3/4 cup apple cider
1/3 cup bourbon
2 tablespoons fresh lemon juice
2 (2 1/2-inch-long) thin slices fresh ginger
2 thin slices from a small apple, such as lady, for garnish

Steps:

  • Fill a cocktail shaker with ice. Add cider, bourbon, lemon juice, and ginger; shake until well chilled. Strain and divide cocktail between two coupes or lowball glasses. Garnish with apple slices.

2 tablespoons finely chopped fresh ginger
10 fresh mint leaves, plus more for garnish
1 ounce honey
1 1/2 ounces fresh lemon juice
3 ounces bourbon
4 ounces sparkling apple cider, such as Martinelli's
2 Gala apple wedges

Steps:

  • Combine the ginger, mint and honey in a cocktail shaker. Muddle the mixture until the ginger and mint leaves break down and become fragrant. Add the lemon juice and bourbon along with some ice and shake to combine.
  • Add ice to 2 rocks glasses. Divide the bourbon mixture between the glasses, then top off each glass with sparkling apple cider. Garnish with the apple wedges.

3 bags cinnamon-flavored black tea
1 (1 inch) piece fresh ginger, sliced
3 cardamom pods, split
6 ounces bourbon
¼ cup lemon juice

Steps:

  • Bring cider and maple syrup just to a boil in a saucepan. Remove from heat. Add tea bags, ginger, and cardamom. Let stand, covered, for 5 minutes. Remove and discard tea bags and spices. Stir in bourbon and lemon juice.
  • Transfer to a warmed 32- to 40-ounce thermos.
