GREEN SALAD WITH CRANBERRY VINAIGRETTE

Steps:
- Put the cranberries in a small saucepan; add the honey and 1/3 cup water. Cook over medium heat, stirring occasionally, until the cranberries pop and the liquid thickens, about 8 minutes. Remove from the heat and let cool completely.
- Toast the walnuts in a small dry skillet over medium heat, about 5 minutes. Transfer to a cutting board and let cool slightly, then roughly chop. Stir the olive oil and vinegar into the cooled cranberries. (Add more honey, 1 teaspoon at a time, if the vinaigrette is too tart.) Season with salt and pepper.
- Toss the lettuce and watercress in a serving bowl; season with salt and pepper. Spoon the vinaigrette over the lettuce and top with the walnuts and herbs. Toss before serving.
HOLIDAY CRANBERRY GELATIN SALAD

- In a small bowl, dissolve gelatin in 1 cup boiling water. In another bowl, combine cranberry sauce and remaining water; add gelatin mixture and lemon juice. Pour into a 13x9-in. dish coated with cooking spray; refrigerate until firm, about 1 hour., In a large bowl, beat cream until stiff peaks form. In another bowl, beat cream cheese until smooth. Stir in 1/2 cup whipped cream; fold in remaining whipped cream. Spread over gelatin mixture; sprinkle with pecans. Refrigerate for at least 2 hours.

- 1. Mix these 3 items and let stand: 1 package Cranberries - chopped * ½ cup apples - chopped 2 cups sugar (stir occasionally while fixing other parts of salad)
- 2. Mix and let cool down: 2 small pkg. Lemon Jell-O 1 small pkg. Cherry Jell-O 3 cups hot water - boiling ½ cup pineapple juice
- 3. Mix cranberry mixture and Jell-O mixture together
- 4. Add: 1 cup nuts, chopped 1 cup crushed pineapple (8 oz.) 1 lb seedless grapes - cut up
- 5. Pour in 9x13 GLASS pan and place in refrigerator to chill.
- 6. * Easiest way to chop cranberries is to freeze and then put frozen cranberries in food processor with chopping blade in bottom and chop very fine. (pulverize) Do a small amount at a time.

Steps:
- Using a food processor, grind cranberries, orange and peel of orange, and walnuts till coarse.
- In large mixing bowl mix together cranberries, walnuts, orange and pineapple.
- Place in refrigerator for at least 3 hours.
- Two hours before mix is chilled make cherry Jell-O according to package directions.
- Fold Jell-O into the cranberry mixture.
- Chill till dinner is ready or best chilled overnight.
