10 tablespoons (1 1/4 sticks) unsalted butter, at room temperature, cut into small pieces
1/4 cup unsweetened cocoa powder (not Dutch process)
3 ounces unsweetened chocolate, finely chopped
2/3 cup boiling water
1 1/4 cups granulated sugar
1 teaspoon vanilla extract
2 large eggs
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon fine salt
1/4 teaspoon baking soda
1/2 cup semisweet chocolate chips
1 cup creamy peanut butter
One 8-ounce package cream cheese, at room temperature
4 tablespoons (1/2 stick) unsalted butter, at room temperature
1 1/2 cups confectioners' sugar
Chopped dry roasted peanuts, for garnish (optional)

Steps:

  • Preheat the oven to 350 degrees F. Line one 12-cup standard muffin tin with paper cupcake liners.
  • Put the butter, cocoa powder and chocolate in a large bowl. Pour the boiling water over and let stand 5 minutes. Whisk until smooth, and then whisk in the sugar, vanilla and eggs. Whisk in the flour, baking powder, salt and baking soda until just combined. Stir in the chocolate chips. Divide the batter among the prepared liners so they are about three-quarters full.
  • Bake until a toothpick inserted into the center comes out with moist crumbs, 22 to 24 minutes. Cool in the tins 5 minutes, then remove and cool completely on a wire rack.
  • For the frosting: Beat the peanut butter, cream cheese and butter in a large bowl, using an electric mixer, on medium speed until smooth. Reduce the speed to low and beat in the confectioners? sugar until smooth and incorporated. Pipe or spread the frosting on the tops of the cupcakes. Sprinkle with peanuts for garnish if using.

Steps:

  • Preheat oven to 180C | 350F
  • Spray an 8x8-inch baking pan with cooking oil spray, wipe excess over with paper towel, and set aside
  • Combine flour, cocoa powder, coffee powder and salt in a large bowl. Mix well and set aside.
  • In a separate medium-sized bowl, whisk together the butter/oil, brown sugar, sweetener/sugar and vanilla. Add eggs and whisk again until light and creamy.
  • Pour the liquid mix into the dry ingredients, and mix with a spoon until just combined (do not overheat the batter)
  • Set Brownie Batter aside to create your pb filling

225g crunchy peanut butter
200g bar dark chocolate, broken into pieces
280g soft light brown sugar
3 medium eggs
100g self-raising flour

Steps:

  • Set aside 50g each of the peanut butter and chocolate. Heat oven to 180C/160C fan/gas 4 and line a 20cm square baking tin with baking parchment. Gently melt remaining peanut butter, chocolate and all the sugar in a pan, stirring occasionally, until the sugar has just about melted. Transfer mix into a bowl to cool down slightly. Turn off heat and use a wooden spoon to beat in the eggs one by one. Stir in the flour and scrape into the tin.
  • Melt reserved peanut butter in the microwave on High for 45 secs, or in a pan, until runny, then drizzle over the brownie. Bake for 20-25 mins until it has a crust, but the middle still seems slightly uncooked.
  • Melt reserved chocolate, drizzle over the brownie, then cool in the tin before cutting into squares.

1/4 cup water
1/4 cup oil
1 egg
1 cup peanut butter

Steps:

  • Prepare brownie mix according to instructions on box. Pour one-half of mixture into a greased 7 x 11 baking pan.

3/4 c sugar
1/4 c butter, softened
1 Tbsp water
3/4 c semi-sweet chocolate chips
1 egg
1/2 tsp vanilla extract

1/3 c milk chocolate chips (for topping)
1/2 c semi-sweet chocolate chips
1/3 c semi-sweet chocolate chips (for topping)
3/4 c peanut butter, creamy

Steps:

  • 1. Preheat oven to 350*F. Grease 12 standard muffin cups. Set aside.
  • 2. In a microwave safe bowl, combine sugar, butter and water. Microwave on HIGH for 1 minute or until butter is melted. Stir in 3/4 cup semi-sweet chocolate chips until melted.
  • 3. Stir in egg and vanilla. Add flour and baking soda; stir until blended. Allow to cool to room temperature (won't take long. You don't want the next chips to melt).
  • 4. Stir in 1/2 cup each of the milk chocolate chips and semi-sweet chocolate chips. Spoon batter evenly into prepared muffin cups.
  • 5. Bake for 14 - 15 minutes or until tops are set but a toothpick inserted in the middle comes out still slightly wet. Place pan on cooling rack. The centers will fall upon cooling.
  • 6. Place peanut butter in a small microwave safe bowl. Microwave on HIGH for about 45 seconds. Spoon 1 Tablespoon into the center of each brownie. Use all the peanut butter.
  • 7. Top each brownie with 2 or 3 of each milk and semi-sweet chocolate chips. Cool completely. Remove from pan.

If you love peanut butter then this is for you, these are moist, rich and they bake out perfrectly, I made mine in an 11 x 7-inch baking pan but you can also bake it in a 13 x 9-inch pan and adjust the baking time slightly --- you don't need a mixer to make this everything is mixed by hand and you won't even need icing on these, just serve these topped with ice cream, yield is only estimated.

  • Preheat the oven to 350 degrees (F). Line a 9×13 inch baking pan with parchment paper; spray paper and any exposed pan with non-stick baking spray and set aside.
  • In a medium bowl, combine the flour, cocoa powder, and salt; whisk well and set aside. Place chopped chocolate in a large bowl and set aside. Melt butter in a medium-sized skillet over medium heat. Continue cooking butter, stirring frequently, until it's a light amber color and smells slightly nutty. Remove from heat at once and pour over the chopped chocolate. Let the chocolate/butter mixture sit for 2 minutes, then whisk smooth. Add both sugars and vanilla and whisk smooth. Add 3 of eggs to the chocolate mixture and whisk until combined. Add the remaining eggs and whisk until combined. Do not overbeat the batter at this stage or your brownies will be cakey. Sprinkle the flour/cocoa powder mixture over the chocolate mixture. Using a rubber spatula (not a whisk), fold the flour mixture into the chocolate until just a bit of the flour mixture is visible. Fold in the peanut butter chips. Don't worry if they melt into the batter! Pour the batter into the prepared pan and smooth the top. P
  • Bake in the center of the oven for 30 to 34 minutes, rotating the pan halfway through the baking time, or until a toothpick inserted into the center of the brownies comes out with a few moist crumbs sticking to it. Let the brownies cool completely in the pan (this will take about an hour to an hour and a half), then lift them out of the pan using the parchment paper. Cut into squares and serve. *To speed up the cooling process, you can pop the tray in the fridge.
  • Store at room temperature, in an airtight container or wrapped tightly with plastic wrap, for up to 3 days.
