Award-winning Mascarpone Pound Cake is a dense, buttery, and moist pound cake recipe with a fine, tender crumb and a brown, crusty outside and top.

Steps:
- Coat a 10-inch tube pan or bundt pan with solid vegetable shortening, then sprinkle with granulated sugar. Or, spray with cake release, my favorite!
- Preheat oven to 325 degrees F
- In the bowl of an electric mixer, cream butter, shortening, and mascarpone until smooth.
- Add sugar and beat until fluffy, mixture will lighten in color slightly.
- Add eggs one at a time, beating after each addition.
- Slowly add flour to mixture and combine.
- Add vanilla, butter, and almond extracts and combine.
- Spoon batter into prepared pan. Bake 1 hour and 15 to 20 minutes or until pick inserted in center comes out clean or with 'dry' crumbs.
- Allow to cool on the countertop on a wire rack 15 minutes before inverting on a serving tray. Cool completely before covering.
- Cake can be stored in an air-tight container on the counter-top for 3 to 4 days or refrigerator for one week.

CHOCOLATE POUND CAKE

- Place a rack in the middle of the oven and preheat to 350 degrees F. Butter and flour the bundt pan.
- Sift the flour, cocoa, and salt into a medium bowl. Whisk the eggs, yolks, vanilla, and espresso powder together in a bowl and set aside.
- In a heavy-duty mixer, beat the butter with the paddle attachment, on medium speed for 1 minute, or until smooth. Gradually pour in the sugar, 1/4 cup at a time, until the butter begins to lighten, about 3 minutes. Scrape down the sides of the bowl with a rubber spatula and beat, on medium-high, until light and fluffy, about 4 minutes more.
- Adjust the mixer's speed to its lowest setting. Add 1/2 of the flour mixture and mix until completely absorbed before adding the rest. Scrape down the sides of the mixer then beat on medium-high for 30 seconds more.
- Adjust again to low speed and add half the egg mixture, mix until blended and smooth. Add the remaining egg mixture and beat until almost blended. Remove the bowl from the mixer, and fold in the chocolate by hand. Take care not to over mix the batter.
- Spoon the batter into the prepared pan and smooth the top with a spatula. Bake until a toothpick inserted into the center comes out clean, about 1 hour and 10 minutes.
- Cool the cake in the pan, on a rack for 10 minutes. Turn the cake out of the pan, and cool right side up on a rack. If not serving the same day, wrap in plastic wrap and store at room temperature. Glaze just before serving. Cake can be frozen for 1 month.
- For the glaze: Put all the ingredients in a microwave-safe bowl or glass measuring cup. Melt at 50 percent power in the microwave until soft, about 1 minute. Stir, and continue heat until completely melted, about 1 minute more. Remove from the microwave and whisk until fully combined, smooth and glossy. While warm, pour glaze over cooled cake and do not spread. Serve as desired.
MOIST MASCARPONE CHOCOLATE CAKE WITH A HONEY CREAM FILLING

- For Mascarpone-Chocolate Cake: Preheat oven to 325 degrees F.
- In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs, 1at the time, beating well after each addition. Add mascarpone and vanilla; mix well. Combine the flour, cocoa, baking soda and salt; add to the creamed mixture alternately with buttermilk, beating well after each addition. Pour batter into a 10-inch cake pan and bake for 45 minutes.
- For Lavender-Honey Butter Cream: Cook sugar to a soft ball stage. Wisk the egg whites until stiff. Slowly pour cooked sugar into egg whites. Continue to whisk until meringue cools down to room temperature. One by one add small pieces of butter, then stir in the honey.
- For Milk Chocolate Ganache: Chop Chocolate into small pieces and place into a bowl. Bring heavy cream to a boil and poor over the chocolate. Stir until all pieces are melted.
- To assemble: Cut cake in 3 equal disks. Fill the first layer with the milk ganache and the second layer with the lavender-honey butter cream. Use the butter cream to frost the sides and top of the cake.
TOASTED POUND CAKE WITH MASCARPONE AND AMARETTO

- Preheat oven to 350 degrees F.
- Place the pound cake slices on a large heavy baking sheet and toast in oven for 7 to 10 minutes until the slices turn golden brown. Alternatively, toast the pound cake slices in an electric toaster until golden.
- Stir the apricot preserves and amaretto in a small bowl to blend.
- Place 1 cake slice atop each of 6 plates. Spoon the mascarpone cheese atop the cake slices. Arrange the remaining cake slices offset atop the bottom cake slices. Spoon the apricot mixture over. Sprinkle with the almonds and serve immediately.
GRILLED POUND CAKE WITH MARSCARPONE

- Mix the mascarpone, sugar and vanilla in a bowl with a rubber spatula until smooth. Fold in the pecans; cover and refrigerate until ready to serve.
- Heat a large skillet or griddle over medium heat. Spread some butter on both sides of each cake slice (about 2 tablespoons total). Toast in the skillet until golden, about 2 minutes per side. Let cool.
- Combine the brown sugar and the remaining 2 1/2 tablespoons butter in a skillet over medium heat. Cook, stirring, until melted and bubbly, about 3 minutes. Carefully add the cream and cook, stirring, about 1 more minute. Stir in the blackberries, smashing a few berries with the back of a spoon. Remove from the heat, then add the cognac and return to medium heat. Carefully tilt the pan so the cognac ignites (if using an electric stove, hold a lit match near the sauce to ignite it); cook until the flames subside.
- Spread some mascarpone filling on 4 pound cake slices; close with the remaining 4 cake slices. Top with the blackberries and sauce.

CRANBERRY-MARSCAPONE POUND CAKE RECIPE

- 1. Oven 350 degrees; butter and flour 8x5" bread pan. Don't use PAM. Toss chips w/ add'l flour, toss cranberries with add'l flour 2. Combine flour, baking powder and salt, sift THREEE times, set aside 3. Over medium heat, brown 2.5 TBS butter until it is amber, remove foam and set aside 4. Whisk egg with vanilla and set aside 5. Mix butter on medium speed until creamy, slowly add sugar and continue beating until creamy. 6. Add heavy cream and mascarpone and beat on medium speed 7. Turn mixer on low speed and gradually add dry ingredients alternately with eggs. 8. Add chocolate chunks to batter and stir well, then gently stir in cranberries. 9. Pour batter into prepared loaf pan, smooth the top and gently tap the pan on counter to remove air bubbles. 10. With a butter knife draw a line down the center of the pound cake and pour browned butter into the line. 11. Bake until top of cake is golden brown and toothpick inserted comes out clean - 55-65 minutes. Cool in pan for 15", then remove from pan and cool on wire rack. 8x5 foil pan - bake 50 minutes, rotating every 15 minutes. 8x6 flat pan - bake 45 minutes rotating every 15 minutes. 12. Cool cake completely. With a mixer cream together softened butter and cream cheese until smooth. Slowly add in powdered sugar and beat until smooth, mix in vanilla extract. Spread on top of cake and place in fridge until the frosting is set. Garnish with slivered almonds.

- FOR THE CAKE:.
- Preheat the oven to 350º F.
- Butter and flour 2 (8-inch) cake pans.
- Prepare the cake mix according to package instructions.
- Divide the batter between the 2 cake pans and bake according to package instructions; remove from the oven and let cool on a wire rack.
- FOR THE CRUNCH:.
- Place the toasted nuts close together in a single layer on a parchment-lined baking sheet.
- Combine the sugar and water in a small saucepan over medium-high heat.
- Stir the sugar mixture until dissolved.
- Bring to a boil and let cook until the sugar is light brown, about 8 minutes.
- Let the bubbles subside then pour the caramelized sugar over the nuts.
- Place the baking sheet in the refrigerator and let the sugar nut mixture cool until hard, about 30 minutes.
- When the sugar nut mixture is hard and cool, top with another piece of parchment paper and pound into small pieces, or place the sugar nut mixture on a cutting board and cut into small pieces; set aside.
- FOR THE FILLING:.
- Put the mascarpone cheese, cream, powdered sugar, and vanilla into a large mixing bowl.
- Using an electric mixer whip the cream mixture to soft peaks.
- Fold the crunch mixture into the whipped cream.
- FOR THE TOPPING:.
- Place the chocolate, sugar and zest in a food processor.
- Process the mixture until the chocolate is finely ground.
- ASSEMBLY OF CAKE:.
- Put 1 cake on a serving plate.
- Top with 1-inch of the whipped cream crunch mixture.
- Top with the second layer of cake and continue frosting the entire cake with the remaining whipped cream crunch mixture.
- Sprinkle the top and sides of the cake with the ground chocolate.
- Serve & Enjoy!

- In a large mixing bowl, cream butter and shortening. With electric hand-held mixer on medium speed, gradually beat in the sugar. Beat in mascarpone cheese. Add flour, alternating with the eggs, beginning and ending with flour. Stir in vanilla. Pour batter into a greased and floured 10-inch tube pan or Bundt cake pan. Bake at 325° for about 1 hour and 15 minutes or until a wooden pick comes out clean when inserted in the center. Let cool in pan for 10 minutes, then remove to a rack to cool completely.
- For Berry Salad:.
- In a large bowl, add all berries and sugar.
- Mash berries slightly and add orange liqueur. Let sit for 30 minutes until ready to serve.

This is probably my favorite cake recipe of all time. Light, delicious, and rich, just not so easy to make. Garnish with fresh fruit or chocolate swirls.

- Preheat the oven to 325 degrees F (165 degrees C). Lightly grease a springform pan with butter.
- Place dark chocolate and butter in top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Remove from heat. Stir in coffee and let cool slightly, about 5 minutes. Whisk egg yolks into the chocolate.
- Whisk egg whites, brown sugar, and salt in a separate bowl until peaks are the consistency of firm snow. Fold into the chocolate mixture. Pour into the pan and smooth the top.
- Bake in the preheated oven until firm, about 20 minutes. Cool for 1 hour.
- Prepare the second layer while the first layer is cooling. Mix water and cocoa powder together in a bowl. Melt dark chocolate in top of a double boiler over simmering water, about 5 minutes. Remove from heat.

- Whisk cream until soft peaks form. Add mascarpone cheese and mix until smooth. Fold in the chocolate-gelatin mixture. Pour over the second layer. Refrigerate cake until firm, at least 3 hours.
