WHOLE WHEAT CINNAMON CRUNCH BANANA BREAD
This is an easy banana bread with a delicious crumb topping and full of warm cinnamon flavors.

- Prep: Heat the oven to 360°F. Grease and line a 9x5 inch loaf pan.
- Make topping: For the crumb topping, place the flour, brown sugar and cinnamon in a medium bowl. Rub in the butter with your fingertips until crumbs form. Refrigerate until ready to use.
- Combine dry ingredients: Add all dry ingredients to a large mixing bowl. Stir together until well combined.
- Combine wet ingredients: Stir together all wet ingredients in a separate large measuring jug until well combined.
- Assemble bread: Pour wet into dry ingredients and fold together just until flour is moistened (a few lumps are fine). Place the batter in the prepared loaf tin and evenly sprinkle with the crumb topping.
- Bake the banana bread: Bake for around 50-60 minutes, or until a toothpick inserted comes out clean. Cool in the pan for 10 minutes, then remove to a wire cooling tray to cool completely (remember to peel off the parchment paper, too!)

CINNAMON AND WHOLE WHEAT BANANA BREAD
This is a delicious banana bread that is not too sweet. Carry a copy of the recipe if you take the bread with you anywhere, because people always ask for it. Using whole wheat pastry flour gives this a ligher texture than regular whole wheat flour. This mix also make great muffins. Bake around 20 mins.

- Preheat oven to 325 degrees, grease 9x5x3 loaf pan.
- Beat oil an sugar together.
- Add eggs, mix, add bananas, mix.
- Stir together dry ingredients, add alternately with hot water.
- Mix just until smooth, then stir in nuts.
- Bake 55 - 60 mins, cool for 20 mins before slicing (if you can wait).
- Tastes delicious toasted,freezes well.

I didn't have all the ingredients I needed to make a different banana bread recipe so I improvised and this is what I came up with. Its very moist. The best banana bread I have made.

- Preheat oven to 325 degrees.
- Beat oil and brown sugar together.
- Add eggs, mix well.
- Stir in bananas and vanilla.
- Stir in flour, salt, and cinnamon.
- Add baking soda to hot water, stir to mix, then add to batter.
- Lastly, add nuts and/ or fruit (if you use both reduce each measurement to 1/4 cup).
- Spread into greased bread pan. Bake for 55-60 minutes.
- Cool on rack before slicing.

- Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Lowering the oven rack prevents the top of your bread from browning too much too soon. Spray a 9×5 inch loaf pan with non-stick spray. Set aside.
- You can use an electric mixer or mix everything by hand. I like to use an electric mixer because I use it to mash the bananas. Using a handheld or stand mixer fitted with a paddle or whisk attachment on medium-high speed, beat the mashed bananas, applesauce, and eggs together until combined. (Or whisk by hand.) Add the honey, brown sugar, milk, and vanilla extract. Beat on medium-high speed (or whisk) until combined. Set aside.
- Whisk the flour, baking soda, cinnamon, and salt together. Pour into the wet ingredients and beat on medium speed (or by hand) until combined. Fold in the walnuts.
- Pour the batter into the prepared loaf pan. Bake for 60-65 minutes, making sure to loosely cover the bread with aluminum foil halfway through to prevent the top from getting too brown. The bread is done when a toothpick inserted in the center comes out clean with only a few small moist crumbs. This may be before or after 60-65 minutes depending on your oven, so begin checking every 5 minutes at the 55 minute mark or so.
