Refried, or recooked, beans are quick and easy to make. Choose the chorizo depending on how spicy you want it to be.

1 spicy chorizo sausage,semi-cured
2 tbsp olive oil
1 onion, diced
4 cloves garlic, peeled and finely chopped
2 x 400g tins of organic red kidney beans, drained and rinsed
Sea salt
*Fresh cheese, mozzarella or fetta, crumbled to serve
Coriander sprigs, to serve
*If in Melbourne, fresh cheese can be sourced at Spanish food store Casa Iberica. It is a mild cheese. You could substitute mozzarella - or feta, which gives an interesting, if not authentic, flavour.

Steps:

  • Squeeze small chunks of chorizo out of the casing and set aside. Heat oil in a frypan and gently fry the chorizo for five minutes. Add onion and garlic and fry for a few minutes to soften. Add the beans and mash roughly with a potato masher or the back of a wooden spoon. Stir to combine all the ingredients. Taste and season with salt, if required. Spoon into a large serving bowl and top with crumbled cheese and coriander. Serve immediately.

4 links smoked Mexican chorizo
1/4 cup extra-virgin olive oil
1/4 white onion, finely diced
2 cloves garlic, peeled and chopped
2 (15.5 ounce) cans red kidney beans
1 to 2 cups low-sodium chicken stock
Kosher salt and freshly ground black pepper

Steps:

  • Finely chop the chorizo into small dice. In a heavy-bottomed pot add olive oil and chorizo. Put the pot over low heat and slowly bring the heat up to medium. Fry the chorizo for a few minutes to infuse the olive oil. Using a slotted spoon remove about 1/4 cup of chorizo, for garnish, and set aside. To the remaining chorizo in the pot add the onion and garlic and fry until both are cooked, about 2 minutes. Add the beans with their liquid and stock and simmer to allow the flavors to come together about 10 minutes. Season with salt and pepper, to taste. Use a potato masher to mash the beans into a coarse puree. Alternatively, you could let the beans cool for about 5 minutes and carefully puree in a food processor until smooth. Transfer to a serving bowl.

Cooking spray
3/4 cup refried beans
4 ounces fresh chorizo
4 large eggs, lightly beaten
1/2 cup mild salsa
1/4 cup shredded cheddar cheese

Steps:

  • Preheat oven to 425°. Spritz both sides of tortillas with cooking spray. Press tortillas onto bottom and up sides of two 1-1/2-qt. ovenproof bowls. Bake until edges are just browned, 8-10 minutes. Cool 5 minutes; remove from bowls. Cool completely., Microwave beans, covered, on high until heated through, 1-2 minutes. Spread half in each tortilla bowl. , In a large nonstick skillet, cook and crumble chorizo over medium heat until cooked through, 4-6 minutes; spoon half in each tortilla bowl. Wipe out skillet. Add eggs; scramble, cooking until thickened and no liquid egg remains. Meanwhile, microwave salsa, covered, on high until heated through, 1 minute., Spoon eggs over beans; top with salsa. Sprinkle with cheese.

I love tostadas. And I used to be able to buy some brand of canned Refried Beans with Chorizo. Haven't been able to find them in years. So...I have come up with this.

corn oil or canola oil, for frying
6 -8 corn tortillas
2 pinches sea salt
1 (14 ounce) can refried beans
1/4 lb bulk chorizo sausage (or one fresh link)
1 cup monterey jack pepper cheese (combination) or 1 cup mexican cheese (combination)
1 romaine lettuce hearts or 1/2 head shredded iceberg lettuce
2 plum tomatoes, diced or 8 grape tomatoes, quartered
diced avocado

Steps:

  • Heat 1/8 to 1/4-inch oil over medium high heat. Fry tortillas 30 seconds on each side to light golden, 1 tortilla at a time. Drain tortillas on paper towels or brown paper sack. Season with a little sea salt while hot.
  • Saute chorizo in medium skillet over medium heat, breaking up the sausage into small pieces. When cooked, add the can of refried beans to the skillet to heat through. Mix chorizo and beans.
  • Spread hot beans on tortillas and top with a handful of shredded cheese, shredded lettuce and diced tomato pieces.

CHORIZO AND REFRIED BEAN EMPANADAS

These savory Mexican pastries are stuffed with spicy chorizo and traditional frijoles de la olla or pinto beans. Make ahead and freeze for later.

1 1/4 cups Gold Medal™ all-purpose flour
2 teaspoons sugar
1/8 teaspoon salt
1/2 cup cold butter, cut into small pieces
1 egg, slightly beaten
10 oz Mexican pork chorizo sausage, casings removed
4 cups cooked frijoles de la olla or 2 cans (15 oz each) pinto beans, undrained

Steps:

  • To make dough, in medium bowl, stir together flour, sugar and salt. Using fingers, cut in butter until mixture is crumbly. Add egg; stir until dough comes together.
  • Place dough on work surface; shape dough into thick disk. Wrap tightly in plastic wrap. Refrigerate until firm, at least 1 hour.
  • While dough is chilling, in 10-inch skillet, cook and mash chorizo over low heat 6 to 8 minutes or until it begins to brown. Add frijoles de la olla with the liquid; cook over medium heat. While beans are boiling, mash with potato masher. Continue to cook until beans form a thick paste, about 10 minutes.
  • To assemble and bake empanadas, heat oven to 350°F. On lightly floured work surface, roll out chilled dough with rolling pin until about 1/8 inch thick. Cut out disks with bowl or cookie cutter 3 to 4 inches round.
  • Place 2 tablespoons bean mixture on 1 half of 1 dough disk. Fold dough over to cover filling; seal edge by pressing down with fork. (This also makes for a pretty pattern when baked.) Repeat with remaining dough and filling. Pierce top of each empanada with fork to allow steam to escape during baking. (See Tip about freezing unbaked empanadas.)
  • Spray large cookie sheet with cooking spray. Arrange fresh or frozen empanadas on cookie sheet.
  • Bake on middle rack in oven 15 to 20 minutes or until golden brown. If after 15 minutes, bottoms of empanadas are starting to brown, move cookie sheet to top oven rack and continue to bake for last 5 minutes.
  • Serve empanadas warm or at room temperature. Refrigerate any leftover baked empanadas for a few days; reheat in a toaster oven or bake at 350°F for 8 minutes.

1 teaspoon vegetable oil
2 (15 ounce) cans pinto beans, not drained
1 small onion, chopped
2 teaspoons chili powder
1/4 teaspoon ground cumin
8 ounces fully cooked chorizo sausage, sliced
6 tortillas, warmed
1/2 cup fresh cilantro
4 ounces cheddar cheese, shredded
1 large tomatoes, chopped

Steps:

  • Prepare rice as label directs.
  • Meanwhile, in food processor with knife blade attached, process beans with their liquid until coarsely chopped.
  • In non-stick 10-inch skillet, heat oil over medium heat. Add onion and cook, stirring ocassionally, until lightly browned, 3-4 minute Stir in chili powder, cumin, and chorizo, cook 2 minute Add beans and cook 2 mins, stirring.
  • Fill tortillas with equal amounts. Fold sides over filling to serve.
