Nonstick cooking spray, for greasing the pan
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup cocoa
3/4 teaspoon kosher salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup brewed coffee, at room temperature
6 tablespoons buttermilk
6 tablespoons oil
1 teaspoon vanilla extract
1 large egg
1 cup confectioners' sugar
2 tablespoons brewed coffee, or more as needed
1 tablespoon milk
1 cup chopped toasted hazelnuts
Sprinkles, for decorating

Steps:

  • For the chocolate donuts: Preheat the oven to 375 degrees F.
  • Spray a 12-cavity donut pan with cooking spray and set it aside.
  • Whisk together the flour, granulated sugar, cocoa, salt, baking powder and baking soda in a large bowl. Whisk together the coffee, buttermilk, oil, vanilla and egg in a separate medium bowl until combined. Add the wet ingredients to the dry ingredients and mix to combine.
  • Transfer the batter to a piping bag. Fill each cavity with batter until it comes about three-quarters of the way up the sides of the pan.
  • Bake until a toothpick inserted into a donut comes out clean, about 12 minutes. Cool the donuts in the pan for 5 minutes, then remove to a rack and cool completely.
  • For the coffee glaze: Mix together the confectioners' sugar, coffee and milk in a bowl until smooth. If it seems too thick, add more coffee little by little.
  • Dip each donut halfway into the glaze, then allow excess to drip off. Sprinkle the tops with hazelnuts and sprinkles. Let set, about 30 minutes.

⅓ cup granulated sugar
¼ cup unsalted butter, melted*
⅓ cup creamy almond butter**
1 teaspoon vanilla extract
⅓ cup + 1 tablespoon unsweetened cocoa powder
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon fine salt
⅓ cup powdered sugar
2 tablespoons unsweetened cocoa powder
½ teaspoon vanilla extract
2-3 teaspoons milk*
2-3 tablespoons of desired topping, such as crushed almonds, shredded coconut, sprinkles, or crushed freeze-dried strawberries (optional)

Steps:

  • Preheat the oven to 350 degrees. Spray a 6-count donut pan with cooking spray (see note about pans below).
  • In a medium bowl, whisk together the eggs, sugar, melted butter (cooled slightly before adding to the bowl), almond butter, and vanilla.
  • Sift in the cocoa powder, baking powder, and baking soda. Add the salt and mix well.
  • Divide the batter among the 6 donut cavities in the prepared pan, smoothing the tops with a spoon or your finger.
  • Bake for 12-15 minutes or until toothpick inserted into a donut comes out clean.
  • Remove from the oven and let cool the donuts cool at least 10 minutes before removing from the donut pan.
  • In a small bowl, sift together the powdered sugar and cocoa powder.
  • Add the vanilla and 2 teaspoons milk of choice; stir. Add additional milk, just one teaspoon at a time, until a glaze reaches desired consistency.
  • To top the donuts with glaze, turn a donut upside down and dip the top side into the chocolate glaze, smoothing with a spoon if needed. Place glaze-side-up on a cooling rack. Sprinkle one half of the donut with crushed almonds or desired toppings. Let chocolate glaze set before serving.

Reminiscent of churros and chocolate, these fluffy doughnut holes are best served warm because of the molten chocolate filling. You could, of course, use a stand mixer to prepare the dough, but it's better done by hand since the mixer will have trouble blending such a small amount. Don't worry when you first add the butter pieces and they smear around without incorporating. The butter will be evenly distributed by the time you finish kneading the dough. Chocolate fèves or discs make easy work of filling the doughnuts, but if you can't find them, feel free to use your favorite chips or chopped chocolate.

6 tablespoons warm whole milk (about 110 degrees)
2 teaspoons active dry yeast
2 tablespoons plus 1/2 teaspoon granulated sugar
1 3/4 cups/225 grams all-purpose flour, plus more for dusting
1/2 teaspoon kosher salt
1 large egg, at room temperature
3 tablespoons diced unsalted butter, at room temperature, plus more for the bowl
1/3 cup/55 grams bittersweet chocolate fèves, chips or coarsely chopped chocolate
1 quart/945 milliliters vegetable oil, for frying
1/2 cup/100 grams granulated sugar
1/4 teaspoon ground cinnamon

Steps:

  • Make the dough: In a small bowl, combine the milk, yeast and 1/2 teaspoon sugar. Set aside until foamy, about 5 minutes.
  • In a large bowl, whisk together 2 tablespoons sugar with the flour and salt. Stir in yeast mixture and egg, and knead it in the bowl a few times to incorporate the liquid. Tip the dough onto a work surface and knead it until smooth and elastic, about 3 minutes. Add the butter, a bit at a time, and continue to knead the dough until the butter is fully incorporated and the dough is smooth, another 5 minutes. The dough will be sticky.
  • Gather the dough into a neat ball. Grease the inside of a large bowl with butter and add the dough. Cover with plastic and set aside to rise in a warm place until doubled, 1 to 2 hours. (After the dough has doubled, you can punch it down, wrap it well and refrigerate it for up to 2 days.)
  • Tip the dough onto a very lightly floured surface and pat the dough out into a 7-by-4 inch rectangle. (You can work with the dough directly from the refrigerator if it has been chilled.) Divide the dough into 14 even pieces using a bench scraper or a knife and slightly flatten each. Add 1 chocolate fève or about 1 teaspoon of chocolate to the center of each piece of dough, wrap and pinch the dough to enclose the chocolate, and roll it into a neat ball. Transfer the dough pieces to a floured rimmed baking sheet. Cover loosely with plastic wrap and set aside to rise in a warm place until doubled, about 1 hour.
  • Line a rimmed baking sheet with two layers of paper towels. Clip a candy thermometer to the edge of a large pot. Heat the oil over medium-high until it reaches 350 degrees.
  • As oil heats, make the cinnamon-sugar mixture: Mix 1/2 cup sugar with the cinnamon in a large bowl.
  • Working one at a time, carefully transfer dough to a spider or slotted spoon without deflating it. Then transfer the dough to the hot oil. Add up to 4 pieces of dough at a time. Maintain the temperature of the oil by increasing or lowering the heat as necessary, and allow the oil to return to temperature between batches. Cook the doughnuts until golden brown, about 2 minutes per side, then using the spider, transfer the doughnuts to the prepared sheet.
  • Repeat with the remaining dough. Toss the warm doughnuts in the cinnamon-sugar mixture and serve immediately.

Steps:

1/2-ounce dry yeast (2 (1/4-ounce) packages)
1/3 cup warm water
1/4 cup sugar
3/4 cup all-purpose flour
1/2 cup cake flour
1/4 cup cocoa powder
3/4 teaspoon baking soda
1/4 cup hot water
3 ounces semisweet chocolate, melted
1/4 cup powdered sugar
1/2 teaspoon salt
6 ounce baking potato, like russets, cooked, peeled and riced
Chocolate glaze, recipe follows
Canola oil, for frying
4 ounces semisweet chocolate, chopped
1/2 cup cream

Steps:

  • In a bowl, combine yeast, warm water and sugar to dissolve. Add 1/4 cup of the all-purpose flour and 1/4 cup of the cake flour. Stir and set in a warm place for 30 minutes to foam up. Combine cocoa powder and baking soda and add hot water to dissolve. Add the melted chocolate to the cocoa powder mixture then stir in the powdered sugar, salt, and potato. Add this to the foamed yeast along with another 1/4-cup of all-purpose flour and the remaining 1/4-cup of cake flour and mix on low to combine with a paddle.
  • Mix on high speed for 30 seconds to combine. Add the remaining 1/4-cup of all-purpose flour and mix on high speed. Flour the work surface heavily and knead the dough gently (it may be sticky). Turn into a greased bowl and proof until doubled in bulk, about 1 1/2 hours. Turn dough out onto a floured surface and punch down then proof for another 30 minutes.
  • Flour work surface heavily and pat out dough to about 1/2-inch thick. Cut out doughnuts and holes, flouring the cutter each time, and set on a floured sheet pan. Heat oil to 375 degrees and drop in doughnuts and holes. Cook doughnuts for 45 to 60 seconds and the holes for 30 seconds, flipping once. Drain on a paper towel-lined sheet pan.
  • Place the chopped chocolate in a bowl. Boil the cream and pour it over the chocolate and let sit, whisking to combine. Keep warm. Dip doughnuts in chocolate glaze when cooled.

Steps:

  • For the doughnuts: Position an oven rack in the center of the oven and preheat to 350 degrees F.
  • Spray a doughnut pan lightly with nonstick spray. In a medium bowl, combine the flax meal and 2 tablespoons water, and let stand for 2 minutes to thicken. Add the almond milk, grapeseed oil, agave and vanilla, and whisk to combine.
  • In another medium bowl, combine the cake flour, cocoa powder, baking powder, baking soda and salt, and whisk to incorporate. Add the flour mixture to the almond milk mixture and whisk together until the dry and wet ingredients are well combined. Stir in the chocolate chips with a spoon or spatula. Use a small cookie scoop or spoon to drop 2 to 3 heaping tablespoons of the batter into each doughnut mold, filling the molds two-thirds full.
  • Bake the doughnuts until puffed and a toothpick inserted into the center comes out clean, 10 to 12 minutes. Allow to cool slightly while you make the glaze.
  • For the chocolate glaze: Melt the chocolate chips in a microwave in 30-second intervals or over a double boiler. Stir in the grapeseed oil until the chocolate is smooth. Dip each doughnut, top-side down, into the glaze; allow excess glaze to drip off, then decorate with sprinkles.
  • Chill the doughnuts in the refrigerator for 30 minutes to allow the glaze to set.

I'm showing you how to make gluten-free, grain-free, low-carb, high-protein donuts that are healthy enough to eat for breakfast, without all the guilt and shame. You might think "that sounds great, but they must taste terrible like all 'healthy' donuts," but that's the thing--they don't! They taste really good, especially if they're covered in chocolate. These donuts may be topped with melted dark chocolate and garnished with toasted coconut, chopped almonds, or dark chocolate chips if desired.

nonstick vegetable oil cooking spray
2 large eggs
2 tablespoons vegetable oil
3 tablespoons maple syrup
1 ¼ cups finely ground almond flour
1 ½ teaspoons baking powder
½ teaspoon kosher salt
2 tablespoons Dutch-process cocoa powder

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Generously spray or brush a nonstick donut pan with cooking spray; set aside until needed.
  • Place eggs, vegetable oil, and maple syrup into a mixing bowl and whisk thoroughly until the mixture is emulsified, light, and a little bit foamy, 3 to 4 minutes. Add almond flour, baking powder, salt, and cocoa powder; mix everything together thoroughly with a spatula until all the almond flour is incorporated and you've achieved a very thick batter.
  • Transfer batter into a pastry bag, or a plastic zip-top bag with one of the corners cut off. Pipe the batter evenly into the prepared donut pan.
  • Dip a finger in water and smooth the tops of the batter to even out. Tap the pan on a work surface a few times to settle the batter even more.
  • Bake in the center of the preheated oven until a wooden skewer inserted into a donut comes out clean, 9 to 10 minutes. Let cool in the pan for 10 minutes before inverting onto a wire cooling rack. Cool completely before serving.

  • Add chopped chocolate to a microwave proof bowl and place in microwave for 1 minute, or until melted (check at 1 minute, stir, and return to microwave if needed in 20 second intervals until melted).
