This is a recipe that I got from browneyedbaker its great for St. Patricks Day or any other holiday for that matter

1 cup Guinness stout
1 cup unsalted butter, at room temperature
3/4 cup Dutch-processed cocoa powder
2 cups all-purpose flour
2 cups granulated sugar
1 1/2 teaspoons baking soda
3/4 teaspoon salt
2 eggs
2/3 cup sour cream
8 ounces bittersweet chocolate
2/3 cup heavy cream
2 tablespoons butter, at room temperature
2 teaspoons Irish whiskey
2 cups unsalted butter, at room temperature
5 cups powdered sugar
6 tablespoons bailey's irish cream

Steps:

  • 1. To Make the Cupcakes: Preheat oven to 350 degrees F. Line 24 cupcake cups with liners. Bring the Guinness and butter to a simmer in a heavy, medium saucepan over medium heat. Add the cocoa powder and whisk until the mixture is smooth. Cool slightly.
  • 2. Whisk the flour, sugar, baking soda and salt in a large bowl to combine. Using an electric mixer, beat the eggs and sour cream on medium speed until combined. Add the Guinness-chocolate mixture to the egg mixture and beat just to combine. Reduce the speed to low, add the flour mixture and beat briefly. Using a rubber spatula, fold the batter until completely combined. Divide the batter among the cupcake liners. Bake until a thin knife inserted into the center comes out clean, about 17 minutes. Cool the cupcakes on a rack.
  • 3. To Make the Whiskey Ganache Filling: Finely chop the chocolate and transfer it to a heatproof bowl. Heat the cream until simmering and pour it over the chocolate. Let it sit for one minute and then, using a rubber spatula, stir it from the center outward until smooth. Add the butter and whiskey and stir until combined. Let the ganache cool until thick but still soft enough to be piped.
  • 4. To Fill the Cupcakes: Using a 1-inch round cookie cutter (or the bottom of a large decorating tip), cut the centers out of the cooled cupcakes, going about two-thirds of the way down. Transfer the ganache to a piping back with a wide tip and fill the holes in each cupcake to the top.
  • 5. To Make the Baileys Frosting: Using the whisk attachment of a stand mixer, whip the butter on medium-high speed for 5 minutes, scraping the sides of the bowl occasionally. Reduce the speed to medium-low and gradually add the powdered sugar until all of it is incorporated. Add the Baileys, increase the speed to medium-high and whip for another 2 to 3 minutes, until it is light and fluffy.
  • 6. Using your favorite decorating tip, or an offset spatula, frost the cupcakes and decorate with sprinkles, if desired. Store the cupcakes in an airtight container.

There are several recipes that replicate this flavor out there, but this is different in that there is no icing and lends itself to being taken to the pub easier.

1 tablespoon unsweetened cocoa powder
2 (8 ounce) packages cream cheese, softened
¼ cup confectioners' sugar
1 egg
6 tablespoons Irish cream liqueur
1 (18.25 ounce) package chocolate cake mix without pudding
1 (3.9 ounce) package instant chocolate pudding mix
3 eggs
½ cup vegetable oil
1 (12 fluid ounce) can or bottle Irish stout beer (such as Guinness®)
2 tablespoons butter
1 cup white sugar
½ cup Irish whiskey

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 10-inch fluted tube pan (such as a Bundt®) and coat inside of pan with unsweetened cocoa powder.
  • Beat cream cheese, confectioners' sugar, 1 egg, and Irish cream liqueur in a bowl until smooth and creamy. Set aside.
  • Beat chocolate cake mix, chocolate pudding mix, 3 eggs, and vegetable oil in a separate bowl until batter is thick and smooth. Slowly beat Irish stout beer into the batter.
  • Spoon 1/3 of the cake batter into the prepared pan; layer the Irish cream filling on top. Spoon remaining cake batter over the filling.
  • Bake in the preheated oven until a toothpick inserted into the cake comes out clean, 40 to 50 minutes.
  • Loosen the edges of the cake from the pan with a thin spatula; let cake rest in pan 15 minutes. Invert pan over a wire rack to release cake and allow to cool completely on the rack.
  • While cake is cooling, melt butter in a saucepan over medium heat and stir in white sugar and Irish whiskey. Bring to a boil, stirring to dissolve sugar, reduce heat to low, and simmer until thickened, about 10 minutes.
  • Transfer cake to a serving platter. Generously brush whiskey glaze over cooled cake several times and allow glaze to soak into cake.

  • Prepare the cake batter following the instructions on the back of the box replacing the water for the Guinness beer. I use either Duncan Hines Devil's Food or Pillsbury Devil's Food cake mix. Both call for 1 cup of water which I substitute with 1 cup of Guinness.
  • For the cupcake filling, add the chocolate frosting (I use Duncan Hines Dark Chocolate Fudge) and Jameson Irish Whiskey to a mixing bowl and mix with a hand mixer on low to medium speed until the whiskey is fully incorporated into the frosting.
  • Now, core the cupcakes by inserting a knife about halfway in from the top of the cupcake and cut out a circle. Then, using the knife or a small spoon, scoop out the middle of the cupcake about halfway down into the cupcake. I use a cupcake corer to make this task easier. Now fill the cupcake with the whiskey infused chocolate frosting.
