CHUCK WAGON STEAK RUB
The secret is the COFFEE!!! This is a variation of a steak rub from a morning news show (dont remember which one), only they made the Montreal Steak Seasoning from scratch....I say forget that...this was a big hit & so much easier!!! Too much pepper? Add more O. powder and coffee. Enjoy!

CHUCK WAGON PAN FRIED STEAK
Steps:
- Tenderize steak by pounding with a meat mallet on each side. Mix flour and pepper and dredge steak in mixture. Heat oil in heavy pan until hot and add steak. Cover and fry over medium heat about 15 minutes. Remove cover and cook steaks until browned on all sides. Remove steaks and salt to taste at once. Drain all but 4 tablespoons fat and crispies. To make cream gravy stir in 4 tablespoons flour, ? teaspoon salt and ? teaspoon black pepper. Stir until a smooth paste forms. Add 2 cups milk (or 1 cup canned milk and 1 cup of water*). - Firstly, you're going to pick your brisket. Emphasis on PICK.
- The three options for good meat is Prime, Choice, and Select.
- It's good to remember that, depending on the fat to meat ratio, the brisket will shrink some during cooking.
- Try to opt for beef briskets that are well marbled, so the flavor and juices from the melting fat absorbs evenly.
- You won't have to hassle with uneven chops, and the raw fat will keep the meat moist.
- Choose your dry rub ingredients from the selection above - Texas-Style, Traditional, or Chuck Wagon.
- Mix the ingredients together in a plastic container or a medium bowl (each recipe is suitable for a brisket between 5-10 lbs.)
- Scatter the mixture over the meat, using a spatula to pack into the meat. Cooking time may vary.
- While not ideal for rugged meats, it comes in handy for those rainy days you didn't bank on, when you've got your meat thawed and in danger of spoiling.
- Begin with a 350 degree oven, and cook time until your meat is savory and brown.
- Safely wrap your brisket in foil, and stow away in a 150 degree oven or roaster until ready to serve.

Steps:
- Place meat in plastic bag and set in large bowl. Combine remaining ingredients, except chips; and pour into bag over meat. Close bag tightly around meat. Place in refrigerator and marinate 6 to 8 hours or overnight.
- Build a medium fire in a covered bbq. Arrange coals at back and sides of firebox. Place a 12 x 10 inch drip pan made of heavy duty foil in center of firebox under grill and fill with water. Sprinkle some of the dampened chips over coals. Remove meat from marinade, reserving marinade.
- Place meat on grill over drip pan. Close hood and cook to medium doneness (25 minutes on each side) brushing occasionally with marinade on each side.
- Add more hickory chips every 20 minutes.
- Season meat to taste with salt and pepper if desired.

- Sprinkle Chuck Wagon Rub evenly over both sides of ribs; rub in with your fingers. If desired, cut ribs into 2- to 3-rib portions.
- For sauce, in a large bowl stir together wine, pineapple juice, honey, cider vinegar, soy sauce, mustard, bourbon, and hot pepper sauce; set aside.
- Place rib portions, bone sides down, in a large roasting pan.* Prepare grill for indirect grilling, except omit drip pan. Test for medium heat above center of grill. Place roasting pan on grill rack in center of grill (not over heat). Pour sauce over ribs. Cover the grill (do not cover pan with foil) and grill for 1-1/2 to 1-3/4 hours or until ribs are tender, spooning sauce over ribs every 20 to 25 minutes.
- Remove roasting pan from grill. Remove ribs from sauce. Discard sauce. If desired, rearrange coals for direct grilling. Place ribs on the grill rack directly over the coals for 10 minutes, turning once. If desired, serve with bottled barbecue sauce. Makes 4 to 6 servings.
