CHOCOLATE TOFFEE NO-BAKE COOKIES

3 cups quick-cooking oats
1 cup peanut butter
1/2 cup bittersweet chocolate chips
1/2 cup semisweet chocolate chips
1/2 cup toffee bits, plus more for sprinkling
2 tablespoons softened unsalted butter
1/2 teaspoon kosher salt

Steps:

  • Line a baking sheet with wax paper. Combine the oats, peanut butter, bitter and semisweet chocolate chips, toffee bits, butter and salt in a medium saucepan. Cook over medium heat, stirring frequently, until the chocolate chips melt, 3 to 5 minutes.
  • Scoop heaping tablespoons of batter onto the baking sheet and sprinkle each cookie with extra toffee bits. Freeze for 15 minutes before serving. The cookies can be stored in the refrigerator in an air-tight container for 1 week.

3 tablespoons cocoa
3 cups quick-cooking rolled oats
1/2 cup peanut butter

1 cup raisins or 1/2 cup nuts (your choice) (optional)

Steps:

  • Combine margarine, sugar, milk, cocoa, and salt in a heavy pot and bring to boil over medium heat for 1 1/2 minutes.
  • Remove from hot burner.
  • Add oats, peanut butter, and vanilla.
  • Add raisins/nuts if desired.
  • Mix well.
  • Drop by teaspoon on waxed paper and let cool.
  • I have no idea how many this recipe makes-- having never counted them so this will be a guess.

1/2 cup milk
1/2 cup unsalted butter
3 cups old fashioned rolled oats
1/2 cup peanut butter
1 tsp pure vanilla extract
1/4 tsp Kosher salt

Steps:

  • In a heavy bottomed saucepan, whisk together the sugar and cocoa.
  • Add milk and butter to saucepan.
  • Heat over medium-high, stirring frequently, until mixture reaches a rolling boil. Keep at a rolling boil for one minute.
  • Remove from heat and stir in oats, peanut butter, vanilla, and salt.
  • Allow to cool in pan for 3-4 minutes. Scoop tablespoonfuls onto parchment lined baking sheets.
  • Let the cookies set for at least 15 minutes. You can place also them in the refrigerator to help them set.
