CROCK POT CHOCOLATE MUD CAKE

Crock Pot Chocolate Mud Cake image

The kids and I made this delicious dessert over the holidays. It turns out to be cakey on top with a layer of warm saucy chocolate on the bottom. Yum, it reaches all level of chocolate satisfaction. We did not wait for the recommended cooling time.

Time 2h15m

Yield 6-8 serving(s)

Number Of Ingredients 14

1 cup flour
2 teaspoons baking powder
6 tablespoons butter
2 ounces semisweet chocolate or 2 ounces chocolate chips
1 cup sugar, divided
3 tablespoons Dutch-processed cocoa powder, plus
1/3 cup Dutch-processed cocoa powder
1 tablespoon vanilla extract
1/4 teaspoon salt
1/3 cup milk
1 egg yolk
1/3 cup brown sugar
1 1/2 cups hot water
whipped cream or ice cream

Steps:

  • Coat the inside of a 2 ½ quart to 5 quart slow cooker or crock pot with cooking spray. (Note: the cake's cooking time and final appearance will vary depending on your crock's size.)
  • Whisk together the flour and baking powder in a medium bowl and set aside.
  • In a large bowl, melt the butter and chocolate in the microwave or over a pan of simmering water and mix well.
  • Whisk in the 2/3 cup of sugar, 3 tablespoons of cocoa, vanilla, salt, milk, and egg yolk.
  • Add the flour mixture and stir until thoroughly mixed.
  • Pour the batter into the slow cooker and spread it evenly.
  • In a medium bowl, whisk together the remaining sugar, cocoa and hot water until the sugar is dissolved.
  • Pour the mixture over the batter in the slow cooker.
  • Cover and cook on high for 1 ¼ to 2 ¼ hours, depending on size of the crock pot.
  • Even when done, the cake will be very moist and floating on a layer of molten chocolate, but you will know it is ready when nearly all of the cake is set and the edges begin to pull away from the sides of the pot.
  • (As you check, try not to let the condensed steam from the lid, drip on the cake.) When it is done, turn off the power and remove the lid.
  • Let it cool for 25 minutes, then serve it in bowls topped with whipped cream or ice cream.

CHOC-A-LOT MUD CAKE.

Choc-a-lot Mud Cake. image

This is an easy but still extremely heavenly, moist cake and the thick chocolate fudge topping is the icing on the cake (literally.) Recipe originally baked by Sue Lawrence.

Provided by lauragold13

Time 1h

Yield Makes Cake

Number Of Ingredients 11

142g / 5oz unsalted butter, softened.
142g / 5oz plain chocolate.
142g / 5oz caster sugar.
99ml / 3 1/2 floz very hot (not boiling) water.
142g / 5oz self raising flour, sifted.
28g / 1oz cocoa powder, sifted.
2 eggs, lightly beaten.
57g / 2oz unsalted butter.
3 tablespoons milk.
198g / 7oz icing sugar, sifted.
28g / 1oz cocoa powder, sifted.

Steps:

  • Pre-heat the oven to 180C/350F/ gas mark 4.
  • For the cake, place the butter and chocolate in a large bowl. Set over a pan of simmering water and stir well, until completely melted. Remove from the heat and stir in the sugar and hot water. Sift together the flour and cocoa, then stir into the mixture. Beat in the eggs, and mix well.
  • Pour into a buttered and floured 24cm/9.5in loose-bottomed cake tin and level off the top. Bake in the oven for 35 minutes, or until a skewer inserted in the middle of the cake comes out clean.
  • Leave in the tin for 10-15 minutes, then transfer to a wire rack to cool before icing. (or serve warm, as a dessert.)
  • To make the icing, place the butter, milk, sugar and cocoa in a bowl and set over a saucepan of gently simmering water. Stir until the mixture is glossy and smooth. Remove from the heat and allow the icing to cool completely.
  • Beat well until the cold icing becomes thick, then spread over the cooled cake. *Chocolate mud cake should only be frozen un-iced.
  • Indulge in this marvelous cake warm with a dollop of ice-cream. Enjoy!

ULTIMATE WHITE CHOCOLATE PASSIONFRUIT MUDCAKE

Ultimate White Chocolate Passionfruit Mudcake image

This mudcake is absolutely divine - a gooey and decadent dessert which has been served many times and always to rave reviews - and often a request for the recipe! The passion fruit adds a different dimension to the cake which enhances the flavour without taking away from the white chocolate taste. I hope you enjoy it as much as I do!

Categories     Dessert

Time 2h

Yield 12 serving(s)

Number Of Ingredients 12

250 g butter, chopped
250 g white chocolate
150 ml water
1 cup caster sugar (if using fresh passionfruit, use 1 1/4 cups sugar)
50 ml tasti passion fruit in syrup (or 50ml fresh passionfruit)
1 3/4 cups plain flour
1 cup self raising flour
2 eggs, lightly beaten
1/2 cup sweetened condensed milk
100 ml full fat cream
250 g white chocolate
130 ml 'tasti' passion fruit in sweetened syrup. fresh can also be used here however if it ends up too tart icing sugar

Steps:

  • Cake:.
  • Preheat oven to 150 °.
  • Place first four ingredients in a saucepan over a low heat and stir until all ingredients are melted and combined. Take off heat and leave to cool for 10 minutes.
  • Sift both flours together and add to cooled chocolate mixture, beat gently.
  • Stir in eggs, sweetened condensed milk and passonfruit syrup.
  • Pour the mixture into a deep round dish (20-22cm is ideal) and cook for 1 hourish - cooking times can vary greatly between ovens so keep checking with a toothpick.
  • Leave to cool completely before turning out.
  • Poke holes in cake with a skewer/toothpick and pour over 50ml of passionfruit through a sieve, leave to sit for an hour or so.
  • Ice with ganache (see below).
  • Ganache:.
  • Using a double boiler system (a glass bowl sitting in a pot with 2 inches or so of water on a low heat works just as well) pour cream into the bowl and heat on a low temperature for 5 minutes.
  • While waiting for cream to heat, grate chocolate as this speeds up the melting process once in the cream.
  • Once cream is heated add grated chocolate and stir until melted and slightly thickened.
  • Take off heat - add passionfruit/syrup. Leave to cool for 15 mins (at least) before putting on cake. I find that once it fully cools it goes thick very quickly so it is best to work quickly once you see this happening. To speed up the process you could put it in the fridge but I find this sometimes takes the glossy look away from the ganache.
  • Enjoy!

THE ULTIMATE WHITE CHOCOLATE MUD CAKE

The Ultimate White Chocolate Mud Cake image

I was looking for a white chocolate mud cake recipe but there was always something not quite right with each recipe so I'v come up with this little gem. It was the most AMAZING cake! It is best eaten on the day of making it and does not refrigerate very well as it goes quite solid but in saying this I did refrigerate mine for a couple of hours after it was finished and turned out fine as it was still warm in the middle. The Raspberry sauce Is optional but compliments the cake REALLY REALLY well.

MELT-AND-MIX CHOCOLATE CHUNK MUD CAKE

Melt-And-Mix Chocolate Chunk Mud Cake image

Like the title suggests, this mud cake has chunks of dark chocolate baked in the middle. It's easy to make, with impressive results. You could ice the cake with rich chocolate icing or spread with ganache if you prefer. It keeps well for up to 1 week stored in an airtight container lined with baking paper. Source: Super Food Ideas magazine in Australia. The first time we made this we only had a 250g block of choc (& couldn't help but eat some as it was being chopped!) so we made do, and used less butter, but when it was done, Matt commented that it "wasn't muddy enough". This time we made it as posted (see pics) & Matt couldn't speak, for a mouth-full of sweet muddy goodness! :D
