THE BEST CHILI
There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

Steps:
- Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
- Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
- Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
- Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
- Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
- Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
- Top with sour cream, Cheddar and scallions. Serve with tortilla chips.

CHILI!
This is a really beefy chili, and makes a great, hearty meal on a cool evening. It's not a terribly spicy version, but if you want to turn up the heat, add some cayenne along with the other spices. I often add more seasoning at the end of the simmering time to suit whomever I'm serving. I probably get more requests to make this than anything except my gumbo. This also freezes beautifully (if you have any left!). I hope you enjoy it as much as I do!

CHRISTMAS IN CHILE: 5 CHILEAN TRADITIONS

- Viejito Pascuero is coming to town. In Chile, they call Santa Claus Papa Noel or Viejito Pascuero, which literally translates as ‘Old Man Christmas’. However, aside from the name, Chilean Santa has many of the same traits as the European and American Santa.
- Creative Christmas trees. As you can probably imagine, pine or fir trees are difficult to come by in Chile at the height of summer. Therefore, when it comes to decking the halls, Chileans get creative.
- The Good Night. The crescendo of Christmas in Chile isn’t Christmas Day – instead, it’s Christmas Eve. Chileans call this event La Noche Buena, or “the Good Night”.
- Barbeques on Christmas. As Christmas Eve is the main event of the Chilean festive calendar, the day itself is a more low-key affair. Most families will spend the day together enjoying their gifts, watching Christmas specials, or going to the beach.
- Enjoy a monkey’s tail. In the summer’s heat, Chileans opt for something more refreshing when it comes to Christmas drinks. Instead of steaming eggnog or hot cocoa, Chilean enjoy a cola de mono or ‘monkey’s tail’.
A VERY MERRY CHRISTMAS: 6 CHILEAN HOLIDAY TRADITIONS
From cascada.travel
- Santa Claus Comes to Chile. Jolly Old Saint Nicholas takes on the persona of “Viejito Pascuero” or “Papa Noel” (Old Man Christmas) for Chilean children, but he’s still recognizable with his classic red and white suit, bulky sack full of presents, and “bowl full of jelly” physique.
- Deck the Halls. Putting up festive Christmas decorations is one of the best parts of the season, and many Chileans love decorating the tree and adorning the rest of the house with lights and garlands.
- Celebrate “La Noche Buena” Instead of waiting until Christmas morning, Chilean families gather around the tree and open their presents at midnight on Christmas Eve, or “La Noche Buena.”
- Enjoy Christmas Day. Ah, the most wonderful day of the year! After staying late the night before, Christmas Day is a relaxed occasion, with families spending the day together enjoying their new gifts, going to the beach or pool, and watching Christmas specials on TV.
- Take a Sip of These Holiday Drinks. Instead of cradling giants cups of hot cocoa with fluffy white marshmallows, Chileans must find a way to battle the summer heat when it comes to their holiday drinks.
- Taste This Christmas Feast. While chestnuts roasting on an open fire are in short supply, Chileans whip up plenty of other delicious treats for the holidays.
