1 1/2 cups granulated sugar
3/4 cup lightly packed light brown sugar
1 teaspoon kosher salt, plus another teaspoon for sprinkling
1 1/2 cups chopped roasted pecans
1/2 cup skim milk
1 stick (1/2 cup) butter
2 teaspoons bourbon
1 teaspoon pure vanilla extract

Steps:

  • Place a large piece of parchment paper on a flat surface, preferably granite or wood.
  • Put all the ingredients in a large pot and attach a candy thermometer to the side. You need to be sure the thermometer goes deep into the mixture. Turn the heat to medium high.
  • Fill a bowl that's larger than the pot halfway with ice water and set it aside.
  • Stir the mixture with a wooden spoon. When everything has melted together, start checking the temperature. When the thermometer reaches exactly 236 degrees F, remove the pot from the heat and stick it in the bowl of cold water to stop the cooking process. Stir for 45 seconds while the pot is in the ice bath to evenly cool the entire mixture.
  • With a large spoon, start dropping puddles of the mixture onto the parchment. Make sure you're getting some pecans in every spoonful. If you feel like it, sprinkle just a bit of salt on top. Let them cool all the way. If you're in a humid environment, they might stay sticky, but put them in front of a fan and they should get dry.
  • Store them carefully in a tin, and don't stack them very high-three layers max, separated by wax paper.

3 ½ (4 ounce) packages marzipan
1 cup powdered sugar, divided
1 cup chopped walnuts
2 teaspoons rum
2 teaspoons maraschino liqueur
5 (3 ounce) bars dark chocolate, finely chopped
50 halves walnut halves

Steps:

  • Knead marzipan with 3/4 cup powdered sugar, chopped walnuts, rum, and maraschino liqueur on a clean work surface until smooth.
  • Sprinkle remaining powdered sugar on a clean work surface. Roll out marzipan and cut out circles, squares, or rectangles.
  • Line a baking sheet with waxed paper and set a wire rack on top.
  • Place 3/4 of the chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Remove from heat and stir in remaining dark chocolate until smooth.
  • Stick a toothpick or metal skewer into each praline and dip into the melted chocolate, letting excess drip off. Set onto the wire rack. Allow chocolate to set a little, then place 1 walnut half on top of the chocolate.
  • Allow chocolate to harden completely. Store pralines in airtight containers.

Chocolate pralines combine the crumbly, nutty taste of classic pralines with rich semisweet chocolate including toasted pecans, coarsely chopped.

1/2 cup chocolate chips (semi-sweet, divided use)
1/2 cup brown sugar
1/2 cup sugar (granulated)
1/4 cup heavy cream
2 tablespoons butter
1/4 teaspoon salt
3/4 cup pecans (toasted, coarsely chopped)

Steps:

  • Gather the ingredients.
  • Prepare a baking sheet by lining it with aluminum foil and spraying the foil with nonstick cooking spray .
  • Remove 3 tablespoons from the ½ cup of chocolate chips and set aside.
  • In a medium saucepan, combine both sugars, the cream, the butter, and the salt over medium heat. Stir until the sugars and butter dissolve. Brush down the sides of the pan with a wet pastry brush to prevent sugar crystals from forming, and insert a candy thermometer .
  • Continue to cook without stirring until the thermometer reaches 240 F. Once the proper temperature is reached, remove the candy from the heat, take out the thermometer, and immediately add the pecans and the remaining 1/3 cup of chocolate chips.
  • Begin to stir the candy vigorously. The chocolate will melt and the candy will start to get lighter in color and more opaque. Continue to stir until the candy starts to hold its shape. It should still be easy to stir, however. It is important not to stir too much, as pralines quickly go from fluid to rock-solid.
  • Once it is a lighter, opaque brown and holds its shape, quickly begin to drop small spoonfuls of the candy onto the prepared baking sheet. Work quickly to form the candies, as the pralines will start to set in the saucepan.
  • If the candy stiffens before you're done scooping, add a spoonful of very hot water and stir until it loosens, then continue scooping until you have formed all the pralines.
  • Place the reserved 3 tablespoons of chocolate chips in a small microwave-safe bowl and microwave them until melted about 40 seconds.
  • Scrape the melted chocolate into a small zip-close bag and cut off the corner. Drizzle melted chocolate over the pralines in a decorative pattern.
  • Place the pralines in the refrigerator to set the chocolate, about 15 minutes.
  • Store chocolate pralines in an airtight container at room temperature.

Cake:
Nonstick vegetable oil spray
1/2 cup (1 stick) unsalted butter, cut into 1/2-inch cubes, room temperature
1/4 cup natural unsweetened cocoa powder
1/2 cup boiling water
1 cup all purpose flour
1 cup sugar
1/2 teaspoon baking soda
1/4 teaspoon coarse kosher salt
1/4 cup buttermilk
1 large egg
1/2 teaspoon vanilla extract
Ganache:
1 cup semisweet chocolate chips
3 tablespoons heavy whipping cream
2 tablespoons (1/4 stick) unsalted butter, cut into 1/2-inch cubes
Praline:
3/4 cup (packed) dark brown sugar
1/4 cup heavy whipping cream
3 tablespoons unsalted butter
3/4 cup powdered sugar
1 teaspoon vanilla extract
1 cup pecans, toasted , chopped

Steps:

  • For cake:
  • Preheat oven to 350°F. Spray 9-inch cake pan with nonstick spray. Line with parchment. Spray parchment. Dust with flour, tapping out any excess.
  • Place butter and cocoa powder in medium bowl. Pour 1/2 cup boiling water over; stir. Let stand 2 minutes; whisk until blended. Whisk flour, sugar, baking soda, and coarse salt in another medium bowl. Whisk buttermilk, egg, and vanilla in large bowl. Gradually whisk cocoa mixture into buttermilk mixture; whisk until smooth. Add flour mixture in 3 additions, whisking to blend between additions (batter will be thin). Pour batter into prepared pan.
  • Bake cake until tester inserted into center comes out clean, about 30 minutes. Cool in pan 10 minutes. Run knife around pan edges to release cake. Invert onto rack; remove pan and parchment. Cool completely.
  • For ganache:
  • Place chocolate and cream in microwave-safe bowl. Heat in microwave in 15-second intervals, stirring occasionally, until melted and smooth. Stir in butter. Let stand until spreadable, about 30 minutes. Spread over top and sides of cake. Transfer cake to plate. Chill 2 hours and up to 1 day.
  • For praline:
  • Stir first 3 ingredients in heavy large saucepan over medium-high heat until butter melts. Boil 1 minute without stirring. Remove from heat; whisk in sugar and vanilla. Add pecans; stir just to incorporate. Quickly pour praline over cake. Spread just to edges (topping sets quickly). DO AHEAD: Can be made 1 day ahead. Cover with cake dome. Store at room temperature.

6 tablespoons hershey cocoa
1 cup light cream
6 tablespoons butter
1 teaspoon vanilla
2 cups coarsely broken pecans

Steps:

  • Line 2 cookie sheets with wax paper.
  • In a heavy 3 quart saucepan combine sugar,brown sugar,cocoa and light cream.
  • Cook over medium heat,stirring constantly until mixture boils.
  • Reduce heat to low,cook stirring occanionally to 234 degrees (soft ball stage).
  • Remove from heat.
  • Add butter and vanilla.
  • DO NOT STIR.
  • Cool at room temperature to 160 degrees.
  • Add pecans,Beat with wooden spoon just until mixture begins to thicken (about 1-2 minutes) but is still glossy.
  • Quickly drop by teaspoonfuls onto cookie sheet.
  • Cool.
  • Store covered.

1 1/2 ounces milk chocolate, melted
1 pound praline paste
8 ounces crushed wafers (paillete feuilletine)
Tempered dark chocolate
Cocoa powder

Steps:

  • Combine the cocoa butter and milk chocolate together. Add the praline paste. Mix well. Stir in the paillete feuilletine. Spread evenly into a 9 by 13-inch pan lined with parchment paper. Chill until set. Remove from pan and into cut squares. Coat squares with chocolate. When chocolate is almost set, dust with cocoa powder.

CHOCOLATE & HAZELNUT PRALINE TART

140g butter
100g golden caster sugar
225g plain flour
50g ground almond
1 egg , beaten
85g blanched hazelnut
50g golden caster sugar
200g dark chocolate (70% cocoa)
100g butter
splash Frangelico liqueur or brandy
1 egg
3 egg yolks

Steps:

  • Make the pastry. Cream together the butter and sugar, then add flour and almonds. Bring everything together with the egg. If the pastry is very soft, chill for 20 mins. If not, roll out to fit a deepish 23cm fluted flan tin; if the pastry breaks, press scraps of pastry into the gaps, leaving a slight overhang. Chill for 20 mins.
  • Heat oven to 200C/fan 180C/gas 6. Line the case with baking parchment and baking beans, then bake for 10 mins. Remove beans and cook for another 10 mins until golden.
  • Meanwhile, toast the nuts in a dry pan until starting to brown. Scatter over 4 tbsp of sugar, cook until it caramelises, then tip nuts onto a baking tray lined with parchment. Leave to cool, then roughly chop. Over a pan of barely simmering water, melt the chocolate, butter and alcohol together, then set aside to cool slightly. Over the same pan, beat the egg, yolks and remaining sugar until pale and fluffy. Take off the heat, then fold in the chocolate mix.
  • When case is cooked, remove from oven and turn the heat down to 160C/fan 140C/gas 3. Scatter most of the hazelnuts over the base, then tip in the chocolate mix, pressing it down slightly. Cook the tart for 15-20 mins until the chocolate has almost set. Leave to cool, then serve scattered with the remaining nuts. Can be made up to 1 day ahead.

I got this recipe from my Mum who used to make it as a special treat when me and my brother were kids. It's a doddle and tastes fantastic, especially if you leave it in the fridge for a day or so!!

100g butter
1 tbsp brown sugar
3 tbsp cocoa powder
3 tbsp golden syrup
50g sultanas
200g crushed Rich tea biscuits (I use pestle and mortar)
150g chocolate (for topping)

Steps:

  • Melt butter, sugar, cocoa powder and syrup in a large bowl. Add crushed biscuits and sultanas and stir well.
  • Spead mixture onto a baking sheet so it is about 1.5cm thick. Allow to cool 15 mins.
  • Melt chocolate and spread over top. Allow to cool 45 mins and cut into small (3cm) squares.
