2 cups all-purpose unbleached white flour
1/3 cup sugar
1/2 tsp baking powder
1/2 tsp baking soda
dash salt (optional)
3 medium very ripe bananas
juice of 1/2 lemon
1/2 cup coconut oil
1 cup vegan chocolate chips/chunks

Steps:

  • 1. Preheat oven to 375 degrees F. 2. In a big bowl, combine all dry ingredients and sift well with a fork or a whisk. In a medium bowl, mash the bananas, leaving some small chunky bits. Add the oil and lemon juice to the bananas, and combine well. 3. Add the wet ingredients and the chocolate chips to the big bowl with the dry ingredients, and combine well until just mixed. (Don't overmix-when in doubt, just stop, since it's better that two chocolate chips are touching than that your loaf is tough). 4. Pour the batter into a loaf pan or 2 mini loaf pans. Bake for 45-50 minutes (big loaf) or 25 minutes (small loaf). Since heat varies by the oven, you should check the loaves using the toothpick method. When it's golden on top and toothpick comes out clean, it's done. Enjoy!

3 bananas, 1 cut into coins, 2 cut into half-coins
1 cup dark chocolate chip
3 cans biscuit dough
1 cup sugar
3 teaspoons cinnamon
2 sticks butter
½ cup brown sugar
1 banana, cut into coins
dark chocolate chip

Steps:

  • Cut two bananas into half coins.
  • Cut one banana into coins and line the bottom of a greased bundt pan.
  • In a bowl mix sugar and cinnamon, set aside.
  • Preheat oven to 350˚F (180˚C).
  • Cut each biscuit round in half and flatten into rounds.
  • Stuff each round with one piece of the halved banana coins and chocolate chips. Close the round together by pinching at the seam and roll into a ball in your hands.
  • Place the balls in the cinnamon sugar mix and gently toss to coat. Place half the balls in the pan.
  • In a saucepan over medium heat melt the butter and brown sugar until one, stirring occasionally. Set aside to cool.
  • Pour half of the glaze on top.
  • Sprinkle a handful of chocolate chips over top. Then place rest of the balls on top followed by the rest of the glaze.
  • Bake for 40-50 minutes until the crust is a deep dark brown on top. (If the top is browning too much you can cover it with aluminum foil.)
  • Remove from oven and allow it to cool or about 15-30 minutes before turning it over onto a plate.
  • Enjoy!

3 (16 ounce) cans refrigerated biscuits
1 cup sugar
1 teaspoon cinnamon
1/2 cup margarine
1 cup of packed brown sugar

Steps:

  • Separate biscuits; cut each biscuit into 4 pieces.
  • Mix cinnamon and sugar in a bowl coat each piece of biscuit and pile into a bundt or tube pan.
  • Heat margarine and brown sugar until it is melted; pour over the biscuits.
  • Bake at 350°F for about 20 minutes.
  • When it has cooled, unmold onto plate.
  • Pull apart to eat.

  • To make the dough I prefer using a stand mixer, but you can also do it without one. In the bowl of your stand mixer or another large mixing bowl combine the flour, sugar, yeast, and sea salt. Ensure you place the sugar, yeast, and salt in different spots on top of the flour. Stir to combine these ingredients together. Attach the bowl to your stand mixer with the dough hook and over low speed add the oil and gradually pour in the warm water. Otherwise, create a well in the dry ingredients and add the oil and warm water. Then fold together with a spatula or wooden spoon until the dough comes together. You will knead the dough by hand on a very lightly floured surface until it becomes smooth and tacky about 3 to 5 minutes. For the stand mixer method, increase the mixer speed gradually until the dough comes together and starts to form a ball around the dough hook. Continue to knead a minute longer until it becomes smooth and tacky. Do not add more flour if it’s slightly sticky, just contin
  • While the dough is resting, prepare your bundt pan by greasing it with a bit of the stick of butter. If using a 9-inch springform pan, line the bottom with parchment paper, and then grease the bottom of and sides of the pan with the butter. Also grease the ramkein or jar for the middle and place it in the center of the pan. Melt the remaining butter stick in a medium bowl in the microwave. To the melted butter add mashed banana, brown sugar, and cinnamon and stir until well combined.
  • On a lightly floured surface, roll out the dough to about 12 x 18-inches. Spread ⅔ of the filling onto the surface. Add half the chocolate chips and the entire sliced banana in an even layer.
  • Fold the top and bottom edges of the dough into the center along the longest side. Now you have a long envelope of dough that is 18-inches long x 6-inches wide. Pinch the left and right ends together to seal the two edges. Then fold this envelope of dough in half again along the long edge. Cut 1-inch pieces along the length so you end up with 18 strips. This doesn’t have to be perfect and it will be a bit messy.
