CIDER VINAIGRETTE ROASTED ROOT VEGETABLES



Cider Vinaigrette Roasted Root Vegetables image

Roasted root vegetables are one of the easiest side dishes you can make. Toss garnet sweet potatoes, parsnips, carrots, and beets in an apple cider vinaigrette and roast until tender and caramelized. Great for holidays or cozy weeknights!

1/2 cup apple cider vinegar
1/2 cup extra virgin olive oil
3 tablespoons dark brown sugar
1/4 teaspoon kosher salt
Freshly grated black pepper, to taste
4 medium golden beets, peeled and thickly sliced
4 medium carrots, peeled, sliced lengthwise into 1 to 2 inch long pieces
3 medium garnet sweet potatoes, sliced lengthwise into 1 to 2 inch long pieces
4 medium parsnips, peeled, sliced lengthwise into 1 to 2 inch long pieces, any tough woody core removed
1 large red onion, thickly sliced
3/4 teaspoon thyme, dry or fresh

Steps:

  • Preheat the oven: Preheat the oven to 450°F.
  • Toss the vegetables with vinegar, oil, and seasonings: In a large bowl (with enough room for all the vegetables), mix together the cider vinegar, olive oil, brown sugar, salt and pepper. Add the vegetables-the beets, carrots, sweet potatoes, parsnips, and onion-to the bowl and toss to combine.
  • Roast the vegetables: Place vegetables in the oven and roast at 450°F for 35 to 40 minutes, turning the pans (and swapping bottom and top rack positions), halfway through roasting. Cook until the vegetables are well browned and caramelized around the edges.

From Bon Appetit November 1997. This would be the perfect side dish for the Thanksgiving meal! To be honest, I substitute another root vegetable for the turnips; i.e, kohlrabi, potatoes, celeriac, etc.

3 cups apple cider (or apple juice)
1 cup semisweet white wine (Riesling or Gewurztraminer)
3 tablespoons butter
1 1/4 lbs turnips
1 1/4 lbs parsnips
1 1/4 lbs carrots
1 1/4 lbs yams
1 1/4 lbs rutabagas (swede)
salt and pepper

Steps:

  • Combine the apple cider and wine in a heavy saucepan and reduce to 3/4 cup. This will take about 30 minutes.
  • Whisk in the butter until smooth.
  • Preheat oven to 425°F.
  • Peel all the vegetables and cut in to 1/2 inch pieces.
  • Use the largest roast pan you own (or use two roasting pans and divide the vegetables). Pour the prepared apple cider/wine mixture over the vegetables. Stir to coat.
  • Sprinkle with salt and pepper.
  • Roast the vegetables until they are tender and golden, stirring occasionally and cook approximately 40 minutes.

1 ½ pounds slender carrots
1 ½ pounds slender parsnips
⅔ cup apple cider
2 tablespoons apple cider vinegar
2 tablespoons pure maple syrup
2 tablespoons olive oil
2 teaspoons chopped fresh thyme, plus more for garnish
1 teaspoon cracked black pepper
¼ teaspoon salt
⅛ teaspoon cayenne pepper

Steps:

  • Arrange racks in top and bottom thirds of oven. Preheat to 400 degrees F. Line 2 large rimmed baking pans with foil.
  • Peel and trim carrots and parsnips, leaving about an inch of the carrot tops, if desired; slice each in half lengthwise--or quarter lengthwise if larger than 1 1/2 inches in diameter.
  • Whisk together apple cider, cider vinegar, maple syrup, olive oil, black pepper, salt, and cayenne pepper in a very large bowl. Add carrots and parsnips and toss to coat. (This can be made to this point up to 1 day ahead. Cover bowl and refrigerate.)
  • Divide vegetables and liquid evenly among prepared pans, spreading in a single layer. Roast, stirring twice and rotating pans between top and bottom racks once, until vegetables are tender and browned and liquid has evaporated, about 35 minutes. Garnish with additional fresh thyme.

  • Preheat oven to 425 degrees F. Line a 15 x 20 jelly roll pan with foil and spray with nonstick cooking spray.
  • Add all of the vegetables to a large bowl followed by olive oil and all seasonings. Stir until evenly coated (I find it easiest to use my hands).
  • Evenly divide the vegetables into two bowls (you can keep the bowl you just used). Add 3 tablespoons balsamic vinegar and 1 tablespoon maple syrup to the vegetables in one bowl. Stir to evenly coat. To the second bowl, stir in 1/2 cup freshly grated Parmesan. Stir to evenly combine.
  • Spread vegetables onto prepared baking sheet in a single layer. Roast for 40-50 minutes, or until fork tender, removing the tray half way through cooking and stirring vegetables (keeping the two kinds of roasted vegetables separate).
