1 teaspoon granulated sugar
1/4 teaspoon cornstarch
1/8 teaspoon cinnamon
Dash salt
1/2 cup diced Fuji apple
1/8 teaspoon lemon juice
1 tablespoon reduced-fat/light cream cheese, room temperature
1/2 cup fat-free whipped topping, thawed from frozen
Two 9-inch ready-to-use dessert crepes (can be found in the produce aisle)
1 teaspoon fat-free or light caramel dip, room temperature
Powdered sugar, for optional garnish

Steps:

  • In a small nonstick pot on the stove, combine sugar, cornstarch, cinnamon, and salt with 2 tablespoons of cold water. Stir to dissolve. Add apples and lemon juice and stir. Bring to medium heat and cover. Cook until the apples have softened and liquid has thickened, about 5 minutes, uncovering often to stir.
  • Remove the pot from heat and transfer the mixture to a bowl. Allow it to cool for several minutes. Thoroughly stir in cream cheese. Fold in whipped topping.
  • Lay crepes flat on a dry surface. Evenly distribute the apple mixture between the crepes. Fold each crepe up envelope-style, first folding the sides in, and then folding/rolling it up from the bottom.
  • Bring a skillet sprayed with nonstick spray to medium heat. Place the crepes in the skillet with the seam-sides down. Cook them until slightly browned, about 1 minute per side. (Flip carefully.)
  • Plate your crepes and drizzle them with caramel dip. If you like, sprinkle with powdered sugar. Try not to pass out as you dig in!

8 apples (depending on size)
1/4 cup flour
1/4 cup brown sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon lemon juice

For the Streusel:
1/2 cup butter
1/4 teaspoon salt
1 cup flour
3/4 cup brown sugar
1 teaspoon vanilla extract
Serving suggestion: Fresh whipped cream or ice cream

Steps:

  • Gather the ingredients. Preheat the oven to 350 F.
  • Peel, core, and slice the apples. Slice on the thinner side and make them the same thickness so they will cook evenly.
  • Grease a large casserole dish with butter. Add the apples to the dish and toss with the flour, brown sugar, salt, vanilla extract, lemon juice, and ground cinnamon. Toss until the apples are completely coated.
  • Gather the ingredients.
  • Melt the butter in a medium-sized bowl in the microwave.
  • Mix in the salt, flour, sugar, and vanilla extract with a fork until the ingredients form a crumbly, damp dough.
  • Crumble the streusel over the top of the apple slices.
  • Bake in the preheated oven, uncovered for 35 minutes or until the top is browned and the apples are softened. Allow to cool for a few minutes and then serve with fresh whipped cream or ice cream.

Apples are one of my favorite fruits and this dessert is a yummy combination sweet crepes filled with a delicious apple cinnamon filling and then topped with sweetened whipped cream. It's great for breakfast or dessert.

Crepes Recipe ((use my recipe for Dessert Crepes))
2 pounds (900 grams) Granny Smith apples (or your favorite baking apple)
2 teaspoons fresh lemon juice
3 tablespoons (42 grams) unsalted butter
1/4 cup (50 grams) light brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon fresh ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon kosher salt

Steps:

  • Prepare the crepe batter and cook the crepes according to this Crepe Recipe.
  • If making the crepes the day before, stack them, place them in a freezer bag and store them in the refrigerator. If making them and serving them the same day, stack them on a place and keep at room temperature.
  • Place the ground cinnamon, ground nutmeg, ground allspice and salt in a small bowl and stir to combine.
  • Peel and chop the apples into 1-inch cubes. Place them in a bowl and sprinkle with the lemon juice and toss the apples to coat them.
  • Melt the butter in a 12-inch skillet over medium heat, when it starts to bubble add the brown sugar and stir until the brown sugar-butter mixture until the sugar is thoroughly mixed in with the butter and just starts to bubble.
  • Add the apples in a single layer, turn the heat up to medium-high heat and cook the apples until half the liquid is evaporated. When the apples are cooking at the beginning, they will release a lot of liquid, so the amount of liquid in the pan will increase by a lot. Add the spice mixture and stir to mix in the spices and continue to cook the apples until most of the liquid has evaporated and a thick syrup remains
  • Occasionally stir the apples to make sure they don't burn, but for the most part let them cook undisturbed so they caramelize but are still a little firm by the time the liquid is evaporated and they have start caramelize.
  • Remove the apples from the heat and spoon them into a wide bowl. Scrape the pan to get all the syrup.

I love making crêpes. They are easy, and lend themselves to all kinds of fillings. Use fruit and cheese for breakfast, fish or chicken for lunch, and make them larger and fill with creamed meat and vegetables for a great supper meal. For dessert, fruit and syrups are great. Crêpe pans are available, but I use a slick 10" nonstick skillet and get excellent results. Crêpes can be made in advance, covered in plastic wrap, and kept overnight in the refrigerator before filling. Warm them in the microwave or a steamer prior to filling.

STREUSEL FILLING
1 small apple, cored and diced
3 tablespoon(s) uncooked quick oats
2 tablespoon(s) brown sugar
2 tablespoon(s) soft butter
1/2 teaspoon(s) cinnamon

1/2 cup(s) applesauce
CRêPE BATTER
1 cup(s) all purpose flour
1 tablespoon(s) sugar
1/2 teaspoon(s) cinnamon
1 pinch(es) salt
1 - egg
1 - scant cup milk
1 teaspoon(s) vanilla
- oil to brush pan

Steps:

  • Prepare crêpe batter: Stir together dry ingredients and make a well in center. Put beaten egg, milk, and vanilla in the well; mix rapidly with a fork until almost all the lumps are gone. Let batter rest 5 minutes.
  • Make streusel filling: Place apples, butter, oatmeal, brown sugar, cinnamon, and vanilla in a medium microwave-safe bowl. Stir to blend well.
  • Microwave on high power for 30 minutes at a time, stirring after each session, until apples and oats are soft, about 2 minutes total. Stir in applesauce and blend well. Set aside.
  • Make crêpes: Heat a crêpe pan or 9-10" nonstick skillet over medium heat. When hot, brush with coconut oil or other cooking oil. Pour about 1/4 cup crêpe batter in center of pan. Tilt and swirl pan to allow batter to spread out into a flat, thin, round pancake about 7" in diameter.
  • Cook about two minutes, until top of crêpe begins to dry out. Then flip over and cook until done on the other side, about 2 more minutes. Crêpes should turn a light golden brown but not get too dark. Keeping the pan at medium-low to medium heat is key here.
  • Serving crêpes: Cook all crêpes in the same manner, lightly brushing pan with oil for each crêpe. As they are done, stack them on a plate nearby. Then remove one crêpe to a serving dish. Place about 2 tablespoons apple filling on 1/4 of the crêpe.
  • Fold the crêpe over into fourths. Prepare next crêpe in the same manner.
  • Serve 2 to 3 crêpes on a plate, drizzled with maple syrup or dusted with powdered sugar.

1 cup rolled oats

2 cans of refrigerated cinnamon rolls with icing
2 eggs
1/2 cup heavy cream
2 tablespoons flour
3 tablespoons plus 1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

1 can apple pie filling
1/2 cup brown sugar
1/2 cup flour
1 cup chopped pecans
1 stick butter

Steps:

  • Preheat oven to 350ºF. Take out cinnamon rolls from container, slice each one into 6-8 small pieces, set aside. Crack 2 eggs and whisk them together in a bowl, add 1/2 cup of heavy cream. To your mixture, add 2 tablespoons flour, 3 tablespoons cinnamon, 1/4 teaspoon nutmeg, and 1 teaspoon vanilla extract, stir to combine. In a large casserole dish, put all of your chopped cinnamon rolls, then drizzle the wet mixture, covering the rolls completely. Spoon out dollops of apple pie filling on top of your mixture, spacing them out evenly. In a separate bowl combine 1/2 cup brown sugar, 1/2 cup flour, 1 cup chopped pecans, 1/2 teaspoon cinnamon and a stick of softened butter, stir to combine. Sprinkle nut mixture over top of your apple, cinnamon roll and egg mixture, dispersing it as evenly as possible. Bake at 350ºF for 45 minutes. 1/2 cup sugar
1 teaspoon cinnamon
1/4 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350°.
  • Grease the bottom only of a small (4 cups or so) casserole dish. Peel and core the apples, slice and place in a bowl. Top with sugar, cinnamon and vanilla, toss to coat. Set aside while preparing topping.
  • Make the streusel by cutting the cold butter into a bowl, adding flour, sugar, cinnamon, and nutmeg, if using. Rub it through your fingers until the streusel is a coarse, sandy/pebbly texture.
  • Put the seasoned apples into the pan, top generously with the streusel, and bake at 350° about 30 minutes, or until the streusel is golden brown and the apple is starting to bubble up through the topping.
