Vegetable oil, for greasing the pan
1/2 pound (2 sticks) unsalted butter
12 ounces bittersweet chocolate, such as Lindt, broken in bits
1 teaspoon instant coffee powder
1 cup sifted confectioners' sugar
1/3 cup unsweetened cocoa powder, such as Pernigotti
8 extra-large egg yolks, at room temperature
1 tablespoon Cognac or brandy
Pinch of kosher salt
3 extra-large egg whites, at room temperature
1 tablespoon granulated sugar
1/2 cup cold heavy cream
1 teaspoon pure vanilla extract
Orange Sauce, recipe follows
Freshly grated orange zest, for serving
Fleur de sel, for serving
4 extra-large egg yolks, at room temperature
1/2 cup sugar
1 teaspoon cornstarch
1 3/4 cups scalded whole milk
1 teaspoon pure vanilla extract
1 1/2 teaspoons Cognac or brandy
1 tablespoon Grand Marnier liqueur
1/4 teaspoon grated orange zest

Steps:

  • Lightly oil an 8 1/2-by-4 1/2-by-2-inch loaf pan and line it as neatly as possible with plastic wrap, allowing the ends to drape over the sides. (I lay two pieces of plastic wrap crosswise in the pan, overlapping in the center.) Place the pan in the freezer.
  • Place a large heatproof bowl over a pan of simmering water. Place the butter in the bowl, then the chocolate and coffee powder and heat until just melted, stirring occasionally with a rubber spatula. As soon as the chocolate and butter are melted, take the bowl off the heat and whisk in, one at a time, and in order, first the confectioners' sugar, then the cocoa powder, egg yolks, Cognac and salt. Set the bowl aside for 15 minutes to cool.
  • Place the egg whites and granulated sugar in the bowl of an electric mixer fitted with the whisk attachment and beat on high speed until the whites form firm but not dry peaks. Fold the whites into the cooled chocolate mixture with a rubber spatula.
  • Without cleaning the bowl or whisk attachment, pour the cream and vanilla into the bowl and beat on high speed until it forms firm peaks. Fold the cream carefully but thoroughly into the chocolate mixture. Pour into the prepared loaf pan, smooth the top, fold the plastic wrap over the top and chill for 4 hours or overnight.
  • To serve, turn the terrine out of the mold and unwrap it. Spoon a puddle of Orange Sauce in the middle of each dessert plate and place a slice of the terrine in the middle. Sprinkle each serving lightly with orange zest and fleur de sel.
  • Beat the egg yolks and sugar in the bowl of an electric mixer fitted with the paddle attachment on medium-high speed for 3 minutes, until very thick. Reduce to low speed and mix in the cornstarch.
  • With the mixer still on low, slowly pour the hot milk into the egg mixture (I use a liquid measuring cup for pouring). Pour the mixture into a clean, small, deep saucepan and cook over medium-low heat, stirring constantly with a wooden spoon, until it reaches 180 degrees F on a candy thermometer and thickens to the consistency of heavy cream. The mixture will coat the spoon. Don't cook it above 180 degrees F or the eggs will scramble! Immediately (it will keep cooking in the saucepan), pour the sauce through a fine-mesh sieve into a bowl and stir in the vanilla, Cognac, Grand Marnier and orange zest. Cover and chill.

One 9-ounce package chocolate wafer cookies
1/4 cup sugar
1 stick (8 tablespoons) unsalted butter, melted
One 3.6-ounce box dark chocolate instant pudding mix
6 cups heavy cream
One 3.7-ounce box chocolate instant pudding mix
One 3.9-ounce box white chocolate vanilla bean instant pudding mix
Dark chocolate shavings, for topping

Steps:

  • Line three 9-inch cake pans with foil, leaving about a 2-inch overhang on all sides. (See Cook's Note.)
  • Add the cookies and sugar to the bowl of a food processor and pulse to fine crumbs. Drizzle in the butter and pulse until the crumbs are completely coated and moistened with the butter. Firmly press the crumb mixture into the bottom of one of the prepared pans; set aside.
  • Add the dark chocolate pudding mix to a large bowl and whisk in 2 cups of the heavy cream. Continue whisking until light and fluffy, about 2 minutes. (It's fine if there are still a few granules in the mix; they will dissolve once set.) Pour the pudding mixture on top of the crumb crust and spread until even. Freeze until firm, about 2 hours.
  • Meanwhile, clean out the bowl, add the chocolate pudding mix and whisk in 2 cups heavy cream. Continue whisking until light and fluffy, about 2 minutes. Pour into another prepared pan and freeze until firm, about 2 hours.
  • Clean out the bowl again, then add the white chocolate pudding mix and whisk in the remaining 2 cups heavy cream. Continue whisking until light and fluffy, about 2 minutes. Pour into the third prepared pan and freeze until firm, about 2 hours.
  • When all 3 layers are completely frozen, use the foil to lift out the cakes from the pans. Place the dark chocolate layer crumb-side down on a cake stand or large plate. Top with the chocolate layer and then with the white chocolate layer. Refrigerate until the layers are thawed and the cake is set, about 8 hours and up to overnight.
  • Before serving, run a hot knife around the outside of the cake to smooth it and sprinkle the top with the chocolate shavings.

  • Heat oven to 375ºF.

12 ounces semisweet chocolate
1/2 pound butter
5 egg yolks
2 tablespoons cognac
5 egg whites
1/2 cup sugar
1 cup heavy cream
1 cup unbleached white flour
1 cup cocoa
12 eggs
1 1/2 cups sugar
1 teaspoon vanilla
1 pound semisweet chocolate
1 cup cream, approximately
1/2 pound semisweet chocolate

Steps:

  • Preheat oven to 350 degrees.
  • Butter and flour two 10 inch-by-15-inch jelly-roll pans.
  • To make the mousse, melt chocolate and butter over hot water, beat egg yolks into chocolate and butter, and add cognac.
  • Beat egg whites to soft peaks and add sugar slowly. Continue to beat till stiff but not dry. Add stiffly beaten whites to chocolate mixture and beat together with a whisk.
  • Whip cream almost to stiff peaks and fold into chocolate mixture. Chill for at least one hour.
  • To make the sponge cake, sift flour and cocoa twice. Whisk together eggs and sugar over simmering water until sugar begins to dissolve and mixture is warm. Add vanilla.
  • Whip at high speed until thick and light, and mixture forms a ribbon when poured from a spoon.
  • Sift one-third of the dry ingredients over the eggs and sugar, and fold in with a rubber spatula until combined. Repeat with remaining flour and cocoa, one third at a time.
  • Divide the batter equally between the two pans and bake until cake tester is clean in the center, or about 20 minutes. Remove from oven and cool.
  • When cake has cooled, cut the sponge cake to line completely a pate mold or a straight-sided bread pan, about three inches by four inches by 10 inches. Cut each piece slightly larger than the pan. Simply press the fresh cake against the bottom and sides of the pan, making sure the corners and seams are sealed with cake. Chill until ready for filling. Save the scraps for later use; you should have two pieces large enough to use as layers inside the terrine.
  • To make the ganache, chop chocolate into coinsize pieces. Bring one cup of the cream to a boil and pour over chocolate. Stir until chocolate is completely dissolved and ganache is smooth and shiny.
  • To assemble, fill chocolate terrine with alternating layers of chocolate mousse, ganache and a sheet of chocolate sponge cake, ending with chocolate sponge cake to form a cover and seal the terrine, reserving enough chocolate ganache to cover the outside. This will come later. Rap the pan sharply several times while assembling and again afterwards. Allow the terrine to chill overnight.
  • To make chocolate curls, melt the semisweet chocolate slowly over hot water, making sure the bottom of the bowl does not touch the water. When completely melted, spread the chocolate about one-eighthinch thick on a baking sheet with a metal spatula. Chill completely.
  • When chilled, remove from refrigerator and let chocolate begin to warm. Holding the metal spatula at a 45-degree angle to the baking sheet, begin to move the spatula across the sheet, loosening the chocolate. If the chocolate has reached the proper temperature, it will slide up the spatula as you move along the sheet, curling as you go. If it cracks, it is too cold. Let it warm up and try again. If it sticks to the spatula, it is too warm. Regrigerate for a moment or two. Refrigerate the curls.
  • When the terrine has chilled thoroughly, turn it out by placing an appropriate-size platter (a rectangular bread board will do) upside down on top of the terrine. Then turn it over. The terrine should drop right out. If it does not, let it sit on the platter, and tap the top and sides with the heel of your hand.
  • Remelt the remaining ganache over hot water, stirring occasionally until smooth and shiny again. If it seems too thick to pour, add several tablespoons of cream.
  • Starting at one end and moving toward the other, pour the ganache over the terrine, letting it run down the sides. Smooth the sides and top with a narrow frosting spatula and let the terrine set in the refrigerator for several minutes.
  • Garnish the entire terrine with curls in any way you like. The curls will stick to the ganache. Refrigerate until one-half hour to one hour before serving.

James's take on a classic chocolate marquise has a silky-smooth layer of white chocolate sandwiched in the middle

200g white chocolate , broken into pieces
568ml pot double cream
300g dark chocolate , broken into pieces
2 large egg whites

Steps:

  • Brush a 2lb loaf tin (about 22 x 11 x 6cm) with oil, line completely with cling film (the oil will help it to stick to the sides), then line the base with a strip of baking parchment. Gently melt the white chocolate in a heatproof bowl over a pan of barely simmering water, then remove from the heat and leave to cool a little. Using an electric whisk, beat in 200ml of the cream until the mixture is just holding its own shape. Set aside while you make the dark layer.
  • Melt the dark chocolate as you did the white, then remove from the heat and cool for 1 min. Little by little, stir the remaining cream into the melted chocolate until you have a smooth, thick ganache. Whisk the egg whites to soft peaks, stir a third into the ganache to loosen it, then fold in the rest.
  • To assemble, spoon just under half of the dark mixture into the loaf tin and smooth the surface. Spoon over the white chocolate and smooth, then gently spoon the remaining dark chocolate mixture over the top, being careful not to disturb the white layer, again smoothing the surface. Cover and chill for at least 2 hrs. If you're making the terrine the day before, let it sit at room temperature for 1 hr before serving.
  • To serve, turn the tin upside down onto a serving plate and use the edges of cling film to ease out the terrine. Remove the cling film and baking parchment and serve with the Star anise biscuits (see Goes well with, right).

50g 70% plain chocolate , broken into pieces
50g butter
1tbsp golden syrup
200g Hob Nobs
200g 70% plain chocolate , broken into pieces
200g milk chocolate (at 30% cocoa solids), broken into pieces
4 eggs , separated
300ml whipping cream
3 x 150g punnets raspberries

Steps:

  • For the base, melt the chocolate with the butter and golden syrup in a bowl over barely simmer watering or on a low heat in the microwave.
  • Put the biscuits in a bag and crush with a rolling pin until they reach a crumb consistency. Combine the two and spread over the base of a 23cm springform tin. Refrigerate for about an hour to set.
  • For the mousse, melt the remaining plain chocolate and the milk chocolate together in the same way and allow to cool until lukewarm. Using an electric beater, whisk the eggs whites in one bowl to stiff peaks. Softly whip the whipping cream in another bowl until thickened but not as far as soft peaks.
  • Stir the egg yolks into the chocolate, then beat the cream into the mixture - a balloon whisk is good for this. Work quickly if the chocolate looks like it might be becoming grainy. Gently fold in the eggs whites with a whisk, spread the mixture over the biscuit base and return to the fridge overnight.
  • Release from the tin and decorate with concentric circles of raspberries and serve.

EASTER CHOCOLATE MOUSSE CAKE

3 medium egg yolks (weighing 60g)
100g golden caster sugar
3 medium egg whites (weighing 60g)
25g cocoa powder
4 medium egg whites (80g)
25g golden caster sugar
140g dark chocolate (70% cocoa solids)
25g cocoa powder
1 medium egg yolk (20g)
100g golden caster sugar
1 tsp cocoa powder
35g butter
35g dark chocolate (100% cocoa solids, I used Willie's)
25g liquid glucose
140g dark chocolate , very finely chopped (70% cocoa solids)
100g granulated sugar
50g liquid glucose
zest and juice 1 lemon
100ml whipping cream
white chocolate feathers and spun sugar nest, and a decorative egg (I use a blown sugar egg, but you could use a shop-bought chocolate egg, if you like)
18cm cake or pastry ring (4.5cm high, available from amazon.co.uk)
acetate roll (6cm wide x 40cm long, available from amazon.co.uk)
food thermometer or temperature probe
large and small palette knives

Steps:

  • Heat oven to 180C/160C fan/ gas 4. Line a baking sheet with baking parchment and sit the cake ring on top. Put the egg yolks in a large bowl. Whisk the egg whites with the sugar in a separate bowl, or a mixer, until stiff peaks form.
  • Once stiff, use a large metal spoon to stir one-quarter of the whites into the yolks, then pour the mixture back into the remaining egg whites, and gently fold to combine. Sieve in the cocoa powder and gently fold again until just combined.
  • Pour into the cake ring and level out with a spatula or spoon. Bake for 15-20 mins or until a skewer inserted into the centre comes out clean. Leave to cool in the ring - the middle will sink.
  • Once the cake has cooled, slide a knife around the inside of the ring to release the cake and lift the ring off. Trim the edge of the cake with scissors. Clean the ring and place it back around the sponge on a cake board, or on a cake stand.
  • Boil the kettle. In a large clean bowl, or a freestanding mixer, whisk the egg whites and sugar until medium peaks form.
  • Set a bowl over a pan of gently simmering water and melt the chocolate to around 50C. In a separate bowl, whisk 50ml hot water with the cocoa powder, then add the yolks. Tip onto the melted chocolate, but don't stir it in yet.
  • Briskly whisk one-quarter of the egg whites into the melted chocolate and egg yolk mixture - this ensures that the mousse has an even texture. Use a spatula to fold in the remaining egg whites until fully combined.
  • Pour the mousse onto the sponge, then chill for at least 2 hrs or up to 24 hrs. Meanwhile, make the chocolate croustillant, white chocolate feathers and spun sugar nest, if using (see opposite).
  • Melt half the chocolate in a bowl over gently simmering water. Once melted, stir in the remaining chocolate, then remove from the heat. Leave to cool for 5 mins. Using a palette knife, spread the chocolate across the acetate band in a thin, even layer to cover. Leave to set for 1-2 mins.
  • Lift off the cake ring, then wrap the acetate around the cake so that the chocolate touches the mousse. Stick it tightly and hold for a second to make sure it stays in place - don't worry if it overlaps a little. Chill for 30 mins. Meanwhile, make the butterscotch sauce (see opposite).
  • To assemble the cake, remove from the fridge and peel off the acetate carefully, breaking off any overlapping chocolate.
  • Spoon half the lemon butterscotch sauce over the mousse, then top with the spun sugar nest and chocolate feathers, if using. Add the shards of broken chocolate croustillant and a decorative egg, if you like. Serve within 1 hr with the remaining sauce on the side.
  • Melt 50g chopped white chocolate in a bowl over a pan of gently simmering water. Use a small palette knife to spread a thin layer of the chocolate on a piece of baking parchment in a feather shape. You can set the parchment on the inside of an upturned cake tin to set the chocolate feather in a curved shape, if you like. Once set, peel off the parchment and use a small knife to notch the edges to give them a feathery effect.
  • Fill the sink with cold water and cover an area of your work surface (about 1m x 50cm) with baking parchment or cling film. Put 150g fondant icing and 20g liquid glucose in a saucepan over a medium heat. Cook until the fondant melts, then increase the heat and bubble until it turns to a deep caramel. Quickly cool down the pan by dipping the base in the cold water in the sink, but make sure no water splashes into the pan. This should stop the sugar from cooking and thicken the caramel slightly. Using 2 forks, pull strands of caramel from the pan, and flick them quickly from a height over your covered work surface to create multiple thin sugar threads. Keep going until you have a large mass - enough to make a nest. If the caramel starts to set, put it back on the heat to soften it a little. Use your hands to shape the sugar threads gently into a loose cylinder, then wrap into a nest shape. Will keep for a couple of days in a cool, dry container. If it comes into contact with any moisture or heat, it will dissolve.
  • Heat oven to 180C/160C/gas 4. Mix the sugar and cocoa in a bowl. In a small saucepan, gently melt the butter with the chocolate and glucose over a gentle heat. Once melted, whisk in the sugar and cocoa powder mixture and 50ml cold water. Bring to the boil and cook for 30 secs-1 min until slightly thickened.
  • Spread a third of the mixture onto a piece of baking parchment on a baking sheet. Lay another piece of parchment on top and, using a rolling pin, roll out the croustillant as thin as possible. Set in the freezer for 5 mins until the top sheet of parchment peels off easily. Repeat with the rest of the mixture, or freeze for another day.
  • Peel off the top layer of parchment and bake in the centre of the oven for 5 mins. When it is bubbling, it's cooked. Cool completely before breaking into large pieces.
  • In a saucepan, combine the sugar, liquid glucose and 1 tbsp water. Set over a gentle heat until the sugar dissolves, but do not stir. Once dissolved, bring to the boil and cook until the sugar syrup turns into a caramel and is lightly golden. Warm the lemon zest and juice in the microwave on High for 1 min, then heat the whipping cream in a separate bowl in the microwave on High for 2 mins. Once the caramel is golden, pour in the lemon and cream. Boil for 30 secs, then set aside to cool. Chill in the fridge, covered with cling film, until needed

This is really very simple, and will impress anyone you serve it to. It tastes incredible, and it can be made up to a month ahead of time. I once served 1000 servings of this, with both raspberry and chocolate sauce, to a dinner party, and my clients were thrilled. The mousse recipes are from one of my pastry-chef heros, Alice Medrich - she's a genius, and these mousses can be used seperately as cake fillings, too.

6 ounces bittersweet chocolate, chopped
1 teaspoon instant espresso, dissolved in water
2 tablespoons water
2 tablespoons dark rum
1 large egg yolk
2 large egg whites, room temperature
1 dash cream of tartar
1 tablespoon sugar
1/4 cup heavy cream
4 1/2 ounces milk chocolate, chopped
2 teaspoons instant coffee, dissolved in water (not freeze-dried)
2 tablespoons water
3/4 cup heavy cream
4 1/2 ounces white chocolate, chopped
3/4 cup heavy cream

Steps:

  • Since the flavor of these layers depends entirely on the chocolate, please use the best brand you can afford- I like Callebaut, but you can also use Lindt, Tobler, Valrhona or Ghiardelli.
  • Using a standard loaf pan, line it with plastic wrap so that the plastic extends beyond the sides of the pan by at least 3 inches on each side.
  • For the dark chocolate layer: melt the chocolate, espresso, and rum in the microwave on 50% power for about 2 minutes.
  • Stir until smooth.
  • Whisk in the yolk and mix well.
  • Set aside.
  • Whip the whites and cream of tartar until soft peaks form.
  • Sprinkle in the sugar, beating on high until stiff, but not dry.
  • Fold a quarter of the whites into the chocolate to lighten it, then scrape the remaining whites on top of the chocolate and set aside.
  • Beat the cream until it holds it shape (not stiff) then scrape on top of the whites.
  • Fold everything together gently until no streaks of white appear.
  • Turn the mousse into your prepared mold, spreading until it is an even layer.
  • Place in the freezer.
  • Make the milk chocolate layer: melt the chocolate and coffee in the microwave on 30% (low) power for about 2 minutes.
  • Stir until smooth and completely melted.
  • (Milk chocolate burns very easily. Do not attempt to melt it at a higher temperature.) Set aside to cool slightly.
  • Whip the cream until soft peaks form- not too stiff.
  • Fold very carefully into the milk chocolate- it will seem very soft.
  • Scrape on top of the dark chocolate layer, smoothing to an even layer.
  • Put in the freezer.
  • Make the white chocolate layer: place the chocolate and 2 tbl.
  • water in a heatproof bowl.
  • Microwave on low (30% power) for about 2 minutes.
  • Stir until very smooth and completely melted.
  • Let cool slightly.
  • Whip the cream until soft peaks form- not too stiff.
  • Fold very carefully into the chocolate- it, too, will seem very soft.
  • Scrape on top of the milk chocolate layer, smoothing to an even layer.
  • Now- gently, gently tap the pan a couple of times on the counter to allow all the layers to settle against one another.
  • Carefully wrap the excess plastic up over the mousse.
  • Put the entire thing in the freezer for at least 4 hours, preferably overnight.
  • It also freezes well for a month prior to serving.
  • To serve: Take the pan from the freezer, and set in a pan of hot water for 10 seconds.
  • Carefully unwrap the plastic from the top, then unmold onto a cutting board, pulling on the plastic wrap to help release it.
  • Peel the plastic from the mousse and discard.
  • Slice the mousse into 8 slices (this is done more easily with a knife you run under hot water then wipe dry quickly and cut while the knife is still warm) and carefully arrange on individual plates.
  • Serve immediately.
  • Serving suggestions: raspberry sauce and a few berries and a sprig of mint, or be really decadent and serve it with a drizzle of hot fudge sauce and a sprig of mint or both.

175g unsalted butter, softened, plus extra for the tin
175g golden caster sugar
3 large eggs
50g cocoa powder
100g self-raising flour (or same quantity plain flour with 1 tsp baking powder)
1-2 tsp milk
50g dark chocolate (or milk chocolate if you prefer)
85g unsalted butter , softened
175g icing sugar, sieved

Steps:

  • Heat oven to 190C/170C fan/gas 5. Butter and line two 20cm sandwich tins with baking parchment.
  • Use a handheld electric whisk or a freestanding mixer to beat 175g softened unsalted butter and 175g golden caster sugar together in a bowl until creamy and light in colour. Then add 1 large egg, still mixing.
  • Sieve 50g cocoa powder, 100g self-raising flour and a pinch of salt into another bowl and add a third of that to your wet ingredients.
  • Once combined, add 1 more large egg and another third of the flour mixture and work that in.
  • Then add 1 more large egg and the remaining flour and beat until you have a smooth thick batter. If the batter is stiff, stir in a splash of milk to loosen it.
  • Divide the mixture between the tins and smooth the top with the back of a spoon.
  • Bake for 20-25 mins until springy to the touch. Take out of the oven and leave in the tins for 10 mins before turning out onto a wire rack to cool completely.
  • Meanwhile, make the buttercream by melting 50g dark or milk chocolate in the microwave, or in a bowl over just simmering water, making sure the base doesn't touch the water. Leave to cool.
  • Beat 85g softened unsalted butter and half of the 175g sieved icing sugar together until light and fluffy. Add the remaining icing sugar and melted chocolate and mix together. If the icing is runny, chill in the fridge until it is firm but still spreadable.
  • To assemble the cake, put a small dollop of icing onto a plate and put one of the cakes on top. Spread the top of the cake with half the icing, leaving a 1cm border around the edge.
  • Put the second cake on top and push down very gently. Spread the remaining icing over the top.

425ml double cream
75g each good-quality milk, white, plain chocolate , broken into pieces
6 eggs , separated into 2-egg batches
75g caster sugar
50g plain chocolate , melted
icing sugar , single cream, chocolate curls

Steps:

  • For a 1.2 litre terrine, cut a strip of greaseproof paper as long as the tin and wide enough to cover the bottom and come up both long sides, with about 7.5cm to spare. Put the paper in the tin as if to line it, then draw a line across the paper on both sides where it meets the bottom edge, and the top edge, of the tin. Take the paper out of the tin and draw two lines at equal intervals between the bottom and top edge lines you have already drawn. (This will help you make each layer exactly the same depth when filling the tin.) Lightly grease the paper and use to line the tin.
  • Whip a third of the cream to just soft peak stage, then chill. Melt the milk chocolate in a heatproof bowl set over a pan of simmering water or microwave on High for 2 mins. Whisk 2 egg yolks and 25g/1oz sugar in a heatproof bowl over a pan of simmering water with a hand-held electric blender for about 2-3 mins until the mixture has at least doubled in volume. Once you have reached this stage, remove the bowl from the heat and keep whisking, adding the melted chocolate - this not only incorporates the chocolate, but also cools the mixture more quickly. Leave to cool for a few minutes, then carefully fold in the whipped cream.
  • Quickly whisk two egg whites into soft peaks, making sure the bowl and whisk are spotless to ensure the maximum volume is obtained. Using a large metal spoon, carefully fold the egg white into the chocolate mixture so you don't knock out too much air.
  • Pour mixture into the terrine, filling it to first mark (any extra can be frozen), then freeze for 20-30 mins before starting the white chocolate mixture. Repeat process with white chocolate, then the plain; cover with plastic film and freeze completely. To guarantee a good set, make terrine at least 8-10 hrs or up to 2 days before.
  • Dip the tin briefly in a large bowl of hot water. Put a chopping board or flat plate on top and invert the mousse. Gently remove the paper and open freeze for about 10 mins to re-set. To decorate, pipe an outline of melted plain chocolate in a teardrop shape onto each plate. Dust the plates lightly with icing sugar, then carefully fill the teardrop with cream. Slice the mousse, wiping the knife after each cut, and put a slice on each plate. Decorate with chocolate curls and serve at once.
