This is my ex-mother in law's recipe. I got her to e-mail it to me yesterday. It is the best chow recipe I have ever eaten. I've made many many jars of this in my lifetime. You will not be dissappointed if you try this one! I am posting this so I never lose it again! I am guestimating at the amount it makes.

9 lbs green tomatoes
6 lbs onions, peel and slice fine
1 cup salt
4 cups water
4 cups white vinegar
2 cups water
1/2 cup pickling spices
2 1/2 lbs white sugar
2 1/2 lbs brown sugar
1/2 cup cornstarch
2 teaspoons dry mustard
1 teaspoon turmeric
1 red pepper, cut fine

Steps:

  • Soak the tomatoes and onions in the first amount of water and the salt over night.
  • Drain well in the morning.
  • Put the spice in a cloth bag, tie shut and crush with a rolling pin.
  • Put the vegetables in a pot with the vinegar and second amount of water, putting in the bag of spice.
  • Bring to a boil, then simmer for half an hour.
  • Add the sugars and simmer another half an hour.
  • Stir together the cornstarch, dry mustard and tumeric.
  • Add a little of the simmering liquid to make a paste, then stir it into the tomato mixture.
  • Add the chopped pepper.
  • Simmer for 1 to 2 hours til thick.
  • Spoon into prepared jars and seal according to manufacturers directions.

GREEN TOMATO RELISH (WITHOUT SUGAR)

If you're big into canning, this Green Tomato Relish is a must try. I've broken down the steps and tips to make the process easier for beginners. This recipe is from Ashley Eller and Farm Girl Fare, and it's one of my favorites using green tomatoes!

4 pounds green tomatoes
2 pounds onions (white or yellow)
1 ½ pounds red bell peppers
1 pound apples (like Granny Smith)
12 cloves garlic
2 cups apple cider vinegar (unpasteurized)
1 ½ tablespoons salt
8 jalapeños
4 tablespoons cilantro
2 teaspoons cumin

Steps:

  • Make Relish: Remove stem and core from green tomatoes and roughly chop into ½ inch or 1 inch pieces. Add to a large pot with heat turned off while you prepare rest of ingredients.
  • Peel, roughly chop and add onions to pot. Remove stem and seeds from red bell peppers and roughly chop as well. Remove core from apples, discard, and roughly chop (including peel). Mince garlic and add to pot along with onions, red bell peppers, and apples.
  • Add apple cider vinegar and salt to pot and set over high heat. When vinegar comes to a boil turn down to low and simmer for 1 hour and 15 minutes while stirring occasionally.
  • While relish is simmering finely chop jalapenos (only remove/discard seeds for half of them), chop cilantro, and set aside. I highly recommend wearing latex or rubber gloves while chopping the jalapenos otherwise your hands could sting for a few hours...I know this from experience!
  • To Can Recipe: Fill canning pot three-quarters full with water, cover, and set over high heat until it comes to a boil. You can either sterilize your jars in this pot of boiling water for 10 minutes or by using the heated drying cycle in your dishwasher. It's important to keep the jars hot and sterilized until ready for use. Be sure all canning utensils have been sterilized in hot soapy water as well. Also fill a small pot with water to sterilized lids and bands. Water for lids/bands should be hot at about 180 degrees F, but not boiling. Leave them in hot water (on simmer) until ready for use. If water gets cold remove lids/bands and heat up water to 180 degrees F again before adding them back in.
  • After the 1 hour and 15 minutes is up the relish should have boiled down a bit. Add the jalapenos, cilantro and cumin to pot and simmer for 5 more minutes.
  • Use either an immersion blender or potato masher to process the mixture into a small dice, but not a puree. I highly recommending owning an immersion blender if you don't have one already...it's perfect for pureeing soups and other recipes like this relish without having transfer batches back and forth between a blender, which makes a mess!
  • To Freeze Recipe: At this point divvy up relish among freezer safe containers and once cool transfer to freezer. If using glass jars be sure to leave enough room at the top for the relish to expand during freezing. You can skip the last two steps.
  • To Fill Jars for Canning: Turn relish back up to a boil. Remove jars from hot water, shake out excess water, and set near pot. Using a sterilized ladle and funnel, fill the jars, leaving ¼ inch headspace at the top. Slide a non-metallic utensil into jar to remove any air bubbles. Wipe off rim of jar with a clean cloth. Using sterilized tongs (or magnetic lid lifter) carefully place lids onto filled jars. You can touch top of lids once they are on jar, but do not touch underneath or on inside of jar to keep everything sterilized. Screw on bands by only touching the outside, although bands should not be too tight.
  • To Process Jars: Bring water in canning pot back up to a boil. Using jar lifter carefully transfer jars to canning pot. Jars should not directly be touching the bottom of the pot and instead be separated either by a canning rack or simple dish towel. Once water comes back to a boil start timing from that moment and process jars for 15 minutes. After time is up using jar lifter carefully remove jars from boiling water and transfer them to a clean dish towel. Let jars rest until they cool. If jar lids haven't already popped/sealed you should hear the sound...and if a jar doesn't seal within 24 hours transfer it to fridge and eat within 3 - 4 weeks.

32 cup green tomatoes (sliced, wedges, or chopped)
5 pounds onions (sliced)
1/3 cup pickling salt
3 cups vinegar
6 cups granulated sugar
1 cup pickling spice (in a cheesecloth bag)

Steps:

  • Do NOT stress over this. There are many variations. As long as you stick to the basic directions, it will turn out.
  • Depending on how fine you want the final product, and the kind of tomatoes you are using (Beefsteak, Roma, etc), you can slice them, cut them into cubes, or chop the tomatoes.
  • Peel and slice the onions. Don't worry about fancy - a food processor does a perfectly fine job.
  • In a large pot or bowl (I used a 42 cup bowl with a lid), sprinkle the tomatoes and onions well with salt, and let sit overnight covered. They do not have to be refrigerated.
  • In the morning, rinse the tomatoes and onions to remove the salt and drain the liquid off. Discard the brining liquid. The vegetables will have reduced considerably in volume.
  • Tie the spices in a cloth (cotton or cheesecloth) bag. This amount of spice will make a pickle with plenty of bite, and you can use much less and still have a good chow. One variation is to use 2 Tablespoons each celery seed and mustard seed, and put them directly in the pickle without a cloth bag.
  • Not everyone likes a strong vinegar taste. Replacing up to 1/3 of the vinegar with water will still work. Do not go less than that.
  • In a large pot, combine vegetables, vinegar (and water, if using), sugar, and spices.
  • Cook on medium heat for ABOUT 2 hours, stirring often.
  • The mixture will cook down and thicken.
  • Follow SAFE, up to date canning methods (defer to official recommendations over this recipe). Fill 6 pint jars with hot pickle, add canning lids and rings, and process in a boiling water bath for 15 minutes.
  • If any is left after filling the jars, place it in a container in the refrigerator and use within a week or so.
  • Let cool completely and test the lids. Any that do not seal should be refrigerated.

2 tablespoons salt
1 medium head cabbage
1 pound onions (about 3 medium)
1 pound green and sweet red peppers (about 3 medium), seeded
1 jalapeno pepper, seeded and chopped, optional
4 cups cider vinegar
2-3/4 cups sugar
4 teaspoons mixed pickling spices

Steps:

  • Chop tomatoes. Transfer to a strainer and sprinkle with salt; let stand 10 minutes. Meanwhile, chop cabbage, onions and green and red peppers. Place in a Dutch oven. Add drained tomatoes to pan and, if desired, jalapeno., Stir in vinegar and sugar. Place pickling spices on a double thickness of cheesecloth. Gather corners to enclose spices; tie securely with string. Add to pan. Bring to a boil. Reduce heat; simmer, uncovered, until thickened, stirring occasionally, 1 to 1-1/2 hours. Discard spice bag. Cool to room temperature; refrigerate leftovers.

This delicious, tangy relish of green tomatoes, onions, bell peppers, and spices, is perfect with sandwiches, potatoes, cheese, and lots of other entrees. A jar of this makes a great gift, too!

24 large green tomatoes
3 red bell peppers, halved and seeded
3 green bell peppers, halved and seeded
12 large onions
3 tablespoons celery seed
3 tablespoons mustard seed
1 tablespoon salt
5 cups white sugar
2 cups cider vinegar

Steps:

  • In a grinder or food processor, coarsely grind tomatoes, red bell peppers, green bell peppers, and onions. (You may need to do this in batches.) Line a large colander with cheesecloth, place in sink or in a large bowl, and pour in tomato mixture to drain for 1 hour.
  • In a large, non-aluminum stockpot, combine tomato mixture, celery seed, mustard seed, salt, sugar, and vinegar. Bring to a boil and simmer over low heat 5 minutes, stirring frequently.
  • Sterilize enough jars and lids to hold relish (12 one-pint jars, or 6 one-quart jars). Pack relish into sterilized jars, making sure there are no spaces or air pockets. Fill jars all the way to top. Screw on lids.
  • Place a rack in the bottom of a large stockpot and fill halfway with boiling water. Carefully lower jars into pot using a holder. Leave a 2 inch space between jars. Pour in more boiling water if necessary, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minutes.
  • Remove jars from pot and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid does not move up or down at all). Relish can be stored for up to a year.

1 tablespoon turmeric
1 tablespoon mustard seeds

1 (1-inch) piece ginger, peeled, grated or chopped
2 pounds firm green heirloom tomatoes, cut into quarters
2 medium onions, diced

Steps:

  • Combine vinegar, sugar, dry mustard, turmeric, mustard seeds, celery seed, cayenne pepper, and ginger in a large pot and bring to a boil over high heat. Reduce heat and simmer for 5 to 10 minutes to extract the flavors of the spices. Once the liquid is boiling and steaming add tomatoes and onion. Gently stir to incorporate. Reduce heat and simmer for 20 to 25 minutes. Shut off heat and allow to cool to room temperature. Place in a serving bowl and serve.

5 cups green tomatoes (coarsely chopped)
5 cups cabbage (coarsely chopped)
1 1/2 cups yellow onion (or sweet onion, finely chopped)
2 cups bell pepper (coarsely chopped; at least 1 red bell pepper for color)
2 cloves garlic (finely minced)
1/3 cup pickling and canning salt
2 1/2 cups cider vinegar
1 cup light brown sugar (packed)
1 teaspoon celery seed
1 tablespoon yellow mustard seeds
Optional: 1/2 teaspoon red pepper flakes (or to taste)

Steps:

  • Gather the ingredients.
  • Combine the chopped vegetables in a large nonreactive kettle or bowl. Add the salt and stir to combine thoroughly. Cover and let stand for 4 hours or refrigerate overnight.
  • Prepare the canner and jars . Add water to a large canning kettle with rack and heat to a boil; reduce heat and keep at a simmer. The water should be high enough to be at least 1 inch above the filled jars. We usually fill it about halfway and keep a kettle or saucepan of water boiling on another burner to add to the canning kettle as needed. Wash jars thoroughly and heat water in a small saucepan. Put the lids in the saucepan and bring almost to the boil; lower heat to very low to keep the lids hot.
  • Drain the vegetables and rinse thoroughly.
  • In a large nonreactive kettle, combine the vinegar, brown sugar, celery and yellow mustard seeds, and red pepper flakes. Bring to a boil. Reduce heat to medium-low and continue simmering for 5 minutes.
  • Add the drained vegetables and bring back to a boil. Reduce heat to medium-low and simmer for 10 minutes.
  • With a slotted spoon, pack the vegetables into prepared jars. Cover vegetables with the pickling liquid, leaving approximately 1/4-inch headspace.
  • With a clean dampened cloth, wipe the rims of the jars. Place the flat lids on the jars. Close caps with screw-on rings tightly, but do not over-tighten. Arrange the filled jars in the canning kettle, and add more water so that it is at least 1 inch above the jars.
  • Bring to a full boil. Cover and continue boiling for 10 minutes. Remove the relish to a rack to cool completely.
  • Check for seals . The middle of the caps should have made a popping sound while cooling and will stay depressed.

Turmeric

Steps:

  • 1- Cut up your vegetables in thin round disks. 2- In a large boiler layer your vegetables and after each layer sprinkle with sea salt, let stand overnight, then drain all liquid off in the morning. 3- Then add to the vegetable's one cup of vinegar and balance of water to cover; boil until tender maybe 15 minutes, drain. 4- Then put your pickling spice in a cheese cloth or tea strainer, place in the boiler. 5- Then add the remainder of your ingredients, sugar, vinegar, turmeric and mustard. 6- Start boiling for another 30 minutes until it's blended, do not over boil this will break down your vegetables. "Remove Spice" 7- Sterilize six or seven mason jars and lids, while hot start scooping your Chow, Chow in the bottles clean rims and seal tight. 8- Let go to room temperature all day or over night, then check seals, Remove the rims if the lids are sealed put the rims back on and store in a cool place if not store in your fridge until gone. Alway label and date your bottles. INGREDIENTS IN PICKLING SPICES: Mustard seed, whole allspice, cloves, black pepper corns, bay leafs crushed. Sterilizing and Canning Procedures Method: Sterilization: 1. Start by getting a large boiler and filling in about quarter full of water. 2. Then starting the water to a boil and placing your Mason jars inside then cover. 3. After let the pot boil for about 15-20 then remove your bottles and place them on paper towels or a cloth. Canning Procedures: 1. After your food items are cooked and ready to bottle, scoop hot liquid and put inside your Mason jars. 2. Continue doing this until all bottles are complete and leaving 1/2 inch on top. 3. Clean around the top of your bottles removing any food of rims. 4. Then place caps and lids on your jars and tighten. 5. Then place your jars back in hot water bath and start the boil for another 5 minutes with the cover on boiler.

ALSO KNOWN AS CHOW-CHOW OR PICCALILLLI, THIS RELISH IS GREAT WITH SAUSAGES, PORK, AND HAM, OR SERVE IT WITH HOT DOGS OR BURGERS.
5 c coarsely chopped green tomatoes (about 5 tomatoes)
5 c coarsely chopped cabbage (about 1 1/2 pounds cabbage)
1 1/2 c finely chopped yellow onion or sweet onion
2 c coarsely chopped bell pepper, at least 1 red for color (about 4 peppers)
1/3 c kosher salt or pickling salt
2 1/2 c cider vinegar
1 c light brown sugar, packed
1 Tbsp mustard seeds
2 clove finely minced garlic (fresh only)
1 tsp celery seed
1/2 tsp teaspoon red pepper flakes (optional)

Steps:

  • 1. Combine the chopped vegetables in a large nonreactive kettle or bowl. Add the salt and stir to combine thoroughly. Cover and let stand for 4 hours or refrigerate overnight.
  • 2. Prepare the canner and jars. Add water to a canner with rack and heat to a boil; reduce heat and keep at a simmer. The water should be high enough to be at least 1 inch above the filled jars. I usually fill it about halfway and I keep a kettle or saucepan of water boiling on another burner to add to the canner as needed. Wash jars thoroughly and heat water in a small saucepan; put the lids in the saucepan and bring almost to the boil; lower heat to very low to keep the lids hot.

Steps:

  • In a large pot, sprinkle the tomatoes and onions well with pickling salt, and let sit overnight covered. In the morning, rinse the tomatoes and onions to remove the salt and drain the liquid off. Add them to a large pot, add the vinegar, the sugar, and the pickling spices in a cheesecloth bag. Put the large pot on the stove and turn to medium. Cook the tomato mixture until it is soft and somewhat thickened, about two hours. Stir often, don't let it burn to the bottom of the pan. Seal in hot sterile mason jars. Makes about 6 pints.

2 quarts cabbage, chopped
2 quarts onions, chopped
6 green bell peppers, chopped

1/2 cup mustard seeds
1 ounce celery seed

Steps:

  • Put celery, tomatoes, cabbage, onions, and peppers through food chopper.
  • Mix together.
  • Add 1 cup kosher salt with 2 quarts cold water.
  • Let stand overnight in cool place.
  • Next morning drain well.
  • Put 2 quarts vinegar to 2 lbs sugar, mustard seed, and celery seed on stove to boil; boil for 10 minutes.
  • Pour over chopped vegetables.
  • Pack in jars and seal.

3 Tbsp dry mustard
1 Tbsp powdered ginger
1 Tbsp turmeric, ground
SPICE BAG
4 Tbsp mustard seeds
3 Tbsp celery seed
2 Tbsp pickling spice

Steps:

  • 1. Chop all vegetables; combine in a large kettle. Stir in salt; let stand at room temperature overnight, or at least 8 hours. Drain
  • 2. Combine vinegar, sugar, dry mustard, ginger and tumeric in a large kettle. Cut a 6 inch square of cheesecloth and place mustard seed, celery seed and pickling spices in the center. Gather the edges together, tie with string and add to the kettle/
  • 3. Bring to a boil and then simmer for 30 mins. Add vegetables and return to simmer for additional 30 minutes. Discard spice bag.
  • 4. Spoon hot chow-chow into hot sterilized jars and seal. Process for 15 minutes in a boiling-water canner. (20 mins. for altitudes of 1000-6000 feet. 25 mins for altitudes above 6000 feet.)
