Steps:
- Place the flour, cornstarch, sugar and cocoa powder into a medium saucepan and stir. Mix in the milk and whisk well.
- Take the saucepan to the medium heat and whisk continuously for almost 10 minutes until the mixture thickens and starts to boil. As it boils, lower the heat and whisk the mixture for an extra 2 minutes to avoid any cornstarch-flour taste. Take the pudding from the heat and add the cognac/whiskey if using and whisk well.
- Pour the pudding into the serving cups and let them cool for 1 hour at room temperature and then keep them in the refrigerator for almost 2 hours.

Steps:
- Bring 1 1/2 cups of the milk, the sugar and cocoa to a simmer in a medium saucepan over medium-high heat, stirring occasionally to dissolve the sugar. Meanwhile, whisk the remaining 1/2 cup of milk with the cornstarch, vanilla, egg yolks, and salt in a medium bowl. Gradually whisk the hot milk mixture into the egg mixture.
- Return the milk-egg mixture to the saucepan and continue to cook, whisking constantly, until the pudding comes to a full boil. Reduce the heat to maintain a simmer, and continue whisking until thick, about 2 or 3 minutes more.
- Divide the pudding among 4 to 6 small ramekins or dessert cups. Cover with plastic wrap and refrigerate until set, at least 4 hours or up to overnight. Serve each pudding with a dollop of whipped cream and a sprinkle of chocolate shavings.
CHOCOLATEY COCOA PUDDING
This has less sugar than some recipes, which gives it a rich chocolatey taste with cocoa rather than solid chocolate. That makes it easier to make and means this pudding has less fat than some. I got this from a friend and it quickly became an "old reliable" for me.

Steps:
- Heat 4 cups of the milk in a large saucepan over medium heat until steaming.
- Meanwhile, whisk the sugar, hot chocolate mix, cornstarch and 1/4 teaspoon salt in a large bowl. Whisk in the egg yolks and the remaining 1/2 cup milk.
- Slowly add half of the hot milk to the egg mixture, whisking constantly until smooth. Gradually whisk the egg-milk mixture into the remaining hot milk in the saucepan and bring to a boil over medium heat, whisking constantly. Continue to cook, whisking constantly, until the mixture has thickened to a pudding-like consistency, 3 to 4 minutes. Remove the saucepan from the heat and stir in the vanilla.
- Let the pudding cool slightly, stirring a few times to prevent a skin from forming. Place a piece of plastic wrap directly on the surface of the pudding and refrigerate until it has completely cooled and thickened, about 4 hours.
- Before serving, whisk the pudding vigorously until it's smooth and creamy. Spoon it into serving bowls and top with dollops of whipped cream and a sprinkling of hot chocolate mix.
