If you love chocolate, try flavorful chocolate sugar cookies instead of regular sugar cookies. This is an easy recipe and they're so fun to decorate! Chilling is the most important step, so don't skip it.

1 and 1/2 cups (188g) all-purpose flour (spoon & leveled)
3/4 cup (62g) unsweetened natural cocoa powder (or dutch process), plus more as needed for rolling and work surface
1 teaspoon baking powder
1/8 teaspoon salt
3/4 cup (1.5 sticks or 172g) unsalted butter, softened to room temperature
1 cup (200g) granulated sugar
1 large egg, at room temperature
1 teaspoon pure vanilla extract
Royal Icing or Easy Glaze Icing (royal icing is pictured)
Assorted sprinkles

Steps:

  • Whisk the flour, cocoa powder, baking powder, and salt together in a medium bowl. Set aside.
  • In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter and sugar together on high speed until completely smooth and creamy, about 2 minutes. Add the egg and vanilla and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
  • Add the dry ingredients to the wet ingredients and mix on low until combined. Dough will be soft. If the dough seems too soft and sticky for rolling, add 1 more Tablespoon of flour.
  • Divide the dough into 2 equal parts. Dust 2 large pieces of parchment paper or 2 silicone baking mats with cocoa powder (or flour). Place a dough half on each. With a rolling pin lightly dusted with cocoa powder (or flour), roll the dough out to about 1/4-inch thickness. Use more cocoa powder/flour if the dough seems too sticky. The rolled-out dough can be any shape, as long as it is evenly 1/4-inch thick.
  • Lightly dust one of the rolled-out doughs with cocoa powder or flour. Place a piece of parchment on top. (This prevents sticking.) Place the 2nd rolled-out dough on top. Cover with plastic wrap or aluminum foil, then refrigerate for at least 1-2 hours and up to 2 days.
  • Once chilled, preheat oven to 350°F (177°C). Line 2-3 large baking sheets with parchment paper or silicone baking mats. Carefully remove the top dough piece from the refrigerator. Using cookie cutters, cut the dough into shapes. Re-roll the remaining dough, using more cocoa powder or flour to lightly dust your work surface and rolling pin, and continue cutting the dough until all is used. Work quickly so the dough doesn't become too warm or soft. If it does, stop what you're doing and place any unused dough back in the refrigerator for 10 minutes to stiffen up again. Repeat cutting into shapes with 2nd half of dough. (Note: It doesn't seem like a lot of dough, but you get a lot of cookies from the dough scraps you re-roll.)
  • Arrange shaped cookies on baking sheets 3 inches apart. Bake for 11-12 minutes or until edges are set. If your oven has hot spots, rotate the baking sheet halfway through bake time. Allow cookies to cool on the baking sheet for 5 minutes and then transfer to a wire rack to cool completely before decorating.
  • Prepare the royal icing or easy glaze icing and decorate the cooled cookies however you'd like. Add sprinkles on top of the icing if desired.
  • Royal icing dries in about 2 hours and easy glaze icing dries in 24 hours. No need to cover the decorated cookies as you wait for the icing to set. If it's helpful, transfer cookies to a baking sheet and place them in the refrigerator to help slightly speed up the icing setting.
  • Enjoy cookies right away or wait until the icing sets to serve them. Once the icing has set, these cookies are great for gifting or for sending. Plain or decorated cookies stay soft for about 5 days when covered tightly at room temperature. For longer storage, cover and refrigerate for up to 10 days.

2 cups all-purpose flour
1 1/4 cups cake flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1 cup (2 sticks) really cold butter, cut into cubes
1 cup granulated sugar
2/3 cup packed brown sugar
2 large eggs, lightly beaten
2 cups dark chocolate chips, such as Ghirardelli
1/2 cup semi-sweet chocolate chunks

Steps:

  • Whisk together the all-purpose flour, cake flour, baking powder, baking soda and salt in a medium bowl.
  • Use a stand mixer or an electric hand mixer to beat the butter, granulated sugar and brown sugar on low speed, about 30 seconds. Add in the eggs one at a time. Add the dry ingredients a little at time and beat to combine. Set aside about 1/4 cup of the dark chocolate chips for the topping, then mix in the remaining dark chocolate chips and semi-sweet chocolate chunks.
  • Portion extra-large balls of dough with a 1-cup ice cream scoop on two baking sheets lined with parchment paper. With the reserved dark chocolate chips, press a few chips right on top of each ball. This will help to get little pools of chocolate. Place 4 to 5 balls of dough on each prepared baking sheet and place in the freezer for at least an hour and up to overnight.
  • When ready to bake, preheat the oven to 375 degrees F. Bake one sheet of cookies at a time, until the edges and spots on top are golden but the insides are still slightly doughy, 15 to 18 minutes.

1 box your favorite brownie mix or from scratch recipe.
FILLING:
1 pt ricotta cheese
1/2 lemon squeezed
1 c pdr sugar
TOPPING:
1 c chocolate fudge pudding, mix according to directions on box. cooked & cooled or (optional) nutella
milk according to pudding directions
1 box fresh strawberries (sliced)

Steps:

  • 1. BROWNIES; Preheat Oven ; in "ROUND (Pam Sprayed) 8" or 9" CAKE PAN" pour in Batter for Brownies. Then Bake your Brownies according to PKG Directions, or Your Favorite Homemade Recipe. COOL. . . COMPLETELY. When Cooled Completely, Remove from Cake Pan, Slice layer in 1/2 . Set aside.
  • 2. FILLING; Mix with Mixer; Ricotta Cheese, Lemon juice, & Powdered Sugar Til Smooth and Creamy. PUDDING MIX; Mix according to BOX directions. COOL Well.

On a lightly floured surface, roll each portion of dough to 1/8-in. thickness. Cut with a floured 4-in. dreidel cutter. Steps:

  • Preheat oven to 375 degrees. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar until light and fluffy, about 2 minutes. Add egg, milk, and vanilla, and beat until well combined. Add reserved flour mixture; mix on low speed until combined.
  • Using a tablespoon or 1 3/4-inch ice cream scoop, drop dough onto ungreased baking sheets, about 2 inches apart. Bake until cookies begin to spread and become firm, 10 to 12 minutes.
  • Remove baking sheets from oven, and place a marshmallow, cut-side down, in the center of each cookie, pressing down slightly. Return to oven, and continue baking until marshmallows begin to melt, 2 to 2 1/2 minutes. Transfer cookies to a wire rack to cool completely before frosting.

My Mom gave me this recipe a long time ago but I've long since taken it over and now it's mine! It's pretty simple to do and tastes wonderful. This is great for potlucks and bar-b-ques... no matter where I take this, I come home with an empty pan. Be sure to allow this to chill for several hours but overnight is best.

Steps:

  • Preheat oven to 375.
  • Melt butter, add flour and 1/2 cup nuts. Mix and press into bottom of 13x9 pan. Bake for 15 minutes.
  • Cream powdered sugar, cream cheese and 1 cup Cool Whip. Spread over cooled crust.
  • Mix instant pudding with milk. Spread over cream cheese layer.

Steps:

  • Preheat oven to 375°F.
  • Combine flour, cocoa, baking powder and baking soda in medium bowl; set aside.
  • Beat butter, brown sugar and 1/2 cup granulated sugar with electric mixer at medium speed until light and fluffy; beat in eggs and vanilla.
  • Gradually add flour mixture and 1/2 cup pecans; beat well.
  • Cover dough; refrigerate 15 minutes or until firm enough to roll into balls.

1 tablespoon canola oil
1 teaspoon vanilla extract
2 large eggs
3/4 cup mini chocolate chips
15 chocolate sandwich cookies (I like Oreo)
Three 8-ounce blocks cream cheese, at room temperature
3/4 cup sugar
2 large eggs
1 teaspoon vanilla extract
12 chocolate sandwich cookies, coarsely chopped
Chocolate sauce, optional, for garnish

Steps:

  • Preheat the oven to 325 degrees F. Coat a 9-by-13-inch baking pan with nonstick cooking spray or shortening and dust with cocoa powder. Set aside.
  • Combine the flour, salt and cocoa powder in a medium bowl. Combine the sugar, melted butter, oil, vanilla and eggs in a large bowl. Add the flour mixture to the butter mixture and stir until combined. Stir in the chocolate chips. Pour the batter into the bottom of the prepared baking pan. Arrange the chocolate sandwich cookies on top of brownie batter, spacing them out evenly.

Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 5 minutes. Add the egg and vanilla; beat until creamy, about 2 more minutes. Reduce the mixer speed to low; gradually add the flour mixture and beat until just incorporated, about 2 more minutes.
  • Divide the dough between 2 sheets of plastic wrap; form into disks. Wrap and refrigerate until firm, at least 1 hour.
  • Roll out the dough between floured sheets of parchment paper until about 1/4 inch thick. Chill 2 more hours.
  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Mist 2 baking sheets with cooking spray. Cut the dough into shapes; gather the scraps and reroll once to cut out more cookies. Arrange 2 inches apart on the prepared baking sheets. Bake, switching the pans halfway through, until set, about 12 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.
  • Make the icing: Beat the confectioners' sugar, meringue powder and 3 to 4 tablespoons water in a bowl with a mixer on high speed until smooth and thick. Transfer to a resealable bag and snip a small corner. Pipe onto the cookies; sprinkle with coarse sugar. Let set 30 minutes.

1/2 cup butter
1/2 cup golden crisco vegetable shortening
3/4 cup light brown sugar, firmly packed
3/4 cup granulated sugar
2 tablespoons pure vanilla extract
2 large eggs
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup cocoa powder
1 1/2 cups hershey miniature semisweet chocolate chips
1 cup hershey milk chocolate chips
1 cup crunchy peanut butter
1/4 cup light brown sugar

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, mix together the first six ingredients using an electric mixer until you have reached a fluffy smooth consistency.
  • Sift in four, baking soda, baking powder and cocoa mixing well until free of any lumps.
  • Add in semi sweet and milk chocolate chips.
  • Cover the bowl with plastic wrap and place in the fridge for at least two hours.
  • The colder the dough the easier it is to manage when it comes time to form the cookies.
  • DO NOT put in freezer!
  • While you are waiting for the dough to chill, now is the time to make that delicious surprise center for the cookies by mixing together the last two remaining ingredients of peanut butter and brown sugar.
  • Remove dough from fridge and let sit a few minutes at room temperature.
  • With a heaping tablespoon of cookie dough form dough balls placing them about two to three inches apart on a non stick or parchment lined baking sheet.
  • NOTE: These cookies are a hearty cookie and do spread out quite a bit during cooking time.
  • In the center of each dough ball make an indentation with your thumb as to create a well.
  • Then fill the well with a heaping teaspoon of the peanut butter brown sugar mixture.
  • So, now you are going to make another dough ball but this time you are going to flatten it as to make a lid for each peanut butter filled cookie bottom.
  • Pinch and press the bottom and top of the cookie edges to seal in the peanut butter surprise so that no filling is visible.
  • (I have often patched up open areas with small dabs of remaining cookie dough.) Some filling may however leak out during baking but those ones can be sampled for qualilty control by the baker later, lol.
  • Bake at 350 degrees for 12 minutes only!
  • Let cookies completely cool on baking sheet before removing them.
  • They may look uncooked at first but allowing them to cool provides additional cooking time on the baking sheet at a decreased temperature.
  • Do not over bake as they burn quickly!
  • I have also added a dollup of grape jelly or strawberry jam on top of the peanut butter mixture.
  • You can also keep the dough in the fridge for up to a week and bake cookies as needed.

  • Toss nuts with flour and work in margarine until well blended. Press into bottom of 9 x 12 pan. Bake at 350°F for 15-20 minutes.
  • Beat half of Cool Whip with cream cheese and Splenda until smooth and creamy. Spread over cooled crust.
  • Whip instant pudding with milk and spread over cream cheese filling. Top with remaining Cool Whip and sprinkle with additional nuts.

1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup chopped walnuts
FROSTING:
9 tablespoons butter, softened
4-1/2 cups confectioners' sugar
1-1/2 teaspoons vanilla extract
6 to 8 tablespoons whole milk

Steps:

  • In a large bowl, cream shortening and brown sugar. Beat in the egg, milk and vanilla. Beat in chocolate until blended. Combine the flour, baking powder, salt and baking soda; gradually add to the creamed mixture. Stir in walnuts. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 11-13 minutes or until firm. Remove to wire racks to cool. , For frosting, in a bowl, cream butter and sugar. Beat in vanilla and enough milk to reach spreading consistency. Frost cooled cookies.
