- Combine all ingredients except whipped cream, in a saucepan and warm over low heat.
- Remove from heat once sugar is dissolved and let cool to room temperature.
- Remove cloves and cinnamon stick.

SPIKED ICED CHICORY COFFEE

- Put 2 cups cooled coffee, 1/4 cup half-and-half, simple syrup, to taste, a few shots of coffee-flavored liqueur and a few cubes of the chicory coffee ice cubes in a blender and blend until smooth and icy. Pour into tall glasses. Repeat.

- Cook's Note: Can use skim milk, 2-percent milk, whole milk, sugar, artificial sweeteners, syrups...adapt to your liking!
- In a large container, mix the ground coffee with 8 quarts water. Cover and allow to sit at room temperature for eight hours or overnight.
- Line a fine mesh strainer with cheesecloth and set over a pitcher or other container. Pour the coffee/water mixture through the strainer, allowing all the liquid to run through. Discard the grounds. Place the coffee liquid in the fridge and allow to cool. Use as needed.
- To make iced coffee, pack a glass full of ice cubes. Fill the glass two-thirds full with the coffee liquid. Add a healthy splash of half-and-half. Add 2 to 3 tablespoons sweetened condensed milk (can use plain sugar instead) and stir to combine. Taste and adjust the half-and-half and/or sweetened condensed milk as needed.
SPICY ICED THAI COFFEE

- Make a cup of strong hot coffee.
- Add the coriander, cardamom and cinnamon to the condensed milk and mix well.
- Next add the spicy condensed milk to the hot coffee, making sure to blend really well.
- Now taste the coffee, if you would like it sweeter add more of the condensed milk.
- Pour the spiced coffee into a jar, cover and put into the fridge to chill.
- When ready, place three or four coffee ice cubes into a tall glass and pour the spiced chilled coffee over top.
- Using a spoon carefully rest it on top of the coffee and slowly pour the heavy cream into the spoon. This will help the cream float on top of the coffee, instead of sinking immediately into it.
- Garnish with remaining cinnamon and enjoy.

CINNAMON SPICED COFFEE

- Place coffee and cinnamon in filter in brewing basket.
- Carefully stir the coffee grounds and cinnamon.
- Insert brewing basket to coffee maker.
- To the coffee pot, add the brown sugar and vanilla extract.
- To the coffee maker, add the cold water, then place in coffee maker.
- Turn on your coffee maker.
- When coffee is done brewing, stir coffee in coffee pot; to dissolve the brown sugar.
- Serve coffee in cup or mug with a dollop of Cool Whip, and a sprinkle of cinnamon (if desired).
- This makes: 6 and 3/4 cups of coffee.
- Note: The first few times I made this coffee, I used Gevalia Hazelnut, and the second time I used Folgers French Vanilla (for variety). I did make this in an 8 cup coffee maker, which does end up making 9-(3/4 cups of coffee each).
- Also, the first time I made this coffee, I only used 1/4 cup of the ground coffee, as I didn't want very strong coffee, and this still tasted great. I also only added 2 teaspoons of the vanilla extract. I found adding the extract helps to make this coffee taste a bit smoother, and even better.
- By the way, some people may think the teaspoon of the cinnamon is a bit much, but not if you add milk to your coffee. I did make this once only adding 3/4 tsp of the cinnamon, but I've found I much prefer this recipe using one measuring teaspoonful.

- Line pitcher with coffee filter and add 8 tablespoons of coffee grounds. Add the spices and gently stir. Add the remaining 8 tablespoons of coffee grounds.

- Combine all the ingredients in a small saucepan and cook over medium heat until sugar dissolves. Remove from heat and let steep for 1/2 hour. Strain and store in refrigerator if not using immediately.
- For coffee: I use a Chemex drip coffee maker but a regular coffee maker works as well. Place the ice in the carafe. Add the coffee to the filter and pour the hot water over.
- While the coffee is brewing, whip the cream to the soft peak stage - the cream will be thick and will hold it's shape but isn't fluffy.
