CHOCOLATE SHORTBREAD
Always wondered about the name here -- Where's a recipe for longbread, anyway! Wherever the one is found, this particular recipe was located in the Taste of Home's Chocolate Lover's Cookbook, Vol 2, 2003!

Steps:
- Preheat oven to 300 degrees F.
- In a mixing bowl, cream the butter, then add vanilla & mix well.
- In another bowl, whisk together flour, sugar & cocoa, then add to creamed mixture, beating about 3 minutes or until dough holds together.
- Pat the dough into a 9-inch by 4-inch rectangle, then cut into 2-inch by 1 1/2-inch strips.
- Place strips 1 inch apart on ungreased baking sheets.
- Prick each strip several times with a fork.
- Bake 20-25 minutes or until set.
- Set sheets on wire rack(s) to cool for 5 minutes, then remove shortbreat to wire rack(s) to cool completely.
CHOCOLATE PEANUT BUTTER SHORTBREAD SANDWICHES

Steps:
- Put everything for the shortbread in a food processor with a pinch of salt and pulse until the mixture comes together to form a dough. If it won't come together, take it out of the processor and bring it together with your hands. Tip onto a lightly floured work surface and shape into a log about 5cm in diameter. Wrap in cling film and chill for 1 hr.
- Heat oven to 140C/120C fan/gas 2. Line two large baking sheets with baking parchment. Cut the log into about 32 rounds 6mm thick and line them up on the sheets. Bake for 22-25 mins. Leave to cool a little, then carefully remove and put on a wire rack to cool completely.
- To make the buttercream, blitz all the ingredients in a food mixer or beat with an electric whisk, adding enough of the milk to make a soft mixture. Sandwich the shortbread together with the buttercream.

HOMEMADE CHOCOLATE SHORTBREAD
This recipe has been in my files for a long time...probably from when I first learned to bake. Any chocolate lover will like these melt-in-your-mouth cookies. I make them year-round with variations. - In a small bowl, cream butter until light and fluffy. Beat in vanilla. Combine the flour, sugar and cocoa; add to creamed mixture. Beat until dough holds together, about 3 minutes. , Pat into a 9x4-in. rectangle. Cut into 2x1-1/2-in. strips. Place 1 in. apart on ungreased baking sheets. Prick with a fork. , Bake at 300° for 20-25 minutes or until set. Cool for 5 minutes before removing from pan to a wire rack to cool completely.

CHOCOLATE SHORTBREAD SANDWICHES
This is a very simple but fancy looking shortbread sandwich which is very versatile. You can make a bittersweet chocolate filling, or a white chocolate filling...heaps of options. Found this recipe in Donna Hay's "dining" cookbook.

Steps:
- Place butter and icing sugar in the bowl of an electric mixer, and beat until light and creamy.
- Add flour, rice flour and cocoa powder, and mix till a smooth dough forms.
- Roll out dough between sheets of non-stick baking paper until it is 2mm (1/8 inch) thick.
- Cut dough into 6cm (2 1/2 inch) circles (or any shape you like maybe hearts) and place them on a baking tray lined with non-stick baking paper.
- Bake dough circles in a preheated 315F (160C) oven for 15 minutes or until biscuits are firm to touch.
- Cool biscuits on wire racks.
- To make filling, place chocolate and cream in a saucepan over low heat and stir until smooth.
- (You can use the microwave) Refrigerate mixture until it is firm.
- To serve, sandwich 2 biscuits together with a spoonful of chocolate filling.

- Cream the butter and sugar together in a large bowl with an electric mixer on medium-low speed until well blended but not fluffy. With the machine running, add the vanilla first and then the olive oil, beating until smooth and scraping the bowl occasionally. Add the egg and beat just until incorporated. Reduce the speed to low and gradually add the flour mixture. Mix just until incorporated
- Turn the dough out onto a very large sheet of parchment paper. Pat into a rectangle and cover with another very large sheet of parchment. Roll the dough into a 12 × 7-inch rectangle that’s a scant 1⁄4 inch thick, lifting and replacing the top sheet as needed to smooth out any wrinkles in the paper. Use a bench scraper or spatula to press in all four edges to keep them even and straight, and roll lightly again to achieve an even thickness. Refrigerate until firm, about 1 hour. If you’re in a rush, you can freeze the dough until stiff, about 15 minutes.
- Remove the top sheet of parchment. Using a pizza wheel or sharp knife, cut the dough into 1-inch squares. Chill again if the dough has softened. Transfer the squares to two parchment-paper-lined cookie sheets, spacing them 1 inch apart. Chill again while the oven heats. You want them to be firm if they have softened.
