2 boneless skinless chicken breast halves (4 ounces each)
2 teaspoons olive oil
1/4 teaspoon garlic salt
1/4 teaspoon paprika
1/4 teaspoon pepper
1/8 teaspoon dried basil
1/8 teaspoon dried oregano
4 cups torn romaine
1 small tomato, thinly sliced
1/4 cup fat-free creamy Caesar salad dressing
Caesar salad croutons, optional

Steps:

  • Brush chicken with oil. Combine the garlic salt, paprika, pepper, basil and oregano; sprinkle over chicken. Grill, uncovered, over medium heat or broil 4 in. from the heat for 4-7 minutes on each side or until a thermometer reads 170°., Arrange romaine and tomato on plates. Cut chicken into strips; place over salads. Drizzle with dressing. Sprinkle with croutons if desired.

1 slice multi-grain bread, cut into 1/2-inch cubes
1/2 tsp. dried oregano leaves
3 cups chopped romaine lettuce
1 cup chopped cooked boneless skinless chicken breasts
1/2 cup chopped cucumbers
1/2 cup halved cherry tomatoes
1/4 cup KRAFT Lite Creamy Caesar Dressing
1 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Heat oven to 350ºF.
  • Spread bread onto baking sheet sprayed with cooking spray; spray with additional cooking spray. Sprinkle with oregano.
  • Bake 8 to 10 min. or until bread is crisp and lightly toasted.
  • Combine lettuce and all remaining ingredients except cheese in large bowl; spoon onto plates. Top with croutons and cheese. Serve immediately.

Make a restaurant-worthy chicken Caesar with a little help from your humble broiler and sheet pan. Chicken breasts and homemade croutons get golden in the oven. Charring the romaine adds a new dimension to this dinner standby.

3 anchovy fillets in oil, mashed with the flat side of a knife
1/2 teaspoon grated lemon zest, plus 2 tablespoons lemon juice
2 small cloves garlic, grated
Kosher salt and freshly ground pepper
1/2 cup mayonnaise
2 teaspoons dijon mustard
1/2 cup grated parmesan cheese
2 tablespoons chopped fresh chives, plus more for topping
1/4 cup extra-virgin olive oil
3 cups torn crusty bread (about 4 ounces)
4 skinless, boneless chicken breasts (about 6 ounces each)
2 romaine lettuce hearts, quartered lengthwise

Steps:

  • Preheat the oven to 450 degrees F. Line half of a rimmed baking sheet with foil, folding up the edges to make a tray. Whisk the anchovies, lemon zest and juice, 1 grated garlic clove, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl; let sit for a few minutes. Stir in the mayonnaise, mustard, 1/4 cup parmesan and 2 tablespoons water. Reserve 2 tablespoons of the dressing in a separate bowl for the chicken. Stir the chives into the remaining dressing.
  • Mix 2 tablespoons olive oil with the remaining garlic clove; toss with the bread pieces in a large bowl and season with salt and pepper. Spread the bread on the unlined half of the baking sheet. Arrange the chicken on the other half; season with salt and pepper and brush with the reserved 2 tablespoons dressing. Bake until the bread is crisp, about 15 minutes. Remove the croutons to a plate.
  • Preheat the broiler. Arrange the romaine cut-side up on the open spot on the baking sheet. Drizzle with the remaining 2 tablespoons olive oil and season with salt and pepper. Broil until the lettuce is charred in spots and the chicken is cooked through, 2 to 4 minutes. Let the chicken rest 8 to 10 minutes, then slice.
  • Divide the lettuce, chicken and croutons among plates. Top with the dressing, the remaining 1/4 cup parmesan and more chives.

1 pound boneless, skinless chicken breasts
Salt and pepper
2 tablespoons olive oil
1/2 pound new potatoes, boiled, drained and sliced
6 cloves garlic, mashed and minced
1 tablespoon Dijon mustard
1 tablespoon white vinegar
Lemon juice
2 tablespoons mayonnaise
1/2 cup olive oil
Salt and pepper
Minced anchovy fillets
1 large head of romaine lettuce, washed and dried
Finely chopped parsley
Whole anchovies

Steps:

  • Slice chicken breasts into strips and season with salt and pepper. In a non-stick skillet, heat oil over medium high heat. Add chicken and cook until golden brown and chicken is no longer pink in the middle, about 4-5 minutes. Remove chicken to paper towels to drain. Combine chicken and sliced boiled potatoes in a large bowl and set aside.
  • For the dressing, combine garlic, mustard, vinegar and two pinches of salt in a blender and process. Add mayonnaise and blend together to form a thick base. In a slow stream add olive oil through hole in lid. Scrape dressing with spatula into a bowl and season to taste with salt, pepper and lemon juice. If desired, add anchovy to dressing to create a deeper, saltier flavor.
  • Toss the chicken and potatoes with 3 or 4 tablespoons of the dressing. Place ripped up romaine lettuce leaves in a large bowl and toss with several tablespoons of the dressing. Arrange lettuce on a plate and top with chicken and potatoes. Garnish with chopped parsley and anchovies, if desired.

2 chicken breasts
2 1/2 teaspoons oil
1/2 teaspoon garlic powder
1/4 teaspoon basil
1/4 teaspoon oregano
1/4 teaspoon fresh ground black pepper
1/4 teaspoon paprika
1/4 teaspoon kosher salt
1/8 teaspoon hickory liquid smoke

Steps:

  • Mix spices and oil together and leave for the flavors to bloom for ~15-30 minutes.
  • Baste chicken with oil/spices, leave to soak in 15-30 minutes.
  • Cook on the stove, med hi, until done. (145-155 with a digital thermometer).
  • Cut into pieces and place over romaine lettuce mixed with your favorite caesar dressing.
  • Top with fresh black pepper and fresh grated parmesan or romano cheese.

2 thick slices rustic white bread, cut into 1-inch cubes
1/4 cup extra-virgin olive oil
Coarse salt and ground pepper
1 garlic clove, minced
2 anchovy fillets, minced
1 large egg yolk or 1 tablespoon pasteurized egg yolk
1 1/2 teaspoons Dijon mustard
1 tablespoon fresh lemon juice
1 small head romaine lettuce, cored, outer leaves discarded, and heart cut into 1 1/2-inch pieces
2 tablespoons freshly grated Parmesan

Steps:

  • Preheat oven to 400 degrees. On a rimmed baking sheet, toss bread with 1 tablespoon oil and season with salt and pepper. Bake until golden brown, 10 to 12 minutes. Let croutons cool completely.
  • On a cutting board, combine garlic, anchovies, and 1/2 teaspoon salt. Using a large knife, drag the blade at an angle across mixture until a paste forms. Transfer to a large bowl and whisk in egg yolk, mustard, and lemon juice. Gradually whisk in 3 tablespoons oil. Season with pepper. Just before serving, add croutons and lettuce to dressing and toss; top with Parmesan.

1 teaspoon Grey Poupon
1 egg, raw
1 dash Worcestershire sauce
1 dash balsamic vinegar or 1 dash red wine vinegar
3 dashes extra virgin olive oil
romaine lettuce, as needed
crouton, as needed
parmesan cheese, freshly shredded, as needed

Steps:

  • Mash together very thoroughly, the garlic and the anchovie fillets. Add lemon juice, Grey Poupon, and egg. Mix thoroughly. Add Worchestershire Sauce, vinegar and olive oil. Mix together. Just before eating the salad, add torn romaine, croutons and parmesan. Toss.
