CHRISTY'S MEATBALLS OR MEATLOAF
My sister made these meatballs one night when we were in high school and she was learning to cook. The sauce is delicious and the meat can easily be made into a meatloaf for a great week-night dinner.

Steps:
- Preheat the oven to 350 degrees.
- Mix all the meatball ingredients in a large bowl and shape into 1-inch balls. Fry until brown in the oil and butter. Drain off the grease and place meatballs on paper towels.
- Place meatballs in a 2-qt. baking dish.
- In a small bowl, combine sauce ingredients. Pour over meatballs.
- Bake for 20 minutes.
- For a meatloaf, mix the meat and form into a loaf in a baking dish. Bake for 45 minutes. Remove from the oven and top with the sauce. Return to the oven for 15-20 minutes or until the sauce looks bubbly.
THE BEST MEATLOAF
We opted for an all-beef meatloaf rather than the traditional mix of beef, veal and pork because we wanted that satisfying big beef flavor. Milk adds richness and tenderizes the meat, preventing it from getting tough or dry. We also cook the onion instead of adding it raw as many recipes suggest, which imparts a welcome sweetness and eliminates that harsh raw onion flavor.

- Arrange a rack in the center of the oven and preheat to 450 degrees F. Line a rimmed baking sheet with foil.
- Whisk the eggs, milk, Worcestershire sauce and 2 teaspoons salt in a large bowl until completely combined. Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, thyme, 1/2 teaspoon salt and 1 teaspoon pepper and cook, stirring occasionally, until the onions are tender and lightly golden brown, 8 to 10 minutes.
- Add 3 tablespoons of the ketchup and cook until most of the moisture has evaporated and the mixture is thick and brick red colored, 3 to 4 minutes. Remove the skillet from the heat and let the onions cool slightly. Then add them to the beaten eggs and mix to combine.
- Add the beef to the egg and onion mixture. Break up the meat with a fork or wooden spoon, and then mix to thoroughly combine; you don't want to see any lumps of raw beef. Add the panko and mix to combine. Stir the meat vigorously with a wooden spoon for about 7 seconds; it will become more homogenous and tackier.
- Transfer the meat to the prepared baking sheet and shape into a 9-by-5-inch loaf. Smooth the top and evenly spread the remaining ketchup over top. Bake for 5 minutes, and then reduce the oven temperature to 350 degrees. Continue to bake until an instant-read thermometer inserted into the center of the loaf registers 150 degrees F, 30 to 35 minutes. Allow the meatloaf to rest for 20 minutes before slicing.
CHRISTINA'S MOUNT VESUVIUS MEATLOAF

- To make the meatloaf: Preheat the oven to 350 degrees F.
- Place the bread in a small dish, cover with milk, and set aside to soak. Meanwhile, in large bowl, mix the beef, onion, celery, ketchup, egg, Worcestershire sauce, barbecue sauce, garlic, basil, mustard, salt, pepper, and crumbled bacon.
- Squeeze excess milk from the bread, then use your hands to squeeze the bread into the meat mixture until fully incorporated. Transfer the mixture to a ring mold pan and top with the sliced, uncooked bacon. Place the ring mold on a baking sheet and bake until meatloaf is cooked through, about 45 minutes.
- Meanwhile, to make the mashed potatoes, cook the potatoes, covered, in boiling salted water until tender, about 12 minutes. Drain and mash the potatoes or pass them through a ricer. Stir in the heavy cream, butter, sour cream, chives, and horseradish, if using. Season with salt and pepper, to taste. If desired, put 1 cup of the potatoes in a pastry bag fitted with a large star tip. Set aside.
- When the meatloaf is done, turn on the broiler. Remove and discard the bacon slices and carefully pour the pan juices into a saute pan. Invert the ring mold onto an ovenproof platter. Using a spatula, cover the meatloaf on all sides with mashed potatoes, as if frosting a cake. If using a pastry bag, add decorative swirls to the top. Place the platter under the broiler until potatoes are nicely browned, about 10 minutes.
- Meanwhile, to make the gravy, place the saute pan with drippings over medium heat and stir in the flour. Cook, stirring constantly, for 2 minutes. Stir in the broth, ketchup, mustard, Worcestershire sauce, and barbecue sauce.
- If desired, fill the center of the meatloaf with buttered carrots and peas. Slice the meatloaf, and spoon the gravy over the top. Serve immediately.

- Preheat oven to 350 degrees. Lina a baking sheet with parchment paper. Spray lightly with oil. Heat the oil in a medium skillet over medium heat. Saute the onions, garlic and bay leaf until the onions are tender, about 3 minutes. Add the red pepper and cook until the red pepper is tender, about 5 minutes. Stir in the parsley and thyme and cook for another 2 minutes. Remove from pan and let the onion mixture cool. Discard the bay leaf In a large bowl, combine the beef, eggs, bread crumbs, 1/2 cup ketchup, the Worcestershire sauce, salt, pepper and the cooled vegetables. use your hands to mix together. Transfer the mixture to the center of the baking sheet and form into a loaf. Coat the meat loaf with the remaining 1/2 cup ketchup Bake for 1 to 1 1/2 hours, until the meat loaf is firm.
