading with hanging-ribbon later).
- Make sure the hole is big enough to accommodate the ribbon as it will shrink quite a bit during the baking.
- Run the toothpick around the edges of each ornament, smoothing any uneven edges, if necessary.
- Place in 175°F oven for 6 to 8 hours, until firm and dry (your house will smell wonderful during this time!) Remove "cookies" carefully and cool completely.
- You may decorate with glue, glitter, paint, etc. (I prefer these without decoration) Lace with ribbon, tie off at top & hang on tree.

Steps:
- Mix in a bowl the cinnamon and cloves.
- Add to this applesauce, oil and the glue.
- Knead this mixture for a few minutes til you have a firm but pliable dough.
- Too wet, add more cinnamon--too dry, add more applesauce.
- Roll the dough out on a surface dusted with cinnamon, 1/4 inch thick.
- Cut out shapes with cookie cutters [x-mas tree, hearts, stars, etc].
- Make a hole in the top with a wooden or metal skewer, this must be large enough for ribbon if you want them for hanging.
- Air dry them for several days on paper kitchen towel, turning them over several times so they don't warp.
- Impatient?.
- A low oven [200°F] for a few hours will also do the trick, don't forget to turn them over.
- When dry, decorate with a ribbon.
- You can also use shallow plaster, cookie and candy molds, press the dough in the cavity, smooth with a rolling pin, ease out of the mold and cut away the excess dough.
- Or roll out the dough, place a piece of decorative lace on the top, using the rolling pin go over it until it has left an impression of the lace, then cut out using the cookie cutters.
- You also get a nice result using cookie stamps.

- In a large bowl or stand mixer, mix together cinnamon and applesauce until a smooth ball forms. Dough should not be sticky. It should be moist and easy to handle. If necessary, adjust cinnamon or applesauce until easy to handle.
- Divide dough into two equal parts, shape into discs. Optionally, chill for an hour or longer. Chilled dough will become slightly firmer and easier to handle.
- Sprinkle work surface well with cinnamon. Place one disc of dough down on cinnamon coated surface, sprinkle top with cinnamon and roll to 1/4-inch thickness. Cut using desired cookie cutters. Use a regular sized straw to carefully remove a hole, this will be where the string goes later. Transfer to prepared baking sheet and repeat with remaining dough.
