CHORIZO STUFFED BAKED JALAPENOS

Yummy jalapenos are slices and then stuffed with chorizo, cheese, creamy cream cheese and baked in 15. These make a perfect quick and tasty game day or any day appetizer.

Number Of Ingredients 12

12 small jalapeños (or about 18 large)
8 oz cream cheese, softened
6 oz Spanish or Mexican chorizo, (see directions for prep)
3/4 cup cheddar or Monterrey jack, shredded (try a blend)
1/4 cup parmesan cheese
1-2 cloves garlic. minced
1/4 cup fresh cilantro
olive oil
diced red pepper, for garnish
chopped cilantro
sour cream
lime juice

Steps:

  • Preheat Oven: To 375°F (190° Celsius).
  • If using Mexican Style Chorizo: Remove the meat from the casing and brown meat in a medium-high pan. Using a wooden spoon, continue to break the meat apart until a crumbled texture is achieved. Drain oil, cool and reserve.If using Spanish or Spanish Cured Style Chorizo: Spanish chorizo does not need to be browned. Just dice or pulse in a food processor.
  • Mix: In a bowl mix the softened cream cheese, cooled chorizo, shredded cheese, garlic, cilantro, and salt to taste.
  • Drizzle: a baking sheet with oil.
  • Slice: Carefully using kitchen gloves, slice jalapenos in half lengthwise. Be sure to remove all the seeds and the ribs leaving a nice clean interior. You can either leave the stems or remove them. The choice is yours.
  • Fill: With a small spoon, fill each of the jalapeños with the cream cheese mixture. They can be overstuffed slightly.
  • Bake: Place in the oven and bake for 20- 25 minutes or until the cheese is slightly browned and bubbling.
  • Serve: To serve the Chorizo Baked Jalapeños top with a garnish of finely diced red pepper and a drizzle of sour cream thinned with lime juice.

CHORIZO CROQUETAS WITH AïOLI

Try a new way to use chorizo, with these fabulous croquetas served with garlic mayonnaise. They require a little effort, but make a great starter or party snack

Yield Makes about 25 croquetas

Number Of Ingredients 14

50g butter
½ medium onion, finely chopped
70g plain flour
435ml whole milk
135g chorizo, cut into small chunks
50g grated manchego
2 tbsp finely chopped parsley
3 eggs, lightly beaten
150g dry breadcrumbs
groundnut oil, for frying
4 garlic cloves, crushed
2 large egg yolks (freeze the whites for another recipe)
250-300ml extra virgin olive oil
squeeze of lemon juice

Steps:

  • Heat the butter in a pan over a medium-low heat, and fry the onion for 8 mins until softened but not coloured. Stir in the flour until it's incorporated into the fat and onions. Reduce the heat to low and cook for 4 mins, stirring - don't let it brown. Warm the milk in a medium pan over a low heat until steaming.
  • Remove the onion mixture from the heat and add the milk, a little at a time, stirring after each addition until smooth. When all the milk has been added, return the pan to medium-low heat and bring to the boil, stirring constantly. Reduce the heat to low and cook for 6 mins, stirring often to prevent it from catching. Set aside.
  • Cook the chorizo in a frying pan over a medium heat for 3 mins - you don't need any fat, as fat will be released from the chorizo as it cooks. Stir the fried chorizo into the sauce along with the cheese, parsley and seasoning. Pour the sauce into a dish and leave to cool completely, then cover and chill for at least 3 hrs, or overnight.
  • Next, make the aïoli. Put the garlic and the egg yolks in a bowl and beat with an electric whisk while slowly adding the oil, a drop at a time. As the mixture starts to thicken, you can add the oil more quickly, in greater amounts. Squeeze in some lemon juice and season, tasting as you go to ensure the flavour is balanced (you can also add a drop of white wine vinegar as well as lemon juice, if you like). Cover and chill until ready to serve.
  • Using wet hands, roll the chilled chorizo mixture into walnut-sized balls. Put the egg in a shallow bowl and the breadcrumbs on a shallow plate. Roll the croquetas in the egg, then crumbs, making sure each is well coated. Put the croquetas on a baking tray, then cover loosely and chill for a few hours to firm up, so they don't break up when you fry them.
  • Pour the groundnut oil into a pan until it is no more than a third full, and heat to 180C, or until a cube of bread dropped in turns golden within 30 seconds. Deep-fry the croquetas in batches for 2-3 mins per batch, keeping an eye on the temperature. If the oil is too hot, the croquetas will darken on the outside before the inside is hot - they should be golden. Use a slotted spoon to transfer the croquetas to a plate lined with kitchen paper, leave to drain for a few minutes, then serve with the aïoli.

Canola oil
2 tablespoons olive oil
1 shallot, diced
2 tablespoons garlic, minced
Salt and freshly ground black pepper
3/4 pound chorizo sausage, finely chopped
1 cup shredded smoked Cheddar
12 jalapenos, stems removed and hollowed out
1 cup buttermilk
2 eggs
1 1/2 cups all-purpose flour
1 1/2 cups panko bread crumbs
3 tablespoons butter
1 cup fresh or frozen corn kernels
1 lemon, juiced
Salt and freshly cracked black pepper
1 teaspoon sugar
1/4 cup chicken stock
2 tablespoons sour cream

Steps:

  • Preheat a fryer with canola oil to 375 degrees F.
  • In a medium-sized skillet over medium-high heat, add the oil. Add the shallots, garlic, salt and pepper, to taste, and the chorizo. Cook for 2 to 3 minutes until nicely browned. Remove the mixture from the pan to a medium bowl and allow it to cool slightly. Stir in the cheese and mix well. Stuff the jalapenos with the filling, using your fingers or a small spoon.
  • In a small bowl beat together the buttermilk and eggs. In a shallow dish add the flour and season with salt and pepper, to taste. In another shallow dish add the panko. Dredge the stuffed jalapenos in the flour, then in the buttermilk, and then in the panko. Repeat the last 2 steps, if needed.
  • In the same pan the chorizo was cooked in, add the butter. Heat over medium-high heat, then add the corn, lemon juice, salt and pepper, to taste, and the sugar, Stir together and allow to cook for 1 to 2 minutes. Add the chicken stock and allow it to come to a hard boil. Remove from heat and cool slightly. Add the corn mixture to a blender and puree until smooth. Transfer the puree to a medium-sized bowl and stir in the sour cream.
  • Fry the jalapenos, in batches, until golden and crisp, about 3 to 4 minute. Arrange them on a serving dish and serve with the sweet corn puree.

1/2 pound smoked gouda, shredded
1/4 cup finely chopped red onions
1 egg
1/2 cup cream cheese
3 tablespoons sour cream
1 tablespoon hot sauce (recommended: Frank's Red Hot)
Salt and freshly ground black pepper
12 large jalapeno peppers, stemmed, seeded and halved

Steps:

  • Special Equipment: parchment paper
  • Preheat oven to 375 degrees F.
  • Brown chorizo in a skillet over medium-high heat, about 8 to 10 minutes. Drain and place into a large mixing bowl. Add the cheese, red onion, egg, cream cheese, sour cream, hot sauce, and salt and pepper, to taste. Press into jalapeno halves and assemble on a parchment lined baking sheet. Bake until golden and bubbly, about 20 minutes.

  • 1. Bring 4 quarts water to boil in large pot. Add pasta and 1 tablespoon salt and cook, stirring often, until al dente. Reserve 1/2 cup cooking water, then drain pasta and return it to pot. 2. Meanwhile, cook sausage in 12-inch nonstick skillet over medium heat, breaking up pieces with spoon, until cooked through, about 8 minutes. Using slotted spoon, transfer sausage to paper towel-lined plate. Add shallots to fat left in pan and cook over medium-high heat until softened, about 3 minutes. 3. Add wine and simmer until almost evaporated, about 2 minutes. Add cream and broth and simmer until sauce is slightly thickened, about 7 minutes.
