CHRISTMAS NIGHT LASAGNA

I tinkered with this recipe four or five times before I got it down to what it is now. It's easy-all you do is mess up two pots-but it tastes as good as the lasagnas that are a big production.

Yield 2 casseroles (12 servings each).

Number Of Ingredients 18

3 pounds ground beef
1 pound bulk pork sausage
1 medium onion, chopped
1 medium green pepper, chopped
2 jars (28 ounces each) meatless spaghetti sauce
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 can (4 ounces) mushroom stems and pieces, undrained
2 teaspoons Worcestershire sauce
1-1/2 teaspoons Italian seasoning
1-1/2 teaspoons salt, divided
1-1/2 teaspoons pepper, divided
1 teaspoon garlic powder
2 eggs, lightly beaten
2-1/2 cups 4% small-curd cottage cheese
1 carton (15 ounces) ricotta cheese
2 cups shredded Parmesan cheese
24 lasagna noodles, cooked and drained
12 slices part-skim mozzarella cheese

Steps:

  • In a Dutch oven or several large skillets, cook the beef, sausage, onion and green pepper over medium heat until meat is no longer pink; drain. Add the spaghetti sauce, soup, mushrooms, Worcestershire sauce, Italian seasoning, 1 teaspoon salt, 1 teaspoon pepper and garlic powder. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes, stirring occasionally., Meanwhile, in a large bowl, combine the eggs, cottage cheese, ricotta and remaining salt and pepper. , Spread 2 cups meat sauce each into two greased 13x9-in. baking dishes. Layer each with 1/3 cup Parmesan cheese, 4 noodles, 1-1/4 cups cottage cheese mixture and 3 slices of mozzarella cheese. Repeat layers. Top with the remaining noodles, meat sauce and Parmesan., Bake, uncovered, at 350° for 45 minutes or until bubbly. Let stand for 15 minutes before cutting.

SHORTBREAD COOKIE LAYER:
3/4 cup unsalted butter-softened
1/2 cup powdered sugar
1 1/2 cups all-purpose flour
1 tablespoon cocoa powder
1/4 teaspoon salt
Red food coloring
PEPPERMINT CHEESECAKE LAYER:
8 ounces cream cheese, softened
1 cup powdered sugar
1 1/2 cup Cool Whip, thawed
1 teaspoon peppermint extract
PUDDING LAYER:
2 (3.9 ounces each) boxes white chocolate instant pudding
3 cups milk
Green food coloring
TOPPING:
1 1/2 cups cool whip
GARNISH:
2 cups mini marshmallows
Red & green sprinkles
M&M candies

Steps:

  • Preheat the oven to 350 F. Lightly butter 9 x 13 inch baking dish, set aside. In a small bowl stir together flour, salt and cocoa powder. In large bowl beat butter and sugar until smooth. Add red food coloring and mix well ( I used 1 tablespoon food coloring to get intense red color). Turn you mixer on low speed and gradually add flour mixture. Mix until combined. Press the mixture into bottom of baking dish and bake for 18-20 minutes. Remove from the oven and cool completely. To make cream cheese layer: Beat softened cream cheese and powdered sugar until smooth. Add 1 ½ cups Cool Whip and peppermint extract and mix to combine. Spread over cooled shortbread layer. Place in the freezer to firm while preparing pudding. To make the green pudding layer: Whisk together 2 x 3.9 ounces boxes white chocolate instant pudding mix with 3 cups milk. Add green food coloring (add a few drops at a time, to desired color) and whisk until smooth. Spread over cream cheese layer. Set in the freezer for 5 minutes. Spread 1 1/2 cup Cool Whip over pudding layer and top with mini marshmallows and sprinkles. Place in the fridge for 3-4 hours until set.

There are only two things you need for great lasagna: a thick, rich, super-meaty meat sauce and lots of it, and a ricotta filling where only the finest cheeses are welcomed. For the sauce, I love a combination of half Italian sausage and half lean ground beef. I also like lots of sauce.

1 pound bulk Italian sausage
1 ½ pounds lean ground beef
1 (8 ounce) package fresh mushrooms, coarsely chopped
1 teaspoon salt
½ teaspoon freshly ground black pepper
½ teaspoon dried Italian herb seasoning
¼ teaspoon red pepper flakes
6 cups prepared marinara sauce
2 tablespoons water, plus more as needed
2 eggs
2 pounds whole-milk ricotta cheese
1 (8 ounce) container fresh mozzarella cheese, diced
⅔ cup freshly shredded Parmigiano-Reggiano cheese
1 teaspoon salt
¼ teaspoon freshly ground black pepper
1 pinch cayenne pepper, or to taste
¼ cup chopped fresh parsley
1 (16 ounce) package lasagna noodles
1 (8 ounce) container fresh mozzarella cheese, diced
½ cup freshly shredded Parmigiano-Reggiano cheese

Steps:

  • Place sausage and ground beef into a large saucepan over medium heat; cook and stir until meat is browned and crumbly, about 10 minutes. Break the meat apart as it cooks. Stir in mushrooms, 1 teaspoon salt, 1/2 teaspoon black pepper, Italian herb seasoning, and red pepper flakes. Turn heat to medium-high and cook until mushrooms have given off their juices and bottom of pan is almost dry.
  • Pour prepared marinara sauce into meat mixture. Pour water into marinara sauce jar and shake to get all the sauce out of the jar; add to mixture. Reduce heat to low and simmer until meat is extremely tender, about 2 hours. Add a little more water if sauce becomes too thick. Skim excess fat from surface of the sauce and season with more salt and black pepper, if needed. Turn off heat.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat eggs in a large bowl and stir in ricotta cheese, 8 ounces diced mozzarella cheese, and 2/3 cup Parmigiano-Reggiano cheese. Season cheese mixture with 1 teaspoon salt, 1/4 teaspoon black pepper, and cayenne pepper; mix in parsley.
  • Bring a large pot of salted water to a boil. Cook lasagna in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 8 minutes. Drain and rinse noodles and set aside in a bowl of cold water.
  • Spread 1/4 the sauce into the bottom of a 10x15-inch baking pan. Top with 1/3 the noodles and spread 1/2 the ricotta cheese mixture over noodles. Spread 1/4 the meat sauce over the cheese, top with 1/3 the noodles, and spread remaining 1/2 the ricotta mixture over the noodles. Spread 1/4 the meat sauce over the cheese filling. Tap the casserole dish lightly on a sturdy work surface to settle the layers. Arrange last 1/3 the noodles over sauce and spread remaining 1/4 the sauce over the noodles. Dot top of the casserole with 4 ounces diced fresh mozzarella cheese and sprinkle with 1/2 cup Parmigiano-Reggiano cheese.
  • Cover casserole with aluminum foil, being sure not to touch the top of the casserole with the foil. Place casserole onto a baking sheet to catch spills.
  • Bake in the preheated oven for 30 minutes. Remove foil and cook until lasagna is golden brown and bubbling, 30 to 35 more minutes. Let set for 20 minutes before cutting into squares.

Layers of imported pasta drenched in my homemade marinara and stacked with a specially seasoned ricotta, pecorino romano, and mozzarella fresca.

16 ounces ricotta cheese
8 ounces grated pecorino romano cheese
10 ounces mozzarella Fresca soda
32 ounces fresh marinara sauce (See my Homemade roasted garlic & fresh basil recipe)
3 tablespoons dried basil
1 tablespoon onion powder
2 tablespoons dried oregano
2 tablespoons garlic powder
16 ounces dried imported lasagna noodles (Di Martino is my favorite)
8 ounces hot Italian sausages, cooked separately (optional)
1/4 cup fresh basil sprig (as a garnish)
5 tablespoons salt
5 tablespoons extra virgin olive oil

Steps:

  • Open the mozzarella fresca and drain out the liquid, then thoroughly dry on paper, or clean cloth towels. Either using a food processor or a manual grater, grate the mozzarella fresca and set aside.
  • Drain the ricotta and put in a bowl. With a wooden spoon gently gently gently mash and pat it down till reasonably smooth and flexible. Using a fork mix in the dry spices till well-incorporated, and set aside.
  • Place the dried pasta in 1/2 gallon of salted boiling water and bring it back up to a full boil. It's usually done when it starts bubbling white. Drain the pasta in the pasta insert, or colandar over the sink. Once completely drained, then sprinkle the olive oil completely over the pasta to prevent sticking. In a festive deep-dish Lasagna pan layer the pasta, sauce and cheese in that order. The bottom layer starts with pasta. Then, ladle on on a thin layer of marinara, then the cheeses--- starting with the mozzarella fresca, seasoned ricotta, and pecorino romano---sprinkle marinara on top of that and then start again with the pasta, ladling on the sauce and cheese layers all over again.
  • Cover the top with foil and bake in a 325F oven for 35-40 minutes, checking and rotating after 20 minutes. Cool covered for at least 30 minutes and garnish with the fresh Basil sprigs, and spicy Italian sausage---which is cooked completely separately.

  • Spray a large piece of foil with nonstick cooking spray & set aside. Spray a 9×13 pan with nonstick cooking spray (see Recipe Notes, below). Ladle about 1 cup of the bolognese sauce into the baking dish, spreading it out to evenly coat the bottom. This prevents the pasta from sticking to the bottom of the dish as the lasagna bakes.
