If you're looking for a simple Christmas Eve dinner idea, this would be it! It will make a beautiful presentation on the table and it's super yummy. The mix of meats is tasty. Ham adds another layer of flavor and everything's better with cheese.

1 pound(s) ground beef
1 pound(s) ground pork
1/2 pound(s) deli ham
1 cup(s) bread crumbs
2 large eggs
1 cup(s) tomato juice divded
1 package(s) onion soup mix
1/2 tablespoon(s) salt
4 clove(s) garlic minced
1/2 cup(s) red bell pepper chopped
1/2 cup(s) green bell pepper chopped
1 cup(s) spinach chopped fine
1/2 cup(s) mushroom chopped fine
1 1/2 cup(s) shredded Swiss cheese
1/4 cup(s) fresh parsley finely chopped

Steps:

  • Mix the ground beef, ground pork, bread crumbs, eggs, 1/2 cup of tomato juice, onion soup mix, and salt. Set aside.
  • Place oil in pan. Saute the garlic, red bell pepper, green bell pepper and mushrooms until softened. Add the spinach and cook until wilted. Remove from heat and set aside.
  • Flatten out the meat into a large square on wax paper. Place the deli ham slices on top of meat. Spoon the veggies over top the ham. Sprinkle the cheese over top.
  • Using the wax paper roll the meat jelly roll style sealing the edges. Place seam side down on greased baking pan.
  • Bake at 350 degrees for about 45 minutes. Pour the other 1/2 cup tomato juice over top. Top with parsley and cook another 10 minutes.
  • Remove from oven and let rest 10 minutes and then cut into slices.

Here's what you need: bread crumbs, shredded pecorino romano cheese, fresh basil, shredded provolone cheese, fresh italian parsley, garlic, kosher salt, freshly ground black pepper, olive oil, flank steak, canola oil, butter, medium carrot, small onion, celery, dry white wine, crushed tomato, dried bay leaves, dried oregano, red pepper flakes, orecchiette pasta, fresh basil

½ cup bread crumbs
1 cup shredded pecorino romano cheese, plus more for serving
½ cup fresh basil, chopped
⅓ cup shredded provolone cheese
½ cup fresh italian parsley, chopped
8 cloves garlic, minced, divided
kosher salt, to taste
freshly ground black pepper, to taste
¼ cup olive oil
1 lb flank steak
2 tablespoons canola oil
1 tablespoon butter
1 medium carrot, chopped
1 small onion, chopped
1 stalk celery, chopped
1 cup dry white wine
28 oz crushed tomato, 1 can
2 dried bay leaves
1 tablespoon dried oregano
½ teaspoon red pepper flakes
1 lb orecchiette pasta, or polenta, cooked, for serving, optional
¼ cup fresh basil, cut into ribbons, for serving

Steps:

  • In a medium bowl, combine the bread crumbs, pecorino Romano, ½ cup (20 g) chopped basil, provolone, parsley, 5 minced cloves of garlic, salt, pepper, and the olive oil. Stir and set aside.
  • Lay the flank steak on a cutting board. Season both sides with salt and pepper. Cover the the meat with a sheet of parchment paper. Using a meat mallet or rolling pin, pound the steak until it's ¼ inch (6 mm) thick.
  • Remove the parchment and sprinkle the bread crumb mixture evenly over the steak.
  • Starting from the bottom, roll the meat into a log. Using butcher's twine, tie up the roll so it holds its shape while cooking. Season with salt and pepper.
  • Heat the canola oil in a large Dutch oven over high heat. When the oil is shimmering, add the steak roll and, without moving it, cook until a dark brown crust forms on one side, about 3 minutes. Turn the roll and repeat until all sides and the ends have been seared. Remove the roll from the pan and set aside.
  • Preheat the oven to 350°F (180°C).
  • Add the butter, carrot, onion, celery, remaining 3 cloves of garlic, salt, and pepper to the pan and cook until caramelized, about 5 minutes.
  • Add the white wine and stir to loosen any brown bits from the bottom of the pot. Cook until the wine reduces and the pan is slightly dry again.
  • Add the tomatoes, bay leaves, oregano, and red pepper flakes. Stir to combine.
  • Return the beef roll to the pot. Cover and bake for 1 hour, flipping the roll halfway through (if the sauce is drying up too much, add more crushed tomatoes or water), until the beef is tender.
  • Slice the braciole and arrange on a serving platter with the sauce. Serve the braciole with orecchiette or polenta. Garnish with grated pecorino Romano and fresh basil.
  • Enjoy!

3/4 cup soft bread crumbs
2 large eggs
1/2 cup tomato juice
2 tablespoons minced fresh parsley
2 garlic cloves, minced
3/4 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
2 pounds ground beef
8 thin slices fully cooked ham
1-1/2 cups shredded part-skim mozzarella cheese
3 thin slices part-skim mozzarella cheese

Steps:

  • In a large bowl, combine the bread crumbs, eggs, tomato juice, parsley, garlic, oregano, salt and pepper. Crumble beef over the mixture and mix well. , On a pieces of heavy-duty foil, pat meat mixture into a 12x10-in. rectangle. Place the ham and shredded cheese on loaf to within 1/2 in. of edges. Roll up, jelly-roll style, beginning with the short end and peeling foil away while rolling. , Place on a greased baking pan with seam side down; seal ends. Bake, uncovered, at 350° for 1 hour and 10 minutes or until meat is no longer pink and a thermometer reaches 160°. Top with sliced cheese; bake 5 minutes longer or until cheese is melted.

1 lb beef mince
1 cup breadcrumbs (Wholemeal bread)
1 pinch salt
1/4 lb bacon, chopped in to small cubes
1 egg (don't beat the egg)

Steps:

  • Mix in bowl the Mince, Bacon and Breadcrumbs. Drop in the egg (not Beating). Mix well.
  • Put mixture in bowl or loaf tin. Do not press down mixture too much to give a light texture to the roll. Cover with greaseproof paper and tie with string.
  • Place in pan with enough water to come half-way up the container.
  • Steam for 2 1/2 hours, slowly.
  • See that the pan does not get dry. Add boiling water when needed.
  • Leave to go cold before serving with a nice green salad.
  • Would also make a nice filling for sandwiches.

2 eggs, beaten
½ cup tomato juice
¾ cup soft bread crumbs
2 tablespoons snipped fresh parsley
½ teaspoon dried oregano, crushed
¼ teaspoon sea salt
¼ teaspoon ground black pepper
1 clove garlic, minced
2 pounds lean ground beef
1 (6 ounce) package thinly sliced ham
1 (6 ounce) package sliced mozzarella cheese

Steps:

  • In a large bowl, combine eggs and tomato juice. Stir in the bread crumbs, parsley, oregano, salt, pepper, garlic and ground beef. Mix thoroughly. Preheat oven to 350 degrees F (175 degrees C).
  • On a piece of foil or waxed paper, pat and shape meat into a 10x8 inch rectangle. Arrange ham slices on top of meat, leaving a small margin around edges. Tear up the cheese slices, reserving 1 slice whole, and sprinkle over the ham.
  • Starting from the short end, carefully roll up meat, using the foil or waxed paper to lift. Seal the edges and ends of the meat. Place roll, seam side down, in a 9x13 inch baking dish.
  • Bake in a preheated oven for about 75 minutes. Cut the reserved slice of cheese into 4 triangles. Overlap the triangles on top of loaf. Bake for another 2 minutes or until cheese melts.
