Pear Muffins with Cinnamon and Oatmeal Topping are out of this world! I love making these muffins with fresh, overripe pears but canned pears are also a great option! The spiced muffins are perfect for breakfast, snacks, or dessert!

4 cups pear puree (See note below)
1 teaspoon lemon juice
3/4 cups oil
1 cups sugar
1/2 cups brown sugar
4 eggs
1 teaspoon vanilla
3 3/4 cups flour
2 teaspoon baking powder
1 teaspoon baking soda
1 1/2 teaspoon salt
1 Tablespoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1 cup walnuts (optional)
1/2 cup quick oats
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/4 cup butter (cold)

Steps:

  • Preheat oven to 350 degrees.
  • Puree pears. Add lemon juice to pears. Set aside.
  • Mix oil, white sugar, brown sugar, eggs, and vanilla.
  • Stir in pureed pears.
  • In a separate bowl, mix together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.
  • Add dry ingredients to wet ingredients. Mix only until combined. Stir in walnuts if desired.
  • Scoop into muffin tins.
  • In a food processor mix topping ingredients together. If you don't have a food processor cut butter in using two knives or with a pastry cutter.
  • Sprinkle topping mixture over muffins.
  • Bake for 18-20 minutes. Muffins are done when they spring back when they're lightly touched. Cool in muffin tins for 5 minutes, then move to a wire cooling rack.

4 to 5 ripe Bartlett or Anjou pears
1/4 cup cranberries, fresh or dried
2 tablespoons sugar
1/3 cup all-purpose flour
1/3 cup rolled oats, uncooked
1/4 cup dark brown sugar
1 tablespoon granulated sugar
1/4 teaspoon cinnamon
Pinch nutmeg and salt
1/2 cup or 1 stick unsalted butter, melted
Heavy whipping cream or ice cream, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Peel, core, and thickly slice the pears. Toss them with the 2 tablespoons sugar and the cranberries and turn them into a deep, buttered 2-quart baking dish. The fruit should be at least 2 1/2-inches deep in the pan; add more fruit, if necessary.
  • For the topping, in a bowl, stir together the flour, oats, sugars, cinnamon, nutmeg, and salt. Drizzle in the melted butter tossing the ingredients with a fork to blend. Be careful not to over mix because you want a loose crumbly mixture, not a bound-together ball of topping. Sprinkle the topping over the pears.
  • Bake for 30 minutes, until pears are tender and topping is browned. Serve warm with heavy cream or ice cream.

1 1/4 cups all-purpose flour
1/2 cup whole wheat flour or 1/2 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
2 tablespoons pecans, chopped finely
1 1/2 cups quick-cooking rolled oats, not instant or 1 1/2 cups oats
1 large bosc pears or 1 large Anjou pear, firm but ripe
1 cup fat-free buttermilk
1/2 cup packed brown sugar
1/3 cup maple syrup
2 tablespoons canola oil
1 egg
cooking spray

Steps:

  • Preheat oven to 400 degrees. Prepare muffin cups with a light coating of cooking spray.
  • Combine dry ingredients (flours, baking soda, baking powder, salt and cinnamon) together in a bowl.
  • Core and dice the pears into small chunks. Combine the pears, buttermilk, maple syrup, oil, sugar, egg and all but 2 tablespoons of the oatmeal together in a second bowl. Let sit for 5 minutes.
  • Combine the pecans and reserved oatmeal together to use as a topping for the muffins. Set aside.
  • Combine the wet and dry ingredients together until just mixed. Spoon batter into muffin cups, filling 2/3s full. Sprinkle with the pecan/oatmeal mix. Bake 18 to 20 minutes until a toothpick inserted in the middle comes out clean. Cool 5 minutes and remove from pan.
  • Serve warm or let the muffins finish cooling on a rack.

1 cup pear juice
1 bartlett pear, peeled, seeded and grated
1 teaspoon ground cinnamon
1 pinch salt
3 tablespoons raisins (or golden raisins)
1/2 cup low-fat vanilla yogurt

Steps:

  • Note: I also tested this recipe using canned pears in their own juice and think canned pears would be a suitable substitute for fresh.
  • In a cast iron skillet on medium-high (depends on your range)heat dry roast the oatmeal and cinnamon for approximately 4-5 mintes. DO NOT burn. Remove pan from heat.
  • In a saucepan combine the pear nectar with 3/4 cup water. Cook slowly over medium heat just until bubbles appear around the edges. DO NOT boil.
  • Add the toasted oats, the grated pear, and salt. Cook mixture stirring constantly, until the oats are tender; about 10-12 minutes.
  • Stir in the raisins just before serving.
  • Top each serving with a dollop of yogurt.

½ cup coconut oil
½ cup coconut sugar or brown sugar
1 large egg
1 tsp vanilla extract
½ tsp. baking soda
¼ tsp. salt
1 tsp. cinnamon, ground
¾ cup whole wheat
1½ cup old fashion oats (I used Trader Joe's rolled oats)
1 cup pear, peeled, cored, diced small (1 large pear)

Steps:

  • Preheat oven to 350 degrees.
  • Line 2 baking sheets with parchment paper; set aside.
  • In a large bowl; add coconut oil, coconut sugar, egg and vanilla extract. Mix with a spoon, until well combined.
  • Add to the same bowl, baking soda salt, cinnamon and whole wheat flour; mix until well combined. Stir in pear and oatmeal.
  • With a large cookie scoop (I used 3 tbsp. capacity scoop), scoop out the dough and pat it into the scoop to form a firm cookie. Place onto prepared baking sheet, spaced about 2" apart. I put 9 cookies per baking sheet. Note: I used my fingers to pat the top of the cookie to flatten a bit and to make sure it is held together.
  • Bake in oven for 10 minutes, until bottom of cookie turns lightly brown. Let cool on cookie sheet for 5 minutes; place on cookie rack until completely cooled.
