Nonstick cooking spray
2/3 cup all-purpose flour
1/3 cup whole-wheat pastry flour
3/4 cup packed light brown sugar
1/4 cup Dutch processed cocoa powder, plus 2 tablespoons
2 teaspoons baking powder
1/2 teaspoon fine salt
1 cup chocolate malt powder, such as Ovaltine
1/2 cup low-fat (1 percent) milk
1 large egg white
2 tablespoons unsalted butter, melted
2 teaspoons pure vanilla extract
1 1/2 cups boiling water
Confectioners' sugar, for dusting, optional

Steps:

  • Preheat the oven to 350 degrees F. Coat a 2-quart baking dish with nonstick cooking spray.
  • Whisk together both flours, 1/2 cup of the brown sugar, 1/4 cup cocoa, baking powder, and salt in a large bowl. In a separate bowl whisk 1/2 cup of the malt powder with the milk, egg white, butter, and vanilla until the malt dissolves. Stir into the dry ingredients until only a few small lumps remain and spread the batter in the prepared baking dish.
  • Combine the remaining 1/4 cup of brown sugar with the remaining 2 tablespoons of cocoa and sprinkle over the batter. Stir the remaining 1/2 cup malt powder into the boiling water and pour it over the batter. Bake until the cake springs back when lightly touched and a toothpick inserted in the center comes out with a few moist crumbs, 30 to 35 minutes. Cool for 30 minutes on a wire rack. If desired, dust the top of the cake with confectioners' sugar and immediately spoon the warm cake and sauce onto plates or shallow bowls.

1 cup cubed bread (I used a leftover baguette)
¼ cup malted milk balls, chopped
¼ semi-sweet chocolate chips
1 tablespoon chocolate syrup
½ cup milk (I used skim)
2 tablespoons light cream cheese, softened
1 egg
2 tablespoons malted milk powder
Optional: whipped cream or vanilla ice cream

Steps:

  • Preheat oven to 325°F. Generously spray 2 8-ounce ramekins with cooking spray.
  • Place bread cubes in prepared ramekins. Add chopped malted milk balls and chocolate chips, and then drizzle each with chocolate syrup.
  • Put milk, cream cheese, egg and malted milk powder in a blender and process until smooth. Pour over bread cube mixture.
  • Bake for 25 to 30 minutes. Remove from oven and let cool for 10 minutes. Serve with a dollop of whipped cream or vanilla ice cream, if desired.

This is the first recipe I've tried out of my new cookbook, A New Way To Cook. It turned out great. I loved chocolate malt balls and the malted flavor in general. The malted milk powder also helps to keep the creamy texture even though you are using 1% lowfat milk.

4 cups 1% low-fat milk
1/4 cup cornstarch
1 cup instant malted milk powder
1/4 cup unsweetened cocoa powder (Dutch Processed)
1/4 teaspoon kosher salt
2 ounces unsweetened chocolate, chopped
6 tablespoons sugar
1 teaspoon vanilla

Steps:

  • In a small bowl, blend 1/2 cup of milk with the cornstarch.
  • Combine the malted milk powder, cocoa and salt in a small heavy saucepan and slowly whisk in the remaining 3-1/2 cups of milk, the chocolate and the sugar. Heat over moderate heat, stirring occasionally, until the chocolate is melted. Whisk in the cornstarch mixture.
  • Cook, stirring frequently, over very low heat until very thick and just beginning to boil, about 10 minutes. Remove from heat and stir in the vanilla.
  • Let cool, stirring occasionally until the custard is just warm.
  • Pour the pudding into small 1/2 c bowls.
  • Cover with plastic wrap and refrigerate until set.
  • You can make this up to 3 days in advance.

This recipe goes back to my grandmother. She was a wonderful cook and had to make do with what she had. I guess they all had leftover homemade bread. This sounds like it is toooo simple to be good, but we love it. It has a wonderful flavor.

2 eggs
1 cup sugar
4 tablespoons cocoa
5 slices white bread
4 cups milk
1 pinch salt
1 teaspoon vanilla
butter or cooking spray

Steps:

  • Butter a 2 quart baking bowl or use cooking spray.
  • Add the eggs and beat in the bowl with a fork.
  • Add the sugar and the cocoa and mix well with the eggs.
  • Add the milk slowly to the above mixture wisking all the time.
  • Add salt and vanilla and mix well.
  • Break the bread up in pieces and add to milk mixture making sure all the bread in under the milk and wet.
  • Bake in a 375 degree oven for about 1 1/2 hours in a pan of water.

1/2 cup butter
3 cups cubed day old bread, crusts removed
4 eggs
1 tablespoon vanilla extract
1/4 cup sugar
1 cup heavy cream
1/2 cup chopped lightly salted cashews and peanuts
1 milk chocolate bar chopped, reserve 1 tablespoon for garnish

Steps:

  • Preheat oven to 350 degrees F.
  • Melt the butter in non-stick saute pan. Add the cubed bread, allowing bread to toast and soak in butter. When the bread is golden brown, remove from the pan and set aside. In a deep bowl, add eggs, vanilla, sugar, and cream and mix well. Add the toasted bread, nuts, and chocolate and combine well. Let the bread stand in the mixture for 1 hour or until bread has soaked all the mixture.
  • Grease the bottom and sides of a 10-inch baking dish. Pour the mixture into the prepared dish and bake for 35 minutes. Serve warm with extra chopped chocolate pieces as garnish.
