EASY CHUNKY TOMATO SAUCE

This sauce can be used on pasta or pizza and spooned over vegetables, rice, or fish. It's perfect in our Vegetable Lasagna.

3 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, chopped (about 1 tablespoon)
Salt and freshly ground pepper
2 cans (28 ounces each) diced tomatoes
1/2 teaspoon dried thyme or Italian seasoning

Steps:

  • Heat oil in a large saucepan over medium heat. Add the onion, the garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper, and cook until softened, about 5 minutes.
  • Add the tomatoes with their juice and the thyme; simmer, stirring occasionally, until the sauce has thickened, 20 to 25 minutes.

5 cups all-purpose flour, plus more for dusting
1/2 cup cornmeal
2 envelopes (1/4 ounce each) rapid-rise yeast
4 teaspoons coarse salt
1/4 cup olive oil, plus more for brushing

Steps:

  • Make the dough: In a food processor, pulse together flour, cornmeal, yeast, and salt. With processor running, add oil and then 2 cups cold water in a steady stream; process until dough just forms a ball.
  • Turn out dough onto a floured work surface. Knead until smooth and elastic, 3 to 4 times. Place in a resealable bag; let rise until doubled in bulk, 2 hours at room temperature or overnight in the refrigerator (let come to room temperature before proceeding, about 40 minutes).
  • Divide dough into four equal portions; roll into balls, and cover with a clean towel or plastic wrap until puffed, about 20 minutes.
  • Preheat oven to 500 degrees. Place each dough ball on a baking sheet; using your hands, gently flatten, and pull into 8-by-10-inch ovals. Top as desired.
  • Bake until crust is gold brown and toppings are hot, rotating sheets halfway through, 10 to 12 minutes.

I like a thick, chunky pizza sauce with more flavors than just tomato. I couldn't find a recipe like this, so I combined bits from two or three others and made my own.

2 tablespoons olive oil
1 medium onion, finely chopped
1 small red bell peppers or 1 small green bell pepper, finely chopped
5 cloves garlic, pressed
1 (28 ounce) can crushed tomatoes
1/3 cup dry red wine
1 tablespoon dried Italian herb seasoning (I like McCormick's Italian Seasoning blend, but you can use any combination of dried herbs like marj)
1 1/2 teaspoons crushed red pepper flakes
1/4 teaspoon fennel seed, crushed
2 bay leaves
1/2 teaspoon salt
black pepper
2 teaspoons brown sugar

Steps:

  • Heat oil in a dutch oven.
  • Saute onions, peppers and garlic, stirring often, until soft.
  • Add remaining ingredients and bring to a boil.
  • Reduce heat and simmer gently, uncovered, for 20 minutes, stirring often.
  • Makes about 4 cups (enough for two 15" pizzas).
  • I usually make one pizza and freeze the other half for next time.

KEZZA'S CHUNKY PIZZA SAUCE

My boyfriend and I had the most fantastic pizza in Italy during our travels, even the takeaway stuff is fantastic. Through trial and error (and expanding waistlines) we think that I've found a good approximation of a home-made pizza sauce we had in Cassino when we went down there for the 60th commemorations last year.

1 1/2 tablespoons olive oil
3 garlic cloves, finely chopped
1 large onion, finely chopped
1 tablespoon dried oregano
3 tablespoons fresh basil, chopped
1/2 teaspoon dried thyme
2 (400 g) cans plum tomatoes, roughly chopped (or, 10 x large plum tomatoes, x's cut into the skin, then plunged into boiling water for 2 minutes,)
4 tablespoons tomato paste
freshly ground salt & pepper

Steps:

  • Heat the olive oil in a medium saucepan, on medium heat.
  • Saute the onions and garlic until translucent, but do not allow to burn or brown.
  • Add the herbs and saute for 1 minute.
  • Add the tomatoes and tomato paste (and salt & pepper to taste) and simmer for 60 minutes on low heat (I use 2/6) until reduced to a thick sauce. I taste this every 10 minutes and sometimes add pepper if required.
  • Cool, and use on your favourite pizza bases. Can be used on 4 x medium bases (if you like a lot of sauce), or 6 bases if you like a thinner covering. You can also puree this with a Bamix if chunky sauce isn't your thing (plus, it goes further if you puree it).

Pinch of sugar (optional)
Coarse salt and ground pepper

Steps:

  • In medium saucepan, heat oil over medium. Cook onion and garlic until translucent, stirring, 3 minutes.
  • Add whole, peeled tomatoes (lightly crushed with hands), crushed tomatoes, oregano, and a pinch of sugar (optional).
  • Simmer, stirring until thickened, 10 to 20 minutes. Season with salt and pepper. Freeze any leftover sauce for up to 3 months.

  • Cook 1 ounce diced salami and 4 minced garlic cloves in a skillet with 2 tablespoons olive oil over medium heat, 1 minute. Drain a 28-ounce can plum tomatoes (reserve the juice); crush into the skillet and cook 5 minutes. Add the tomato juice, 6 basil leaves and a pinch each of sugar, salt and pepper; cook 5 minutes. Stir in 3/4 cup water and simmer until thick. Toss with 12 ounces cooked fusilli. Top with grated parmesan and basil.

1 can (28-ounces) whole peeled tomatoes, in juice
1 small white or sweet onion, finely diced and minced
1 clove garlic, peeled and minced
3 to 4 fresh basil leaves
1 teaspoon dried oregano
Pinch salt
Pinch fresh ground black pepper
Pinch sugar, optional
2 tablespoons olive oil, to saute

Steps:

  • Empty the contents of the tomato can in a mixing bowl and coarsely crush the tomatoes with a fork or your hands, leaving them just a little chunky. In a heavy bottom 2-quart saucepot, add the olive oil, over a medium high flame and heat a little. Add the onions and saute until slightly translucent. Add the garlic and saute about a minute until golden. Quickly add the crushed tomatoes to the mix. Stir well and bring to a simmer. Season with salt and pepper, to taste, and add the fresh basil and oregano. You can add a touch of sugar if desired or if tomatoes are tart. Simmer on a low flame, stirring often for at least 15 minutes. If not using right away, cool down and store in airtight container in the refrigerator, up to 1 week.
