1 cup peanut butter
1/2 cup margarine
2 packages chocolate chips
1 teaspoon vanilla
1 package colored mini marshmallows

Steps:

  • On stovetop or in microwave melt first 3 ingredients.
  • When melted add vanilla and marsmallows, mix well and put in a buttered 9x9 (can use a 9x13 but they will not be as thick) Place in refrigerator to set& cool.

3/4 cup butter
2 eggs, beaten
1 cup white sugar
1 pinch salt
vanilla
2 cups mini marshmallows
2 cups graham wafer crumbs or 2 cups chocolate cookie crumbs
1/2 cup nuts, chopped

Steps:

  • Cook butter, eggs, sugar and salt over a low heat, stirring constantly, till thickened (about 10 minutes). Add vanilla and cool. (I cool in sink with cold water).
  • Add graham cracker crumbs, marshmallows and nuts to the cooled mixture. Mix well and press into a buttered 9 x 9 pan.
  • Cover with chocolate icing. Refrigerate, then cut into bars. Freezes well.

1/2 cup margarine, softened
2 eggs
1 teaspoon vanilla
3/4 cup flour
1/2 cup chopped walnuts
2 tablespoons cocoa
1/4 teaspoon baking powder
2 cups miniature marshmallows
1 cup creamy peanut butter
3/4 cup semisweet chocolate morsel
2 cups puffed rice cereal
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°F
  • Grease a 13x9x2 inch baking pan.
  • Cream together sugar and butter until fluffy.
  • Beat in eggs and vanilla.
  • In a separate bowl, mix together flour, walnuts cocoa and baking powder.
  • Stir into butter mixture.
  • Spread in the bottom of prepared baking pan.
  • Bake 15 to 20 minutes or until center is set.
  • Sprinkle marshmallows evenly over top. Bake for 3 minutes to melt.
  • Remove from oven and let it cool down.
  • Combine chocolate chips and peanut butter in a medium saucepan.
  • Cook and stir over low heat until melted and smooth, about 3 minutes.
  • Stir in cereal and salt and mix gently to combine.
  • Spread the mixture over the marshmallow layer.
  • Let them cool down before cutting into bars.
  • Store in the refrigerator.

1 cup butter
2 cups icing sugar
2 eggs, beaten
4 cups mini marshmallows
graham cracker (not the crumbs! use enough crackers to line the bottom of the pan)

Steps:

  • Butter a 13 x 9-inch baking dish (can use an 11 x 7-inch baking pan).
  • Line the graham crackers in the bottom of the baking dish (you might have to cut some of them in half to fit in the dish).
  • In the microwave or on top of the stove in a small saucepan combine the chocolate chips, butter, 2 cups icing sugar and eggs; whisking over very low heat until blended; let cool slightly.
  • Add in the marshmallows; mix to combine.
  • Spread the mixture over the graham crackers in the baking dish.
  • Sprinkle with about 1/4 cup icing sugar, or as desired).
  • Chill.

80g butter, cubed, plus extra for the tin
1 tbsp vanilla bean paste
300g pink and white marshmallows (ensure vegetarian, if needed)
200g crispy rice cereal
200g white chocolate, broken into 1cm chunks
30g mini marshmallows (optional)

Steps:

  • Butter a 34 x 24 x 5cm deep baking tray and line with baking parchment. Melt the butter and vanilla in a large saucepan over a low heat, then add the marshmallows and cook gently, stirring occasionally until everything is melted, smooth and glossy.
  • Remove from the heat and mix in the rice cereal and 150g of the white chocolate chunks. Stir until the cereal is evenly coated, then tip into the baking tray and press into the corners using slightly wet hands to prevent the mixture from sticking to you. Leave to cool for 1 hr until set.
  • Melt the remaining 50g white chocolate in a heatproof bowl set over a pan of simmering water, ensuring the base of the bowl doesn't touch the water. Drizzle the melted white chocolate over the crispy cakes and sprinkle over the mini marshmallows, if using. Leave to set, then cut into 12 squares. Cut the squares in half diagonally to serve. Will keep in an airtight container for up to two weeks.

5 ounces fine-quality bittersweet chocolate (no more than 60% cacao if marked), chopped
3 ounces fine-quality bittersweet chocolate (70% cacao), chopped
3/4 cup heavy cream
2 tablespoons Tia Maria, Kahlúa, or other coffee-flavored liqueur
1 tablespoon instant-espresso powder or instant-coffee granules
For marshmallow squares
1/4 pound marshmallows (15 individual large marshmallows or 2 cups small)
2 tablespoons unsalted butter
2 tablespoons sugar
2 tablespoons unsweetened cocoa powder
3/4 teaspoon salt
3 cups puffed-rice cereal such as Rice Krispies

Steps:

  • Make ganache:
  • Melt chocolates with cream, liqueur, and espresso powder in a metal bowl set over a saucepan of barely simmering water or in top of a double boiler, whisking occasionally, until smooth, 6 to 8 minutes. Remove from heat and let stand at room temperature until thickened, about 2 hours.
  • Make marshmallow squares:
  • Line a 13- by 9-inch baking pan with a long sheet of foil, leaving a 1-inch overhang on each end.
  • Melt marshmallows and butter with sugar, cocoa powder, and salt in a 2 1/2- to 3-quart heavy saucepan over low heat, stirring frequently, until smooth, 3 to 5 minutes.
  • Remove from heat and gently stir in puffed-rice cereal. Transfer to lined baking pan, pressing mixture evenly onto bottom with dampened fingertips. Cool to room temperature, about 20 minutes, then carefully lift from pan by grasping both ends of foil. Peel off and discard foil, then cut into 1-inch squares.
  • Spread some of ganache on half of squares, using about 1/2 teaspoon ganache each, then top with remaining squares. Reheat remaining ganache in metal bowl over barely simmering water, whisking occasionally, until loosened, then drizzle over tops of squares.
  • Let squares stand until set, about 15 minutes.

1-1/2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate (6 oz.) , coarsely chopped

Steps:

  • Heat oven to 350°F.
  • Combine dry cake mix, butter and 1/3 cup milk; press 2/3 onto bottom of 13x9-inch pan. Bake 12 to 14 min. or until center is almost set; cool 3 min.
  • Mix peanut butter and remaining milk until blended; spread onto crust. Top with small spoonfuls of the marshmallow creme and remaining cake mixture. Sprinkle with nuts and chocolate; press gently into cake mixture.
  • Bake 18 min. or just until center is set. Cool completely before cutting into bars.
