As if you need an excuse to eat chocolate for breakfast, these simple chocolate waffles come together in minutes, making them perfect for brunch-time entertaining... if you want to share. This recipe first appeared in Season 9 of Good Eats. Photo by Lynne Calamia

1 1/2 cups all-purpose flour
3 tablespoons sugar
1/2 cup cocoa powder
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3 large eggs, beaten
4 tablespoons unsalted butter, melted and slightly cooled
1 teaspoon pure vanilla extract
16 fluid ounces buttermilk, room temperature
4 ounces (3/4 cup) chocolate chips
Vegetable spray, for waffle iron

Steps:

  • Heat waffle iron according to manufacturer's directions. If your waffle iron has temperature settings, aim for medium to medium-high.
  • In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, salt, and baking soda. In another bowl, beat together the eggs, melted butter, and vanilla, and then add the buttermilk. Add the wet ingredients to the dry and stir in the chocolate chips just until combined. Allow to rest for 5 minutes.
  • Ladle 4 ounces of waffle batter onto the center of the iron. Close the iron top and cook until the waffle is crispy on both sides and is easily removed from iron, about 2 minutes for a small waffle iron or 3 minutes for a large. Serve immediately or keep warm in a 200ºF oven until ready to serve.

I enjoy waffles,and I enjoy chocolate.This recipe I found in "First for Women" magazine several years ago. I have made this recipe but I did not add the miniature chocolate chips. You have to watch that the waffles do not burn.

1 tablespoon butter
3/4 cup flour
1/4 cup unsweetened cocoa powder
1/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 egg
3/4 cup milk
1/2 teaspoon vanilla
1/4 cup miniature chocolate chip
ice cream or chocolate syrup

Steps:

  • Preheat your waffle iron.
  • Melt butter.
  • Combine flour, cocoa, sugar, baking powder and salt.
  • Separate egg and beat yolk with milk and vanilla.
  • Stir milk mixture and melted butter in to flour mixture until dry ingredients are well-moistened- batter may be slightly lumpy.
  • Stir in chocolate chips.
  • Beat egg white until it holds stiff peaks.
  • Gently fold into batter.
  • Pour batter onto waffle irion using about 1/2 cup for two 4" waffles.
  • Bake until crisp and browned.
  • Serve with whipped cream and fruit or ice cream and chocolate sauce.

Steps:

  • Preheat waffle iron according to manufacturer's directions.

1/2 cup self-rising flour
1/2 cup sugar
1/4 cup old fashioned oats (regular or quick)
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 cup carrot, grated
1/4 cup vegetable oil
1 large egg, beaten
2 tablespoons walnuts, crushed (small pieces)

Steps:

  • In a large mixing bowl, mix together the flour, sugar, oats, cinnamon and baking soda.
  • In separate bowl, combine the carrot, oil and egg. Mix well.
  • Add the carrot mixture to the dry ingredients and stir until just combined and moistened.
  • Fold in the walnut pieces.
  • Pour approximately 1/2 cup mixture onto preheated waffle iron.
  • Waffles will be done when steam stops -- 4 or 5 minutes.
  • NOTE: If batter seems too thick, thin with a little milk.
  • A nice addition to this recipe would be tablespoon of grated apple or a tiny handful raisins.
