1 1/3 cups (185g) all-purpose flour
1/4 cup (25g) cocoa powder (I use Dutch-processed)
2 teaspoons baking powder
1/4 teaspoon salt
2 eggs
1/3 cup (65g) granulated sugar
1 cup (240 ml) whole milk
3 tablespoons canola or vegetable oil ((or 45g melted butter))
1 teaspoon pure vanilla extract
1/2 cup (85g) chocolate chips or chunks
butter or oil (, for cooking)
140 g (5 oz.) bittersweet or semisweet chocolate
1/2 cup (120 ml) heavy cream

Steps:

  • In a large bowl, sift together flour, cocoa powder, baking powder, and salt (or whisk well with a whisk). Set aside.
  • In a separate medium bowl, whisk together egg and sugar until well combined. Add milk, oil (or melted butter), and vanilla extract. Pour the wet ingredients into the dry ingredients and stir just until combined and moistened. Do not over mix. Mix in chocolate chips or chunks. Set batter aside and make the chocolate sauce.
  • Chocolate sauce: In a medium heatproof bowl, combine chocolate and heavy cream. Microwave in 20- to 30-second increments, mixing in between, until chocolate is melted and mixture is smooth. Set aside while making the pancakes. I like to pour it over the pancakes while it's warm.
  • Cook the pancakes: Heat a griddle or skillet over medium heat. Coat with butter or oil. For each pancake, drop 1/4 cup of batter onto skillet. Cook 1-2 minutes, until surface of pancakes have some bubbles and the bottom appears to be done. Flip carefully and cook another 1-2 minutes. Transfer to a plate and if you want you can cover the plate loosely with aluminum foil to keep warm. Coat the skillet with butter or oil before every pancake or batch of pancakes to prevent sticking.
  • Serve immediately with chocolate sauce (rewarm sauce in the microwave for a few seconds if needed).

1 cup buttermilk
1 tablespoon oil
1 cup Pancake Mix, recipe follows
Butter or oil, for greasing the pan
2 tablespoons semisweet chocolate chips
1/4 cup sunflower seed butter
6 cups white whole-wheat flour
1/3 cup sugar
2 tablespoons baking powder
1 tablespoon baking soda
2 teaspoons kosher salt

Steps:

  • For the pancakes: Whisk the egg, buttermilk and oil together in a large bowl. Add the Pancake Mix to the wet ingredients and whisk until just combined.
  • Heat a large pan or griddle over medium heat and grease with butter or oil. Pour the pancake mixture onto the griddle in 1-tablespoon portions to make 8 mini pancakes. Cook for 2 minutes. Flip the pancakes and cook for 1 minute more.
  • Place the pancakes on a cooling rack, and allow to cool completely. Repeat with the remaining batter to make 8 more.
  • For the chocolate sun butter: Melt the chocolate chips in a bowl in the microwave until melted, 40 seconds, or in a double boiler, and allow to cool. Stir the sunflower butter into the melted chocolate.
  • Spread 1 tablespoon of the chocolate sun butter on a pancake, and sandwich together with another pancake. Repeat with the remaining ingredients.
  • To freeze for later, place cooled sandwiches on a parchment-lined baking sheet. Freeze until solid, about 1 hour. Transfer to a freezer bag and store for up to 3 months.
  • Whisk together the flour, sugar, baking powder, baking soda and salt in a bowl. Store in an airtight container until ready to prepare pancakes.

2 cups Bisquick™ Original pancake and baking mix
1 1/4 cups milk
3/4 cup creamy peanut butter
2 eggs
2 tablespoons sugar
14 miniature Reese's™ peanut butter cups, unwrapped, halved
1/3 cup chopped dry-roasted peanuts
7 tablespoons Hershey's™ chocolate-flavor syrup

Steps:

  • Heat nonstick griddle or skillet over medium-high heat (375°F); brush lightly with vegetable oil, if necessary. In medium bowl, beat Bisquick™ mix, milk, 1/2 cup of the peanut butter, the eggs and sugar with whisk. If batter seems too thick, add an additional 1 to 2 tablespoons milk.
  • For each pancake, pour 1/4 cup batter onto hot griddle. Cook 1 to 2 minutes or until edges begin to dry and bubbles form on top. Turn; cook other side until golden brown.
  • In small microwavable bowl, microwave remaining 1/4 cup peanut butter uncovered on High 20 to 30 seconds or until drizzling consistency. Top 2 pancakes with 4 peanut butter cup halves, slightly less than 1 tablespoon chopped dry-roasted peanuts, and drizzle with 2 teaspoons melted peanut butter and 1 tablespoon chocolate syrup.

1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking soda

1 large egg, at room temperature

Vegetable oil cooking spray
2 tablespoons cherry preserves

Steps:

  • Stir the almond butter and almond extract together in a small bowl. Put a baking sheet and a piece of foil next to the stove.
  • Heat a griddle or a large nonstick skillet over medium-high heat. Whisk together the flour, sugar, baking soda, salt, cinnamon, buttermilk, egg and vanilla extract in a large bowl until smooth.
  • Spray the griddle lightly with cooking spray. Working in batches, use a small scoop or ladle to drop 2 tablespoons of batter per pancake onto the griddle, being careful not to crowd the pan. Cook the pancakes until they are golden brown on each side, 1 to 2 minutes per side. Transfer each batch to the baking sheet and tent with foil while you cook the remaining batter.
  • To serve, spread 1 tablespoon of the almond butter mixture on half of the pancakes. Spoon 1 teaspoon of the cherry preserves onto the remaining pancakes and flip them onto the pancakes with almond butter to make sandwiches. Dust the sandwiches with confectioners' sugar, and serve.

1 1/2 cups all-purpose flour
1/3 cup confectioners' sugar, plus more for dusting

1 large egg yolk plus 3 egg whites
4 tablespoons unsalted butter, melted, plus more for the pan

Steps:

  • Make the syrup: Combine the maple syrup, heavy cream, chocolate, butter, cocoa powder, brown sugar and salt in a medium saucepan over medium-low heat. Cook, whisking occasionally, until the chocolate is melted and the mixture is smooth, about 3 minutes. If the mixture starts to simmer, reduce the heat to low. Stir in the vanilla and keep warm over the lowest heat setting, stirring occasionally.
  • Make the pancakes: Preheat the oven to 200˚ F. Line a baking sheet with parchment paper and preheat a large griddle or 1 or 2 large nonstick skillets over medium-low heat. Whisk the flour, confectioners' sugar, cocoa powder, baking powder and salt in a large bowl. Whisk the milk, egg yolk, melted butter and vanilla in a medium bowl. In a separate large bowl, beat the 3 egg whites with a mixer on medium-high speed until stiff peaks form, about 2 minutes.
  • Whisk the milk mixture into the flour mixture until just combined with some small lumps remaining; do not overmix. Fold in about one-third of the egg whites, then gently fold in the remaining egg whites until there are no large streaks remaining, being careful not to overmix and deflate the batter.
  • Add 1 to 2 teaspoons butter to the griddle just to coat. Add 1/4 cup batter per pancake, sprinkle with chocolate chips and cook until bubbles form on top and the bottoms are lightly browned, about 3 minutes. Flip and continue cooking until set on the other side and just cooked through, 1 to 2 more minutes. Remove to the baking sheet and keep warm in the oven while cooking the remaining pancakes. Repeat with the remaining batter and chocolate chips, adding more butter to the pan as needed and reducing the heat if the pancakes brown too quickly.
  • Divide the pancakes among plates. Stir the chocolate syrup. Dust the pancakes with confectioners' sugar and top with the syrup.

Steps:

  • Tip the flour, cocoa powder, baking powder and sugar into a large bowl with a small pinch of salt. Add the eggs and whisk until smooth. Gradually whisk in the milk until you have a smooth batter, then mix in the chocolate chips.
  • Heat a splash of the oil and a little of the butter in a non-stick frying pan until sizzling. Cook the pancakes, using 2 tbsp batter for each, for 2 mins until bubbles start to form on the surface. Flip and cook for 2 mins more (you'll need to do this in batches). Keep the pancakes warm in a low oven while you cook.
  • To serve, whip the cream with the icing sugar and vanilla until thick. Top the pancakes with the whipped cream, berries and maple syrup, if using.

200g peanut butter
200g chocolate spread
icing sugar and squirty cream, to serve
5 eggs
750ml milk
250g plain flour
50g butter

Steps:

  • First, make the pancake batter. Tip the eggs, milk, flour and a pinch of salt into a blender and blitz until smooth. Alternatively, whisk the eggs and flour together until smooth, then slowly whisk in the milk and a pinch of salt, then tip into a large jug.
  • Heat a roughly 20cm frying or crêpe pan over a medium heat, and, using kitchen paper, carefully wipe a little of the butter around the pan. Pour in enough batter to make a thin pancake, and cook for about 1 min on each side until golden. Slide the pancake onto a serving plate, then immediately spread with some of the peanut butter, then chocolate spread. Repeat with a second pancake, then stack this on top of the first. Continue cooking, spreading and stacking until all the batter, peanut butter and chocolate spread is used.
  • When all the pancakes are stacked into a 'cake', dust the top with some icing sugar. Cut into wedges and serve topped with some squirty cream. Will keep at room temperature for up to a day.
