CHRISTMAS CRUNCH

Christmas Crunch image

Christmas Crunch is irresistibly crunchy, sweet, and salty! This gluten free treat takes minutes to prepare, and even less time to devour.

Provided by Iowa Girl Eats

Categories     dessert, holiday, kid friendly, snack

Yield makes 12 cups

Number Of Ingredients 7

8 cups gluten free puffcorn (I like Old Dutch brand)
2 cups gluten free pretzels (I like Snyders GF)
1-1/2 cups peanuts
12oz bag gluten free white chocolate chips
1 Tablespoon coconut oil
11oz bag Holiday M&Ms
gluten free holiday sprinkles

Steps:

  • Spread a couple sheets of parchment paper, wax paper, or two silpats on the countertop then set aside.
  • Add puffcorn, pretzels, and peanuts to a very large bowl - if you don't have an XL bowl, use two large bowls - then set aside.
  • Add chocolate chips and coconut oil to a medium-sized, microwave-safe bowl then microwave for 40 seconds and stir. Microwave for 30 seconds then stir. If chocolate chips aren't completely smooth, continue microwaving in 10 seconds increments, stirring between increments, until completely melted.
  • Drizzle chocolate over puffcorn mixture then gently fold with a spatula until everything is evenly coated. Spread mixture out onto prepared surface then sprinkle with M&Ms (may not use whole bag) and press gently so they adhere to the warm chocolate. Add sprinkles then let cool completely. Transfer to treat bags or an airtight container.

CHRISTMAS CRUNCH MIX

Christmas Crunch Mix image

Everyone goes crazy over this amazing candy coated cereal snack mix made festive with sprinkles, M&Ms and mini gingerbread man cookies. It's sure to be a huge holiday hit!

Provided by Maegan - The BakerMama

Categories     Dessert

Time 10m

Yield 25

Number Of Ingredients 9

4 cups rice Chex cereal
3 cups frosted Cheerios
2 cups mini pretzels
1-1/2 cups dry roasted peanuts
1 (16 ounce) package Candiquik vanilla candy coating or (20 ounce) package vanilla almond bark
1 (2.9 ounce) container holiday festive sprinkles
1 cup regular red and green M&M's
1 cup mini red and green M&M's
2 cups gingerman mini cookies (I find them at Target)

Steps:

  • In a large bowl, combine the Chex cereal, Cheerios, pretzels and peanuts.
  • In a microwave safe bowl or the container the candy coating comes in, melt the candy coating according to package directions, usually 90 seconds to 2 minutes, stirring every 30 seconds until melted and smooth. Be sure not to over melt the candy coating as it will burn and become too thick to stir and coat the mix evenly.
  • Pour the melted candy coating over the ingredients in the large bowl and toss to coat with a large spoon. Ingredients should be evenly coated in the candy coating.
  • Spread the mixture out in an even layer on parchment paper. Immediately sprinkle with the sprinkles and then the M&M's. Lay gingermen cookies evenly across mixture.
  • Allow mixture to cool completely. Break apart to serve. Store in an airtight container or baggie.

  • Spray a cookie sheet with non-stick spray, and spread out the chopped pecans -reserving about 1/2 cup which are really finely chopped to use on the top at the end.
  • Melt the butter and water in a large pot. Add the sugar and stir constantly until it's dissolved. Occasionally brush the inside of the pot down with water, using a pastry brush, to help prevent the candy from re-crystallization. Continue cooking and stirring until the candy turns a dark amber. Be careful not to burn it though.
  • Pour the candy evenly over the nuts. Use a spoon to smooth it out and completely cover the nuts. Be careful, it's very hot.
  • While the candy is still hot, cover completely with chocolate chips. As they melt, use a knife to spread the chocolate evenly. Sprinkle with the reserved finely chopped pecans. Let it harden, and then break into pieces.
